APPLE OATMEAL BREAKFAST BREAD
Many people know that a bowl of oatmeal is a healthy way to start the day. There's a lot of nutrition packed into that bowl of goodness, including whole-grain oats, spicy cinnamon and usually fruit and nuts on top. I set out to create a quick bread that had all the nourishment of a bowl of oatmeal -- but that would be easy to slice and take with you.

Steps:
- For the crumble topping: Combine the oats, butter, brown sugar and cinnamon in a small bowl; set aside.
- For the bread: Preheat the oven to 350 degrees F. Cut out an 8-by-4-inch rectangle of parchment paper and put in the bottom of a 9-by-5-inch loaf pan. Spray the pan and paper with cooking spray.
- Put the oats in a blender and blend to a flour-like consistency. Combine the oat flour, wheat flour, cinnamon, baking powder, baking soda and salt in a large bowl.
- Combine the honey, oil, vanilla and eggs in a medium bowl; add the sugar, stirring until combined. Add the apples and stir until well combined. Add the flour mixture and stir just until combined. Gently stir in the walnuts.
- Pour the batter into the prepared loaf pan and sprinkle with the crumble topping. Bake until a wooden pick inserted in the center comes out clean, about 1 hour. Cool in the pan on a wire rack 10 minutes, then remove from the pan to the rack and cool completely.

HEARTY OAT LOAF

- In a large bowl, combine the flours, 1/2 cup oats, sugar, baking powder and salt. In another bowl, combine the egg, milk and oil; stir into dry ingredients just until moistened. Spread batter into an 8- or 9-in. round baking pan coated with cooking spray. Sprinkle with remaining oats., Bake at 350° for 40-50 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Serve warm.

- Grease pan and preheat oven 350°F.
- Mix all dry ingredients.
- Add in wet ingredients.
- Knead until smooth and elastic.
- Place in greased bowl, cover and rest until double. About 40 minute.
- Divide into 3 7x3 loaf pan (approx 463g / loaf). Proof about 30 minute.
- Bake 30-35 till brown top.

Steps:
- Place oats in a large bowl; add boiling water. Let stand for 5 minutes. Stir in the remaining ingredients. , Transfer to an 11x7-in. baking dish coated with cooking spray (dish will be full). Cover and bake at 350° for 40 minutes. Uncover; bake 10-15 minutes longer or until bubbly and set.

DENSE AND HEARTY APPLE PUMPKIN BREAD
My own recipe, made for a filling, healthy breakfast or anytime you need a quick, healthy snack. Dice the apples according to how you like them, make them small if you don't like tasting big pieces of apple in your breads. Use 2 large eggs if you like the bread moister and melty. Otherwise 1 large egg will get you a very dense bread.

Steps:
- Preheat oven to 350 degrees.
- Grease one 9x5 loaf pan.
- Combine cinnamon, baking soda, flour and salt in a bowl, set aside.
- Combine egg, pumpkin, sugar, water, applesauce and oil in another bowl, beat until blended (but don't blend too finely).
- Add the wet mixture to the dry mixture, stir in until just blended.
- Fold in the diced apples gently.
- Carefully spoon mixture into loaf pan.
- Bake for 35 minutes or until toothpick inserted into the middle comes out clean. (I have a small oven so it takes a shorter time to bake).
- Cool and enjoy. I like my bread sliced and hot, with melted honey spooned onto it or with fat free cream cheese spread.

- Preheat the oven to 350°F (176°C) with a rack in the center position. Grease a 9 x 5-inch (23 x 13 cm) loaf pan with baking spray and line with a parchment paper overhang (*see photo in blog post; this makes it easy to lift and remove the quick bread from the pan after baking). Set aside.
- In a medium bowl, whisk together the whole wheat pastry flour, rolled oats, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
- In a large bowl, whisk together the dark brown sugar and eggs for 1 minute, or until lightly frothy. Add the oil, applesuace, vanilla extract, and lemon zest (if using) and whisk until smooth.
