Replace flour tortillas with thin omelettes, then pile high with tasty vegetarian toppings for a low-calorie lunch - enjoy warm or cold

Provided by Sara Buenfeld

Categories     Dinner, Lunch, Supper

Time 18m

Number Of Ingredients 11

1 ½ tsp rapeseed oil
2 spring onions , finely chopped
1 large courgette , coarsely grated and squeezed dry
2 large eggs
2 tbsp chopped basil
2 tsp thyme leaves
50g soft goat's cheese
2 medium tomatoes , chopped
6 Kalamata olives , rinsed and halved
2 handfuls baby kale or watercress
radishes , to serve (optional)

Steps:

  • Heat 1 tsp oil in a frying pan and add the spring onions and courgette. Cook, stirring frequently, to soften the courgette and drive off any excess moisture. Tip the veg into a bowl and wash the pan.
  • Beat an egg with 1 tbsp water, half the herbs and some black pepper. Heat the remaining oil in the frying pan, pour in the egg mixture and swirl the pan to set it thinly on the base. Cook for a couple of mins, tip onto a plate and repeat with the other egg, 1 tbsp water and remaining herbs.
  • Spread the goat's cheese down the centre of each pancake and top with the courgette mix, scatter over the tomatoes, olives and baby kale, then roll up and cut in half. Alternatively, spread the goat's cheese over the pancakes, top with the filling and serve open. Eat with some radishes on the side, if you like.

8 extra-thin slices smoked bacon, pancetta, or smoked ham (each about 1 1/2- by 8-inches)

GOAT CHEESE POTATO PANCAKES WITH POACHED EGGS

Goat Cheese Potato Pancakes with Poached Eggs image

I was looking for something different for Sunday brunch. Just used what was on hand and they came out great. My wife thought they were a bit rich, so I may try a touch of lemon to cut through the richness of the goat cheese.

Provided by RCHEISS

Categories     Breakfast and Brunch     Potatoes

Time 39m

Yield 3

Number Of Ingredients 12

3 sausage patties
6 red potatoes, cut into matchsticks
2 green onions, cut into 2-inch matchsticks
2 button mushrooms, thinly sliced and cut into matchsticks
1 tablespoon quick-mixing flour (such as Wondra®), or more as needed
½ teaspoon garlic powder
½ teaspoon freshly ground black pepper
½ teaspoon fine sea salt
2 tablespoons goat cheese
1 tablespoon butter
1 teaspoon white vinegar
3 eggs

Steps:

  • Heat a cast iron skillet over medium heat. Cook sausage patties until golden brown, about 3 minutes per side. Transfer to 3 serving plates.
  • Bring 3 or 4 cups of salted water to a boil in a large pot. Add potatoes and green onions; cook for 1 to 2 minutes. Drain and cool under running water.
  • Combine potatoes, green onions, mushrooms, quick-mixing flour, garlic powder, pepper, and sea salt in a bowl; mix well by hand. Blend in goat cheese with your fingers.
  • Melt butter in the skillet over medium-high heat. Drop potato mixture into the skillet in 3 portions. Flatten into 3-inch pancakes with spoon or spatula. Cook until browned and slightly crusted, 2 to 3 minutes per side. Place on top of sausage patties.
  • Fill a large saucepan with 2 to 3 inches of water and bring to a boil. Reduce heat to bring water to a gentle simmer; add vinegar. Crack 1 egg into a small bowl. Gently slip into the simmering water, holding the bowl just above the surface of the water. Repeat with remaining eggs.
  • Cook eggs until the whites are firm and the yolks have thickened, 2 1/2 to 3 minutes. Remove the eggs from the water with a slotted spoon, dab on a kitchen towel to remove excess water, and place on top of pancakes.

HERB CREPES WITH GOAT CHEESE FILLING

Herb Crepes With Goat Cheese Filling image

Crepes make delicious, easy finger foods. Cut them in half, top with a filling, then fold them in half and again in half, so they're like little coronets. These thin pancakes are easy to make in today's heavy nonstick crepe pans. Give the batter plenty of time to rest so that the flour swells and softens; that will make the crepes delicate.

Provided by Martha Rose Shulman

Categories     brunch, main course

Time 15m

Yield Serves 10 as an hors d'oeuvre.

Number Of Ingredients 13

2 large eggs
3/4 cup milk
1/2 cup water
3 tablespoons canola oil
1/2 teaspoon salt
2 ounces whole-wheat flour (1/2 cup less 1 tablespoon)
2 ounces all-purpose flour (scant 1/2 cup less 1 tablespoon)
2 to 3 tablespoons finely chopped tarragon, parsley, chervil or chives (or a combination)
Butter for the pan
3/4 cup low-fat cottage cheese
6 ounces goat cheese
3 tablespoons plain low-fat yogurt
Freshly ground pepper

Steps:

  • Place the milk, water, eggs, canola oil and salt in a blender. Cover the blender, and turn on at low speed. Add the flours, and increase the speed to high. Blend for one minute. Transfer to a bowl, cover and refrigerate for one to two hours. When ready to cook, stir in the herbs.
  • Place a seasoned or nonstick 6- to 8-inch crepe pan over medium heat. Brush with butter or oil. When the pan is hot, and just before it begins to smoke, remove from the heat and ladle in three to four tablespoons of batter (depending on the size of your pan). Tilt or swirl the pan to distribute the batter evenly, and return to the heat. Cook for about one minute until you can easily loosen the edges with a spatula. Turn and cook on the other side for 30 seconds. Turn onto a plate. Continue until all of the batter is used up. You'll get about 12 crepes with an 8-inch pan, 16 with a 6-inch pan.
  • Combine the cottage cheese and goat cheese in a food processor fitted with the steel blade, and blend until smooth. Add the yogurt and pepper, and blend together. Transfer to a bowl. Cover and refrigerate until ready to use.
  • Cut each crepe in half. Spread a scant tablespoon of the herbed goat cheese on the less cooked side of each crepe. Fold in half, then in half again. Arrange on a platter. To serve warm, heat for 30 seconds in a microwave or for 10 minutes in a low oven.
