HEARTY GROUND BEEF CHILI
After searching through several recipes, I decided to put this recipe together by using my favorite ingredients. The resulting ground beef chili is flavorful and hearty. It's excellent when served with homemade cornbread.

Steps:
- Heat olive oil in a large pot over medium heat. Cook and stir ground beef in the hot pot until browned and crumbly, about 10 minutes. Add onion, celery, and green bell pepper. Cook until onion is translucent, about 5 minutes.
- Stir diced tomatoes, light red beans, dark red beans, black beans, diced tomatoes with chile peppers, and chili powder into the meat mixture. Bring to a boil. Reduce heat to low and let simmer until chili has started to thicken, about 1 hour. Season with vinegar, salt, and pepper. Garnish with Cheddar cheese.

- In a 6-quart slow cooker, combine both cans of undrained tomatoes, the vegetable juice, chili powder, cumin, oregano, and garlic. Stir in the meat, onion, celery, and sweet pepper.
- Cover and cook on low-heat setting for 8 to 10 hours or on high-heat setting for 4 to 5 hours.
- If using low-heat setting, turn to high-heat setting. Stir in the beans. Cover and cook for 15 minutes more. Spoon into bowls. If desired, serve with toppers.

- Cook ground beef in a large pot over medium-high heat until browned and crumbly, 5 to 7 minutes. Add bell pepper and onion. Cook and stir until the pepper and onion have softened, about 5 minutes. Drain and discard grease.
- Add corn, kidney beans, pinto beans, diced tomatoes, water, brown sugar, chili seasoning mix, and mustard to the pot. Cover and cook over medium heat for 20 minutes. Uncover, reduce heat to low, and cook until beans are tender, about 20 minutes more.

- In large resealable food-storage plastic bag, place half of the beef and 1 tablespoon of the flour; seal bag and shake to coat. Repeat with remaining beef and flour. In 4-quart Dutch oven, heat oil over medium-high heat. Cook beef in oil until brown on all sides; drain, if desired.
- Stir in remaining chili ingredients except cornmeal, beans and chiles. Heat to boiling; reduce heat to low. Cover; simmer 3 hours or until meat is tender.
- Stir in cornmeal; cook and stir about 1 minute to thicken. Add beans and chiles; cook until thoroughly heated. Remove bay leaves. Serve chili with garnishes.

- For the chili, soak the chipotle chiles in very hot water for at least 10 minutes, then transfer to a blender with 1 cup of the soaking liquid and add the next 6 ingredients. Blend well and set aside. Save any leftover soaking liquid for later.
- Pre-heat the broiler to high and peel the outer paper off the tomatillos and place them on a sheet tray with the poblano pepper. Broil for about 10 minutes or until evenly charred on all sides, making sure to turn the poblano and tomatillos. Once the pepper has cooled down, run some cold water over it and remove all the seeds and try to peel away most of the charred skin. Add the poblano and tomatillos to the blender with the chile mixture and blend until smooth.
- Pre-heat a large stock pot or dutch oven over medium heat along with 1 teaspoons of oil and add the bacon. Cook for 7 minutes, or until most of the fat has rendered out, then add the onions along with a ½ teaspoon of salt ad few cracks of pepper. Cook for 10-12 minutes or until the onions are soft and translucent. Use a spoon and transfer onions and bacon to a bowl. Raise the heat to just below high and add 1 tablespoon of oil to the pot. Season the brisket with a generous amount of salt and pepper, and cook until brown on all sides, about 7-10 minutes. Turn the heat down to medium. Add the bacon, onion, and blended chile mixture to the pot along with the canned tomatoes. Add the bone broth, cocao powder, and bring the chili to a low simmer. Place a lid on the pot and cook for 2 hours, stirring a few times. You can also pressure cook on high for 45 minutes, it works great. After 30 minutes, check for seasoning, you will most likely need ½ teaspoon of salt. If the chili gets too thick,
- If using a slow cooker, first cook the onions and bacon in a cast iron pan, then use then same pan to brown the beef. Follow the rest of the instructions and cook for 6-8 hours in your slow cooker.
