HAMBURGER CASSEROLE
This is a quick and easy way to prepare dinner for the family. It's a hamburger casserole with a Mexican flair. Try it with some shredded cheese sprinkled on top.

Steps:
- Preheat oven to 250 degrees F (120 degrees C).
- In a large skillet over medium heat, combine the ground beef, onion and celery and saute for 10 minutes, or until the meat is browned and the onion is tender. Drain the fat and set aside.
- In a separate saucepan, cook noodles according to package directions. When cooked, drain the water and stir in the meat mixture, chili, tomatoes, corn, taco sauce, and taco seasoning mix. Mix well and place entire mixture into a 10x15-inch baking dish.
- Bake in the preheated oven until thoroughly heated and bubbling, about 20 minutes.

- In a skillet, cook beef until no longer pink; drain. Stir in soup and set aside. Prepare stuffing mix according to package directions; spoon half into a greased 2-qt. baking dish. Top with beef mixture, cheese and remaining stuffing. , Bake, uncovered, at 350° for 30-35 minutes or until heated through.

HEARTY BEEF AND POTATO CASSEROLE
This recipe came from a church cookbook, so I have no way of knowing whether it came from another source, or if this was someone's own creation. Regardless, it has been a family favorite ever since. Make sure you thaw the broccoli first, so it gets cooked enough. Otherwise, you will end up with cold, half-frozen broccoli in your casserole. (Ask me how I know . . . )

Steps:
- Place potatoes on bottom and sides of a 9" x 13" casserole dish. Bake at 400 degrees Fahrenheit for 10 minutes.
- Brown ground beef and drain. Place beef, broccoli, 1/2 can onions and tomatoes in potato shell. Combine soup, milk, 1/2 cup cheese and seasonings and pour over beef mixture. Bake, covered, for 20 minutes, at 400 degrees Fahrenhiet.
- Top with remaining cheese and onions. Bake uncovered 2-3 minutes longer, until cheese is melted.

- Place a rack in the center of your oven and preheat to 350 degrees F. Lightly coat a 2 ½- to 3-quart casserole dish (such as a 12-inch oval dish, 8x10 casserole dish, deep 9x9-inch casserole dish, or similar), with non-stick spray.
- Bring a large pot of salted water to a boil. Add the pasta and cook until very al dente (it shouldn’t be completely crunchy, but it should still be a tiny bit too firm to eat). Drain and transfer to a colander, shaking out as much excess water as possible. Drizzle with ½ tablespoon oil and with a large spoon, stir gently to coat. Set aside.
- While the pasta cooks, heat the remaining 2 tablespoons oil in a Dutch oven or large, deep skillet. Once hot, add the carrots, onion, bell pepper, salt, and black pepper. Let cook until the onion turns brown and soft, about 10 minutes (don't shortcut this step; it builds a lot of flavor).
- Add the garlic, hot sauce, smoked paprika, and cumin. Cook, stirring constantly, until very fragrant, about 30 seconds.
