RHUBARB-INFUSED 'BARBTINI



Rhubarb-Infused 'Barbtini image

This is great for using up that extra rhubarb! It's a very kicky twist on a Cosmopolitan, and you can use the syrup to add a spark to any of your favorite drinks, from vodka lemonade to margaritas. The syrup makes enough for 12 cocktails, so invite your friends over!

2 cups water
1 cup white sugar
2 cups thinly sliced rhubarb
1 ½ fluid ounces good-quality vodka
½ fluid ounce triple sec liqueur
1 cup crushed ice

Steps:

  • To make the rhubarb syrup, place sugar and water in a saucepan and bring to a boil over high heat, stirring occasionally. Lower heat to medium, and stir the rhubarb into the syrup. Simmer until rhubarb is softened and stringy, 5 to 7 minutes. Press out the juice with a spoon while straining syrup through cheesecloth or strainer into a glass jar or bottle. Discard rhubarb solids. Cool, and refrigerate syrup until needed.
  • To make a 'Barbtini, combine the vodka, 2 tablespoons rhubarb syrup, and triple sec in a shaker with ice. Shake until the outside of shaker is frosty. Strain into a martini glass.

3 ounces ice cold water
1/2-ounce simple syrup (see note), or to taste
2 ounces orange flavored vodka
1/2-ounce Triple Sec
Lime slice, for garnish

Steps:

  • Chill a martini glass.
  • Place the raspberries, lime juice, water and simple syrup in a blender and pulse until smooth.
  • Place the vodka, raspberry sauce and Triple Sec in a cocktail shaker filled with ice and shake until cold. Stain into a chilled martini glass and garnish with a lime slice.

1 cup tartar sauce
1/2 cup capers, drained
2 tablespoons parsley, chopped
1 teaspoon creole seasoning
herb salad dressing
1 gallon spring greens

Steps:

  • Gently toss the tartar sauce with the crabmeat, the capers, the parsley and the Creole Seasoning and adjust if necessary.
  • Toss the greens with Herb Dressing.
  • Place spring greens in a Martini glass.
  • Place a mound of the crabmeat on top of the tossed salad.
  • Garnish with grape tomatoes and a twist of lemon on the rim of the glass.

1 package (6-1/2 ounces) reduced-fat garlic-herb spreadable cheese
1/4 cup fat-free milk
2 large eggs
3 packages (1.9 ounces each) frozen miniature phyllo tart shells
2 tablespoons minced fresh parsley
Minced chives, optional

Steps:

  • Preheat oven to 350°. In a small bowl, beat the spreadable cheese, milk and eggs. Place tart shells on an ungreased baking sheet; fill each with 2 teaspoons mixture. Sprinkle with parsley., Bake for 10-12 minutes or until filling is set and shells are lightly browned. Sprinkle with chives if desired. Serve warm.
