HEARTY VEGGIE CHICKEN CASSEROLE

I found this recipe in a cookbook we received as a wedding gift and altered it to fit my family's tastes. Now, I always cook enough extra chicken so we can have this casserole the next day. 2-1/2 cups frozen mixed vegetables
1/2 cup chopped onion
1/2 cup butter, divided
1/3 cup all-purpose flour
1/2 teaspoon dried sage leaves
1/2 teaspoon pepper
1/4 teaspoon salt
2 cups chicken broth
3/4 cup 2% milk
3 cups cubed cooked chicken
1 can (14-1/2 ounces) sliced potatoes, drained and quartered
2 cups seasoned stuffing cubes

Steps:

  • Cook vegetables according to package directions; drain. , Meanwhile, in a large saucepan, saute the onion in 1/4 cup butter for 2-3 minutes or until tender. Stir in the flour, sage, pepper and salt until blended. Gradually add broth and milk. Bring to a boil; cook and stir until thickened. Stir in the chicken, potatoes and mixed vegetables; heat through. , Transfer to a greased 13-in. x 9-in. baking dish. Melt the remaining butter; toss with stuffing cubes. Sprinkle over chicken mixture. , Bake, uncovered, at 450° for 10-12 minutes or until heated through.

1 lb. plum tomatoes
2 onions
1 red bell pepper
1 yellow bell pepper
2 zucchinis
as needed Oil
1 lb. shredded chicken breast
3 garlic cloves
1/2 cup grated Parmigiano-Reggino cheese
to taste Salt
to taste Pepper

Steps:

  • Slice the tomatoes, onions, bell peppers, and zucchinis into small pieces.
  • In a bowl, mix the vegetables together and drizzle with oil. Toss to coat.
  • In a 13x9 baking dish, arrange some of the vegetables in a single layer.
  • Top with some shredded chicken, followed by some of the garlic, cheese, salt, and pepper.
  • Continue in this manner until the dish is full.
  • Bake for 40 minutes at 350 degrees.
  • Once done, remove from the oven and cover with foil.
  • Cook again at 450 degrees for an additional 20 minutes. Serve.

2 chicken breasts, halved
4 carrots, quartered
1 cup white pearl onion
2 stalks celery, large pieces
2 potatoes, peeled, quartered
1/4 cup chicken broth
1 (10 ) can cream of mushroom soup
1/2 cup skim milk
1/4 teaspoon dried leaf thyme
1/8 teaspoon sage, Ground
1 bay leaf

Steps:

  • Preheat oven to 350F.
  • Rinse chicken and pat dry.
  • Heat a medium size non stick skillet over low heat; spray lightly with vegetable spray.
  • Add chicken and cook quickly until browned on both sides.
  • Remove chicken to a medium size shallow casserole.
  • Add vegetables to casserole.
  • In a small bowl combine broth, soup milk, thyme, sage and bay leaf; pour over chicken and vegetables.
  • Bake, covered 1 hour or until vegetables and chicken are tender.

  • In a small bowl, cream butter and sour cream until smooth. Beat in egg. Combine the flour, baking powder, salt and sage; add to creamed mixture.
