Steps:
- Heat oven to 200C/180C fan/gas 6. Rinse and dry the unpeeled new potatoes. Put 2-3 tbsp duck fat or olive oil in a roasting tin and put in oven for 10 mins to melt. Strip leaves from rosemary, oregano and sage and stir into tin with seasoning.
- Add potatoes and toss well. Roast for 40-50 mins, shaking tin a couple of times, until potatoes are crisp and tender. Sprinkle with sea salt and serve.

BABY POTATOES WITH BUTTER & FRESH HERBS
This is a wonderful, elegant potato side dish that's not too rich so it's ideal to serve with rich mains like roasts, and light enough to serve with more delicate foods such as seafood (fish, prawns/shrimp, lobster, crab, mixed seafood platter!).It's a classic side dish you will see offered at fine dining restaurants as a less heavy potato side compared to things like Paris Mash (the world's richest mashed potatoes!).

- Boil potatoes: Place potatoes in a large pot of cold tap water with 1 tbsp salt. Bring to a boil over high heat, then lower heat to medium so they're simmering gently (this stops skin splitting). Cook for 10 - 15 minutes until there's no resistance when pierced with a knife. Alternatively, steam the potatoes.
- Steam dry: Drain in colander then leave for a minute to let the potatoes steam dry (if wet, butter won't stick).
- Toss with butter: Transfer to a bowl, add salt, pepper and butter. Toss to melt and coat.
- Add herbs just before serving. Stir through, transfer to serving bowl and serve warm!

I found this recipe on a pressure cooker website. It was written for a stovetop pressure cooker but I have an electric one so I tried with that. These are some of the best potatoes I have ever had. - 1. Stovetop PC (pressure cooker): preheat pressure cooker on stovetop Electric PC: turn on to preheat browning feature
- 2. Wash potatoes and pierce a few times with a fork. **I cut them in half because mine were a bit large but this is not necessary.
- 3. drizzle oil into PC and roll potatoes in the oil to cover then brown for 8-10 minutes. Be sure to roll them around to get all sides a littled brown.
- 4. Add rosemary & garlic cloves then pierce each potato once with a paring knife and add stock. Cover with lid. *this allows flavor to infuse into the potatoes
- 5. Stovetop PC: over low/medium flame bring up to pressure then cook for 5 minutes shut flame off and allow pressure to naturally release. Electric PC: adjust to 15 psi then put timer on 5 minutes let PC run the cycle and let pressure naturally release.
- 6. Open PC and be very careful it will be hot. Squeeze garlic cloves over potatoes and stir gently serve alongside any beef, pork or poultry. For smashed potatoes squeeze softened garlic cloves out of skins into potato roughly mash with mixer or masher if you need a bit more liquid add a dab of milk, sour cream or heavy cream. Serves 6-8 people

- Place potatoes and 3 tablespoons salt in a medium saucepan. Cover with water, and bring to a simmer. Cook until a knife pierces through potatoes with little resistance, about 10 minutes. Drain; transfer to a bowl.

- Place potatoes in a large saucepan with salted cold water. Bring to almost a boil, turn down and simmer on low until tender with pierced with a sharp knife tip, about 18 minutes.

BABY HERB POTATOES
My first posted recipe! I combined several recipes to create these; I was itching to make use of my herb garden but wanted to use baby potatoes. This fed six people, but as two of them were children you may want to increase the amount of potatoes. Also, this calls for 4 tbs of olive oil, but make sure you use enough to coat all the potatoes. I recommend pairing these with hamburgers and a salad.

- Cover the potatoes in water and boil until tender, about 20 minutes.
- While the potatoes are boiling add the olive oil, garlic and herbs to a large sauce pan and put on a low heat.
- When potatoes are tender, drain and dry them. Rinse with cool water and then halve the potatoes.
- Add the potatoes to the oil mixture and raise the temperature to a medium heat.

- Scrub potatoes clean with a vegetable scrubber. Cut any larger potatoes in half or quarters so that all of the potatoes are uniform in size (leave as many In tact as possible. Place in a large pot, cover with water and bring to a boil. Add 2 teaspoons of salt to the water. Turn heat down to medium and simmer potatoes until fork-tender; about 10 minutes. - Preheat the oven to 400 degrees F.
- Put the potatoes into a large bowl. In a small bowl, whisk the herbs, garlic, and oil together until blended, and then pour over the potatoes. Sprinkle generously with salt and pepper and toss to coat. Transfer the potatoes to a heavy large baking dish, spacing them evenly apart.

- Melt the butter in a Dutch oven or large heavy-bottomed pot. Add the whole potatoes, salt, and pepper and toss well. Cover the pot tightly and cook over low heat for 20 to 30 minutes, until the potatoes are just tender when tested with a small knife. From time to time, shake the pot without removing the lid to prevent the bottom potatoes from burning. Turn off the heat and allow the potatoes to steam for another 5 minutes. Don't overcook! Toss with the herbs, and serve hot.
