- Preheat oven to 350°. Place ribs, meaty side up, on a rack in a greased 13x9-in. baking pan. Cover pan tightly with foil. Bake 1-1/4 hours. , Meanwhile, combine the next nine ingredients in a saucepan. Bring to a boil over medium heat. Reduce heat; simmer 15 minutes, stirring occasionally. , Drain ribs; remove rack and return ribs to pan. Cover with sauce. Bake, uncovered, 30 minutes or until meat is tender, basting occasionally. Sprinkle with sesame seeds just before serving.

Steps:
- Place ribs in a large pot, and cover with water. Cover, and simmer for 1 hour, or until meat is tender. Drain, and transfer ribs to a shallow dish.
- In a small saucepan, stir together the maple syrup, brown sugar, ketchup, vinegar, Worcestershire sauce, salt, and mustard powder. Bring to a low boil, and cook for 5 minutes, stirring frequently. Cool slightly, then pour over ribs, and marinate in the refrigerator for 2 hours.
- Prepare grill for cooking with indirect heat. Remove ribs from marinade. Transfer marinade to a small saucepan, and boil for several minutes.
- Lightly oil grate. Cook for about 20 minutes, basting with the cooked marinade frequently, until nicely glazed.

MAPLE COCKTAIL RIB BITES
These are sure to be a hit on your appy table. If you would rather make meal out of these, that's easily done too. To keep these warm after cooking, throw them a crockpot on low and put a little container of cocktail toothpicks next to them. Stand back, and watch them fly away!

- Preheat the oven to 350 degrees. Cut the ribs into 1 1/2-2" pieces. Place either a disposable tin pan or a shallow baking dish lined with non-stick foil. Salt and pepper the ribs to taste.
- Cover with foil and place in the oven for 45 minutes.
- Meanwhile, stir together the remaining basting sauce.
- Remove the ribs from the oven and drain any fatty liquid. Toss with 1/2 cup of the sauce.
- Return the ribs to the oven, uncovered, and bake an additional 30 minutes, basting with the remaining sauce.

MAPLE CHICKEN'N'RIBS
This recipe says it all. You need no more than a few minutes to load up a couple of freezer bags with ribs and chicken, oils and unguents and then after a day or so's untroublesome marinating in the refrigerator, you tip out the contents to a roasting tray and slide it in the oven. Your input is minimal, but what you get out is a big feast that feels homey and welcoming and makes everyone happy, you included.

- Put the ribs and chicken pieces in a couple of large freezer bags or into a dish.
- Add all the remaining ingredients, squelching or everything together well before sealing the bag or covering the dish.
- Leave to marinade in the refrigerator overnight or up to 2 days.
- Take the dish out of the refrigerator and preheat the oven to 200C/400 degrees F.
- Pour the contents of the freezer bag into 1 or 2 large roasting trays (making sure the chicken is skin side up) and place in the preheated oven and cook for about 1 hour and 15 minutes, by which time everything should be sticky and glossed conker-brown.
MAPLE PIG COCKTAIL
Steps:
- Muddle the cherries, maple syrup, bitters and lemon juice in a cocktail shaker.
- Add ice to the muddle and shake quickly to blend and coat the ice.
- Add the Bacon-Infused Bourbon to the shaker and stir--don't shake; it will bruise the whiskey.
- Pour into a rocks glass (don't strain; you want all that marinated ice in there). Garnish with a lemon wedge.
- Cook the bacon until crisp. Add the bacon and its rendered fat (drippings) to a Mason jar with the bourbon. Freeze until the fat has solidified, then remove top fat layer. Strain the bourbon into another Mason jar or sealable container and put back in the freezer. Repeat the last step once or twice more, finishing by straining through a fine-mesh sieve lined with damp cheesecloth. Use immediately or keep refrigerated in an airtight container.
STICKY MAPLE AND BOURBON PORK RIBS
Skip the same old boring barbecue sauce and opt for a sticky malt vinegar, bourbon, and maple syrup glaze to slick up these boiled-and-baked pork ribs.

- For the ribs:
- Place the vinegar, water, bay leaves, cinnamon, sugar, rock salt and onion in a large saucepan over high heat. Stir to combine and bring to the boil.
- Add the ribs, reduce the heat to medium and cover with a tight-fitting lid. Simmer for 30-40 minutes or until the pork is tender.
- For the glaze:
- Place the bourbon, maple syrup, vinegar, Worcestershire sauce, mustard, paprika and salt flakes in a medium saucepan over medium heat. Stir to combine and bring to the boil. Reduce the heat to low and simmer for 8-10 minutes or until slightly reduced. Set aside.
- To finish:
- Preheat oven to 220°C (425°F).
- Remove the ribs from the cooking liquid and place, meat-side down, in a large deep-sided ovenproof dish. Top with the glaze and roast for 15 minutes.
- Turn the ribs over, baste with the glaze and roast for a further 15 minutes or until the pork is tender and the glaze is reduced. Brush with any remaining glaze and slice to serve.

- Place the vinegar, molasses, maple syrup, mustard, and harissa in a large bowl; mix to combine. Add ribs and let marinate for 1 hour, covered, in the refrigerator.
