HELPFUL CAKE PAN CONVERSIONS

HELPFUL CAKE PAN CONVERSIONS image

You never need to adjust the oven temperature: cakes need to bake quickly in a relatively hot oven to set their structure and to make sure they don't dry out. You only need to adjust the baking time. If you're using a smaller pan with the same volume of batter (using an 11"x8" pan instead of 13"x9"), you're actually making a deeper cake, so it might take a little longer to bake. I'd still start checking it after 30 minutes: the cake should spring back

BAKING PAN CONVERSIONS MADE EASY - STRESS BAKING
2020-01-26 Now let’s do the same conversion from a 13″ x 9″ pan, but to a round 8″ x 2″ pan. 13″ x 9″ pan = 13 x 9 = 117 square inches. 8″ x 2″ pan = 3.14 x 4² = 50.24 square inches. 117 square inches ÷ 50.24 square inches = 2.33. So in this case, you’d want to reduce the recipe by a little more than half.

If your springform pan is just one size category different from the one used in the recipe (for example, 26cm -> 28 cm or 22cm -> 20cm), it’s usually not worth to convert the ingredient quantities. HOW TO ADAPT BAKING RECIPES FOR DIFFERENT PAN SIZES ...
A sugary cake batter may overbrown on the outside by the time the inside tests done if you bake it in a loaf pan. Likewise, banana bread baked in a cake pan will likely be drier than bread baked in a loaf, which is more dense and bakes up with less surface area exposed. Editor’s tip: Bake in a similar-shaped pan—just a different size—to get the best results.
