GARLIC AND HERB CRUSTED LAMB CHOPS



Garlic and Herb Crusted Lamb Chops image

6 to 8 large cloves garlic, quartered
2 cups panko bread crumbs (Japanese)
3 to 4 sprigs fresh rosemary, stripped from the stems
1/4 to 1/2 cup olive oil
Salt and freshly ground black pepper
6 to 8 loin lamb chops
1/4 cup grapeseed oil

Steps:

  • Preheat oven to 325 degrees F.
  • Place the garlic, bread crumbs, and rosemary in a food processor and pulse for a few seconds to chop, then add enough olive oil until a paste is formed. Season with salt and pepper. Press paste firmly onto surface of lamb chops. Heat grapeseed oil over medium heat in a saute pan and brown each side of the chops, leaving undisturbed for the first 2 minutes to allow the crust to integrate into the meat. Place on a baking sheet and finish in the oven, for approximately 6 to 8 additional minutes.

8 lamb loin chops
2 tablespoons​ olive oil
4 cloves garlic (minced)
1 teaspoon black pepper
1/4 teaspoon red pepper flakes
1 tablespoon fresh rosemary (chopped)
1/2 teaspoon oregano
1/2 teaspoon thyme
Kosher salt (to taste)
2 tablespoons fresh parsley (chopped)
2 tablespoons fresh mint (chopped)

Steps:

  • Gather the ingredients.
  • In a large baking dish, toss the lamb with the olive oil, garlic, black pepper, red pepper flakes, rosemary, oregano, and thyme.
  • Once the chops are evenly coated, cover and refrigerate for at least 4 hours or up to overnight.
  • Preheat grill, grill pan, or broiler.
  • Remove chops from marinade and salt both sides generously.
  • Cook about 5 to 6 minutes per side for medium-rare (will vary depending on thickness).
  • Scatter with fresh parsley and mint.
  • Let rest for 5 minutes before serving.

1 (5 pound) leg of lamb
3 cloves garlic, cut into slivers
3 teaspoons dried dill weed
1 ½ teaspoons salt
1 teaspoon dried rosemary, crushed
½ teaspoon ground black pepper

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C).
  • Puncture the leg of lamb with the tip of a knife just far enough to insert slivers of garlic into the holes. Mix together the dill, salt and rosemary, and rub over the leg of lamb. Place the lamb, fatty side up, on a rack in a shallow roasting pan.
  • Roast uncovered for 2 to 2 1/2 hours in the preheated oven, to an internal temperature of 155 degrees F (68 degrees C) for medium. Tent with aluminum foil and let stand for 15 to 20 minutes before carving. The lamb will continue to cook a little bit, and the juices will set up better for carving.

½ cup olive oil
¼ cup red wine vinegar
2 ½ tablespoons minced fresh rosemary
¾ medium lemon, juiced
6 cloves garlic, minced
¾ teaspoon Dijon mustard
salt to taste
4 (4 ounce) Lamb, Australian, imported, fresh, leg, sirloin chops, boneless, separable lean and fat, trimmed to 1/8" fat, raw

Steps:

  • Whisk olive oil, vinegar, rosemary, lemon juice, garlic, mustard, and salt together in a large glass or ceramic bowl. Add chops and toss to evenly coat. Cover the bowl with plastic wrap and marinate in the refrigerator for 2 to 4 hours, or overnight.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Remove chops from the marinade and shake off excess. Discard the remaining marinade.
  • Grill chops until an instant-read thermometer inserted into the center reads at least 135 degrees F (57 degrees C), 5 to 7 minutes per side.

DH and I made this recipe from the February 2009 edition of Bon Appetit a few nights ago and really enjoyed it. We usually prepare our lamb chops on the grill, but I thought that this recipe would lend itself well when grilling is just not practical. I am posting the recipe as printed in Bon Appetit, however, DH suggested that next time I chop the rosemary and thyme leaves, rather than lightly crush them with my mortar and pestel. Prep time includes marinating time.

4 large garlic cloves, pressed
1 tablespoon fresh thyme leave, lightly crushed
1 tablespoon fresh rosemary leaf, lightly crushed
2 teaspoons coarse kosher salt
2 tablespoons extra virgin olive oil, divided
6 lamb loin chops (1 1/4 inch thick)

Steps:

  • Mix first 4 ingredients and 1 Tb olive oil in a large bowl. Add lamb; turn to coat.
  • Let marinate at room temperature at least 30 minutes and up to 1 hour.
  • Preheat oven to 400°F.
  • Heat remaining 1 Tb olive oil in heavy large ovenproof skillet over high heat. Add lamb; cook until browned, about 3 minutes per side.
  • Transfer skillet to oven and roast lamb chops to desired doneness, about 10 minutes for medium-rare.
  • Transfer lamb to platter, cover, and let rest 5 minutes.

1/4 cup dry red wine or beef broth
2 tablespoons reduced-sodium soy sauce
1-1/2 teaspoons minced fresh mint or 1/2 teaspoon dried mint
1 teaspoon minced fresh basil or 1/4 teaspoon dried basil
1/2 teaspoon pepper
1 garlic clove, minced
4 bone-in lamb loin chops (1 inch thick and 6 ounces each)

Steps:

  • In a shallow dish, combine the wine or broth, soy sauce, mint, basil, pepper and garlic; add the lamb chops and turn to coat. Cover and refrigerate for 8 hours or overnight., Drain and discard marinade. Grill lamb, uncovered, over medium heat or broil 4-6 in. from the heat for 5-7 minutes on each side or until meat reaches desired doneness (for medium, a thermometer should read 140°; medium-well, 145°).

1 garlic clove, minced
1 teaspoon grated lemon zest

Steps:

  • In a shallow dish, combine the first eight ingredients; add the chops and turn to coat. Cover; refrigerate for at least 2 hours or overnight., Drain and discard marinade. Broil lamb 3-4 in. from the heat for 4-9 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°).

  • Allow lamb loin chops to reach room temperatura. If previously frozen, transfter to refrigerator the night before and take it out of the fridge about an hour before cooking. If you are using fresh loin chops, remove from refrigerator half hour before cooking. Place lamb loin chops on a work board and pat them dry with a paper towel.
  • Meanwhile add the garlic, salt, pepper and oregano to a mortar and pestle and mash it until it becomes paste. This will yield about 1 tbsp of garlic and herb paste.
  • Season the lamb loin chops with olive oil and garlic & herb paste on all sides. If you can please allow the lamb to marinate for up to 30 minutes on the counter or refrigerated overnight.
  • Heat remaining 1 tbsp of olive oil in a cast iron skillet or stove top griddle until very hot. Add lamb loin chops and allow it to cook for about 4-5 minutes on each side, top and bottom. Additionally cook the three sides for 2-3 minutes (lamb loins are thick triangle-like shaped with one fatty side). To be sure the lamb is thoroughly cooked use a kitchen thermometer to make sure the internal temperature is at least 145F for rare meat up to 165F for well done*
