I discovered this Swiss Sunday bread when I was visiting friends in Switzerland. One of these friends is a pastry chef! The measurements given to me were metric, so I had to convert them. This makes a beautiful loaf and is super easy to make!

1 (.25 ounce) package active dry yeast
1 ⅓ cups warm milk
1 egg yolk
2 tablespoons butter, softened
3 ½ cups bread flour
1 egg white
1 tablespoon water

Steps:

  • In a large bowl, dissolve yeast in warm milk. Let stand until creamy, about 10 minutes. Add the egg yolk, butter and 2 cups of bread flour; stir well to combine. Stir in the remaining flour, 1/2 cup at a time, beating well after each addition. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 8 minutes.
  • Divide the dough into 3 equal pieces and roll each piece into a 14 inch long cylinder. Braid the pieces together and place on a lightly greased baking sheet. Cover with a damp cloth and let rise until doubled in size, about 1 hour. Meanwhile, preheat oven to 425 degrees F (220 degrees C).
  • In a small bowl, beat together egg white and water. Brush risen loaf with egg wash and bake in preheated oven for 20 to 25, until golden.

150 g butter or 2/3 cup butter
500 ml milk, scalded or 2 2/3 cups milk
100 g sugar or 2/3 cup sugar
42 g yeast or 2 (21 g) packages yeast
1 lemon, juice of
2 eggs
1 kg bread flour or 7 cups bread flour
2 teaspoons salt
1 egg
2 tablespoons sugar crystals
2 tablespoons sliced almonds

Steps:

  • Add butter to scalded milk; add sugar; add yeast; beat together.
  • Add juice of lemon and eggs; beat again.
  • Add bread flour and salt; knead until smooth.
  • Put in buttered bowl; cover with damp cloth; let rise until double; punch down.
  • On floured board, knead dough again.
  • Now forming comes; one can twist the loaf from 3 strands or divide in half.
  • Start in middle and braid out to both ends; braid tight.
  • Lay it on a greased baking sheet.
  • Cover with damp towel.
  • Beat egg; brush loaf.
  • Let rise again.
  • Sprinkle with kosher salt, big sugar crystals, and flaked almonds.
  • Let rise while oven preheats.
  • Bake at about 45 minutes baking; if getting too brown lower heat to 350.
  • These are European baking temperatures so test the bread at 20 minutes.

250 ml lukewarm milk
75 g butter or 75 g margarine
1 tablespoon sugar
1/2 teaspoon salt
500 g bread or 500 g baking flour
15 g fresh yeast
1 egg yolk
1 egg white
1 tablespoon water

Steps:

  • In a large bowl mix the warm milk, sugar, salt, butter, egg yolk and 200 g flour.
  • Mix with the hook for 1 minute.
  • Add the yeast and mix for 2 minutes again.
  • Add the remaining 300 g flour and work with the hook.
  • When the dough has pulled together and becomes smooth and elastic (after about 5 minutes) you can form the braid.
  • Divide the dough into 2 equal pieces and roll each piece into a 60 cm long cylinder (or 3 pieces of 30 cm). Braid the pieces together and place on a lightly greased baking sheet. This is the method that I use: http://www.youtube.com/watch?v=lcPnB0Sgc-Q.
  • In a small bowl, mix egg white and water and brush the bread with this mixture.
  • Let the dough rest after forming for 90 minutes until it doubles in size.
  • Bake in the preheated oven at 180°C for 20 to 25 minutes (heat and timing are basing it on convection oven), until golden.

1 package active dry yeast
1 1/2 cups warm water
1 1/2 to 2 1/2 cups all-purpose flour
1/2 cup whole wheat flour
1/2 cup cornmeal
1 tablespoon sea salt
1/2 teaspoon ground anise seed
4 tablespoons olive oil
3 tablespoons grated onion
3/4 cup crumbled goat cheese
1 teaspoon dried oregano
Freshly ground pepper to taste

Steps:

  • Stir yeast and water together in a small bowl until yeast is dissolved. In a large bowl, combine 1 1/2 cups of all-purpose flour, the whole wheat flour, cornmeal, salt and anise seed. Make a well in the center and pour in the yeast mixture. Stir until mixed. Place dough on a floured surface.
  • Begin kneading dough, adding as much flour as needed so that dough is not too sticky. Knead for 10 to 15 minutes, until smooth and shiny. Place dough in a lightly oiled bowl and brush top with 1 teaspoon of oil. Cover with plastic wrap and place in a warm place until doubled in bulk, about 1 1/2 hours.
  • Punch the dough down and let rise until doubled again, about 1 hour. Punch down the dough and place on a lightly floured surface and roll out to a 10-inch circle. Let rise for 30 minutes.
  • Preheat oven to 375 degrees. Heat 3 tablespoons of the oil in a large, ovenproof skillet over medium heat. Place dough in skillet and brush with remaining oil. Sprinkle with grated onion, goat cheese, oregano and pepper. Fry until bottom of dough is crisp and brown, 6 to 8 minutes. Place skillet in oven and bake until top is browned and cheese melted, about 15 minutes. Let cool a little before serving.
