Steps:
- Cook noodles according to directions and drain.
- Brown beef.
- Add onion, pepper, tomato sauce, and Worcestershire sauce to beef and heat through.
- Combine sour cream, cottage cheese, and cream cheese.
- Place half of the egg noodles in a large buttered casserole dish.
- Add cheese mixture and cover with the remaining noodles.
- Top with remaining beef mixture.
- Bake at 350° for 30 to 45 minutes.

HEARTY BREAKFAST CASSEROLE
I am not sure where this recipe originally came from. It is the best breakfast casserole I have ever tried. I usually cook the sausage the night before and mix it with the cheeses and other ingredients so I have less work that morning. Be sure to put the hash browns in the frig the night before, as well, so they will be thawed.

Steps:
- Preheat oven to 450 degrees.
- In a medium bowl, combine the potatoes, cheddar cheese and oil.
- Mix well.
- Press mixture into a 9X13 dish.
- Bake for 30 minutes until golden brown; remove from oven.
- Reduce heat to 350 degrees.
- In a large bowl, combine 1 tbsp parsley with the remaining ingredients except the tomato slices; mix well.
- Pour over potato crust.
- Bake for 25 minutes or until the eggs are set.
- Place the tomato slices over the casserole and top with remaining parsley.
- Bake 5 to 7 minutes longer.

I first made this filling casserole for a camping trip with friends, adding potatoes and soup to stretch the recipe. It was a big hit. It's a great all-in-one meal that's sure to please your hungry eaters all year-round.

- Cook potatoes in boiling salted water until tender; drain. Peel and cube; set aside. Cook the broccoli according to package directions, omitting salt; drain and set aside. , Preheat oven to 350°. In a large skillet, saute onion in 2 tablespoons butter until tender. Add flour and pepper; stir until smooth. Gradually add milk; cook and stir until mixture boils and thickens. This ham and cheese casserole is very filling. It should be assembled and then refrigerated overnight. I usually make this Christmas Eve and serve it Christmas morning after we open our presents.

- Lightly grease a 9x13 inch baking dish. Line the bottom of the dish with half the bread cubes. Sprinkle with ham, Cheddar cheese, and Swiss cheese, and top with remaining bread. In a bowl, beat together the eggs, milk, and onion powder. Pour evenly over bread. Cover, and refrigerate overnight.
- Preheat oven to 375 degrees F (190 degrees C). In a small bowl, blend the crushed cornflakes and melted butter. Spread evenly over the casserole.
- Bake 40 minutes in the preheated oven, or until bubbly and golden brown. Let stand 5 minutes before serving.
