One of our favorite rice recipes! Make ahead tip: cook your rice in advance and store it in the fridge until you're ready to make the recipe.

4 cups cooked long grain white, brown, or wild rice
2 teaspoons extra-virgin olive oil
1 bunch scallions (white and green parts, chopped)
3 cloves garlic (minced)
⅓ cup toasted (chopped pistachios)
½ cup chopped parsley
½ cup pomegranate arils
⅓ cup fresh mint leaves
Sea salt and freshly ground black pepper
Roasted Chickpeas (optional)
2 tablespoons extra-virgin olive oil
2 tablespoons white wine vinegar
1 tablespoon fresh orange juice (plus 1 teaspoon zest)
1 tablespoon fresh lemon juice
½ teaspoon maple syrup
½ teaspoon ground cumin
½ teaspoon ground coriander
¼ teaspoon cinnamon
½ teaspoon sea salt
Freshly ground black pepper

Steps:

  • Make the dressing: In a small bowl, whisk together the olive oil, vinegar, orange juice, zest, lemon juice, maple syrup, cumin, coriander, cinnamon, salt, and a pinch of pepper. Set aside.
  • Heat the oil in a large skillet over medium heat. Add the scallions, garlic, pinches of salt, and pepper and cook for 1 minute until soft. Reduce heat to low and add the cooked rice, using the back of a wooden spoon to break up any clumps. Heat until warmed through. Turn off the heat and stir in the dressing, pistachios, parsley, and pomegranates. Top with mint leaves and roasted chickpeas, if using. Season to taste and serve.

1 jalapeño (diced)
1 piece garlic
2 tablespoon olive oil
2.25 cup water
1.5 teaspoon salt

Steps:

  • Place all ingredients into a rice cooker and cook for 20-25 minutes.
  • Optional cook in stove pot. Bring water to a boil and add rice and olive oil. Cover with lid and cook for 15-20 minutes. In another pot, sauté bell peppers, carrots, jalapeno, and garlic. Then add all ingredients together and serve warm.

Keeping the pot covered for the entire cooking time traps the steam which is necessary for properly cooking the rice, and is very important. Steps:

  • Place the rice in a large saucepan with the butter, olive oil, and salt, and chicken broth (or water). Bring to a boil, uncovered, and cook until you see holes forming that tunnel down into the rice forming on the surface, about 15 minutes.
  • Reduce the heat to the lowest setting and cover the saucepan. Cook for 20 minutes, then fluff and serve.

  • Bring 1 1/2 cups water to a boil in a medium saucepan. Stir in rice and salt and return to a boil over medium-high heat.

1 teaspoon butter (optional)
1/2 teaspoon white vinegar (optional)

Steps:

  • In a saucepan with a good fitting lid bring water, salt and optional ingredients if desired to a boil. The salt and butter are simply for flavor. The vinegar keeps your grains separated and gives you a prettier dish. No one will taste the vinegar at all!
  • Add rice and stir.
  • Cover and reduce heat to low. You will know that your temperature is correct if a little steam is visible leaking from the lid. A lot of steam means your heat is too high.
  • Cook for 20 minutes.
  • DO NOT LIFT LID!
  • The steam that is trapped inside the pan is what allows the rice to cook properly.
  • Remove from heat and fluff with fork.
  • Serve!
