HEALTHY WHOLE WHEAT WAFFLES WITH APPLESAUCE
Buttery soft center and crispy-edged, our healthy buttermilk whole wheat waffles are made with applesauce and without no eggs and is super easy to make. This whole wheat waffle recipe can be adapted using whole grain flour, spelt flour, rye flour, or sprouted flour.

Steps:
- Preheat the waffle machine.
- In a medium-size bowl, add the whole wheat flour, salt, sugar, and baking powder and whisk together.
- Pour into the dry mixture the melted butter, applesauce, and buttermilk and mix using a whisk until batter is well combined and no flour lumps are visible.
- Spray pan release and fill each well of the waffle machine, close the top, and cook for about 4-5 minutes or until golden brown.
- Serve immediately with your choice of syrups and topping.

Steps:
- In a large bowl, mix together the flour, sugar, baking powder, salt and nutmeg.
- In a separate glass or metal bowl, beat the eggs. Add the milk, applesauce and oil and mix well.
- Add the wet ingredients to the dry ingredients and mix until just combined and moistened. Try not to over-mix or the waffle will have a tougher consistency.
- Cook the waffles to golden brown according to the instructions on your waffle maker. Mine tells me NOT to spray the plates with any cooking spray and my waffles still never stick. But I know some ask you to spray the plates with cooking spray, so be sure to check the manual.

- Heat up your waffle iron while you prepare the batter. Add all the dry ingredients (first six listed) to a medium size mixing bowl and whisk to combine. Then add the wet ingredients (all remaining ingredients) and stir until well combined. Then stir in the shredded apple.
- Some waffle irons require a little non-stick cooking spray before you begin making your waffles and others don’t. I trust you know what yours needs, so either use that or don’t. Pour about 1/2 to 2/3 cup batter into the waffle iron, cook until done (most irons have a light that goes off when the waffle is done). Repeat until you’ve cooked all the waffles.
