HAM HASH WITH SWEET POTATOES & THYME



Ham Hash With Sweet Potatoes & Thyme image

If you have a pound of ham plus potatoes and a few seasonings, you can whip up this brunch classic!

Number Of Ingredients 11

2 tablespoons vegetable or olive oil
1 large onion, cut into 1/2-inch dice
1 pound ham cut into 1/2-inch dice
1 pound potatoes, cut into 1/2-inch dice
½ pound sweet potatoes, cut into 1/2-inch dice
2 tablespoons vegetable or olive oil
2 tablespoons ketchup
1 tablespoon Dijon mustard
½ teaspoon dried thyme leaves
2 tablespoons chopped fresh parsley
Salt and freshly ground black pepper

Steps:

  • Heat 2 Tbs. oil over low heat in a 12-inch non-stick skillet (so potatoes don't stick). While skillet heats, prepare onion and ham as directed above. A few minutes before cooking, increase heat to medium-high. When oil starts to send up wisps of smoke, add onion and ham; cook, stirring often, until golden brown, 7 to 8 minutes. Meanwhile, dice potatoes and toss with remaining oil. Transfer ham mixture to a bowl and reserve.
  • Add potatoes to empty skillet; cook, stirring only occasionally so they form a golden-brown crust, about 10 minutes. As potatoes cook, mix ketchup, mustard, dried thyme, fresh parsley and 2 Tbs. of water. (Recipe can be prepared to this point up to 2 hours ahead. Spread hot potatoes on a large lipped cookie sheet; cover when cool. Return skillet to medium-high; add potatoes and re-crisp.)
  • Return reserved ham mixture to skillet; stir in ketchup mixture, then season with salt and pepper. Cook, stirring frequently, until hash has nicely browned, about 5 minutes longer.

2 cups cubed peeled sweet potatoes
2 tablespoons butter
1 tablespoon olive oil
1 medium onion, chopped
1 small sweet red pepper, chopped
3 green onions, chopped
1 red chili pepper, seeded and finely chopped
3 garlic cloves, minced
2 cups cubed fully cooked ham
1/2 teaspoon pepper
1/4 teaspoon salt
4 eggs
1/4 cup shredded white cheddar cheese

Steps:

  • In a large skillet, saute sweet potatoes in butter and oil until crisp-tender. Add the onion, red pepper, green onions and chili pepper. Saute 4-5 minutes longer or until tender. Add garlic; cook 1 minute longer. Stir in the ham, pepper and salt., With the back of a spoon, make four wells in the potato mixture; add an egg to each well. Sprinkle with cheese. Cover and cook for 4-5 minutes or until egg whites are completely set.

2 large sweet potatoes, peeled and cubed into 1-inch cubes
6 tablespoons olive oil, divided
1/2 red onion, chopped
1 red bell pepper, chopped
1/4 cup green onions
2 cloves garlic, chopped
2 teaspoons smoked paprika
Kosher salt and freshly ground black pepper
2 tablespoons chopped fresh parsley

Steps:

  • Add the potatoes to a large saucepan of salted boiling water and simmer until tender. Drain and dry completely with paper towels.
  • Meanwhile, heat 2 tablespoons oil in a large skillet over medium-high heat. Add the red onions, bell peppers, green onions, and garlic, and saute until tender and lightly golden, 5 to 6 minutes. Season with salt and pepper and remove to a bowl.
  • Add the remaining 4 tablespoons oil to the skillet, and then add the drained and dried sweet potatoes. Cook in a single layer, stirring occasionally, on medium heat until they are tender, about 6 minutes. Increase the heat to high and cook, without stirring, until the potatoes are golden and crisp, about 2 more minutes. Sprinkle with the smoked paprika and gently stir in the onion mixture and parsley.

3/4 pound cooked lean ham, cut into 1/4-inch dice
1 pound sweet potatoes, cooked, peeled and cut into 1/2-inch dice
1 small onion, peeled and cut in small dice
1/2 medium green bell pepper, stemmed, seeded, deribbed and cut in small dice
1/2 cup heavy cream
2 large eggs
1 tablespoon chopped fresh sage or 1 teaspoon dried sage
Freshly ground black pepper to taste
3 tablespoons unsalted butter

Steps:

  • In a large bowl combine ham, potatoes, onion and green pepper. In a small bowl, whisk together cream, eggs, sage and pepper and add to the ham mixture.
  • Preheat broiler. In a medium-sized skillet, melt 1 1/2 tablespoons of the butter over high heat. When almost brown, add the hash, reduce the heat to medium and cook for 4 minutes, gently shaking the pan occasionally to loosen the hash at the bottom.
  • To brown the top, invert hash into an overproof dish and place under broiler for 3 to 5 minutes.

Picked this up some years back at the state fair from the California Sweet Potato Council. This dish is very rich and filling and was the only way DS would eat sweet potatoes when he was young.

1 1/2 lbs fresh sweet potatoes (yam variety)
1/4 cup butter or 1/4 cup margarine
1/2 cup onion, chopped
1/4 cup flour
1/2 teaspoon salt
1/2 teaspoon basil, crushed
1/4 teaspoon dry mustard
1/8 teaspoon pepper
1 1/2 cups milk
1 1/2 cups swiss cheese, grated
3/4 lb ham, cooked, cubed

Steps:

  • Wash sweet potatoes. Cook unpeeled sweet potatoes, covered, in small amount of boiling salt water untill tender, about 20 to 30 minutes. Cool. Peel and slice 1/4 inch thick; set aside.
  • Melt butter in medium saucepan. Add onion, cook until tender. Remove from heat; stir in flour, salt, basil, mustard and pepper. Cook over low heat until bubbly, 2 to 3 minutes. Remove from heat; stir in milk all at once. Cook over medium heat, stirring constantly, until mixture comes to a boil. Boil and stir one minute. Remove from heat. Stir in 3/4 cup of cheese and the ham.
  • Pour half of mixture into greased 2 quart casserole. Arrange half of sweet potaotoes on top. Repeat layers. Bake at 350*F, 25 minutes. Sprinkle with remaining cheese and bake 3 to 4 minutes longer, or until cheese has melted.

2 medium onions (minced and sauteed in 2 tablespoons butter for 2 minutes)
1/2 large green bell pepper, finely chopped
1/2 teaspoon ground sage
salt
fresh ground black pepper
3/4 cup heavy cream
4 tablespoons butter
4 large eggs
minced fresh parsley leaves

Steps:

  • In a big bowl, combine the ham, sweet potatoes, onions, bell pepper, sage, salt, pepper, and cream; stir to blend.
  • With your hands, form into a large cake.
  • In a large skillet, melt half the butter over med-high heat; add the ham cake, and press down evenly with a spatula to form a compact oval cake.
  • Decrease heat to medium and cook the hash about 5 minutes or until the underside is browned and crusty.
  • Loosen the hash with the spatula and invert onto a plate.
  • Add the remaining butter to the skillet and increase the heat slightly; slide the other side of the hash into the skillet, decrease heat to medium, and cook about 5 minutes or until the other side is browned and crusty.
