Biscuits:
1 cup all-purpose flour
3/4 cup cornmeal
1 tablespoon sugar
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon kosher salt
1/4 teaspoon black pepper, freshly ground
1/2 cup (1 stick) chilled unsalted butter, cut into pieces
3/4 cup buttermilk
Gravy and assembly:
1 tablespoon vegetable oil
1 pound fresh chorizo, casings removed
3 tablespoons all-purpose flour
2 1/2 cups whole milk
Kosher salt, freshly ground pepper
Hot sauce
1 avocado, sliced
4 scallions, thinly sliced
2 radishes, thinly sliced
1/2 cup cilantro leaves with tender stems
1/2 cup Cotija cheese or queso fresco (optional)

Steps:

  • Biscuits:
  • Preheat oven to 425°F. Combine flour, cornmeal, sugar, baking powder, baking soda, salt, and pepper in a large bowl. Using your hands, work butter into flour until pieces are chickpea-size. Add buttermilk and mix just to blend.
  • Drop dough by heaping 1/4-cupfuls into an 8" cast-iron skillet, spacing about 1" apart. Bake, rotating skillet once, until biscuits are puffed, golden brown, and cooked through, 12-15 minutes.
  • Gravy and assembly:
  • While biscuits are baking, heat oil in a medium skillet over medium. Add chorizo, breaking up any large pieces with a spatula. Cook, stirring occasionally, until chorizo is browned and crisp, 8-10 minutes. Transfer to a small bowl with a slotted spoon.
  • Whisk flour into drippings in skillet and cook, whisking constantly, until roux is very smooth and starting to turn a light golden brown, about 5 minutes. Gradually add milk, whisking constantly until incorporated. Reduce heat to medium-low and cook gravy, whisking constantly, until thickened, 5-8 minutes. Stir half of chorizo into gravy; season with salt, pepper, and hot sauce.
  • Spoon some gravy over hot biscuits and top with avocado, scallions, radishes, cilantro, Cotija (if using), remaining chorizo, and more hot sauce. Serve remaining gravy alongside.

I found this recipe in the Baltimore Sun and wanted to save it here. We're big fans of "regular" biscuits and gravy and of chorizo, so I'm hoping this will go over well.

2 cups all-purpose flour
2 1/2 teaspoons baking powder
2 -3 teaspoons sugar, to taste
1/2 teaspoon salt
3 tablespoons cold unsalted butter, diced
3 tablespoons vegetable shortening, very cold
3 -4 tablespoons chopped fresh cilantro (or a combination) or 3 -4 tablespoons chives (or a combination)
3/4 cup whole milk or 3/4 cup half-and-half, very cold
milk, for brushing on top
1 (12 ounce) package mexican chorizo sausage, casings removed
1 small onion, finely chopped
3 cups whole milk
6 tablespoons flour
1 small red bell peppers, roasted, peeled, seeded, diced or 1/2 cup diced bottled roasted red pepper
1/2 teaspoon salt
fresh ground pepper
chopped fresh cilantro

Steps:

  • Heat oven to 425 degrees. Put flour, baking powder, sugar and salt into a food processor or into a large bowl. Pulse or stir to mix. Drop diced butter and shortening randomly over the flour mixture. Pulse or use two knives to cut the butter and shortening into the flours until the mixture resembles coarse crumbs. Stir in herbs. Sprinkle the milk over the mixture. Pulse or stir until the mixture barely gathers into a ball.
  • Transfer to a piece of floured wax paper; gather into a ball. Cover with a second piece of floured wax paper; gently roll or press into an even 1/2-inch thick circle. Use a floured 3-inch round biscuit cutter or drinking glass to cut into circles. Place the circles on a parchment-lined baking sheet. Very gently gather up the scraps; roll into a 1/2-inch thick piece and cut more biscuits.
  • Brush the tops with milk; bake until tops are golden, 12-15 minutes.
  • Crumble chorizo sausage into a cast-iron pan or nonstick skillet. Add onion. Cook until nicely browned, about 10 minutes. Transfer sausage and onion with a slotted spoon to a plate.
  • Drain off all but 2 tablespoons of the pan drippings. Mix 1/2 cup of the milk and the flour in a small bowl until smooth. Stir into pan drippings; stir in remaining milk. Cook, stirring, over medium heat until smooth and thickened, about 5 minutes.
  • Stir in sausage, diced red pepper, salt and black pepper to taste. Heat to warm through, 1-2 minutes. Serve over biscuits; sprinkle generously with cilantro.

I have my favorite Southern biscuits and gravy, but scaled it down and changed the seasonings for a decidedly Italian twist.

½ cup skim milk, or as needed
1 ½ teaspoons white vinegar
1 cup all-purpose flour
1 ½ teaspoons baking powder
¼ teaspoon baking soda
⅓ teaspoon sea salt
1 pinch dried oregano
1 pinch dried basil
1 pinch ground thyme
¼ cup cold unsalted butter
4 ounces turkey breakfast sausage
1 tablespoon unsalted butter
2 tablespoons all-purpose flour
¼ teaspoon salt
¼ teaspoon Italian seasoning (such as Trader Joe's® 21 Seasoning Salute)
1 ½ cups skim milk
½ cup chicken broth

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C).
  • Pour milk into a measuring cup and add vinegar; set aside until milk curdles, 5 to 10 minutes.
  • Whisk together flour, baking powder, baking soda, sea salt, oregano, basil, and thyme in a large bowl. Cut in cold butter using a pastry cutter until mixture resembles coarse crumbs.
  • Make a well in the dry ingredients and stir gently with a wooden spoon while pouring in 1/4 cup curdled milk at a time. Stop adding milk when it resembles a slightly tacky but moldable dough, stirring until just combined. You may not need all of the milk.
  • Turn mixture onto a lightly floured surface, dust the top with a bit of flour, and then very gently turn the dough over on itself 5 to 6 times. Form dough into a 1-inch thick disc, handling as little as possible.
  • Using a 1-inch thick dough cutter, push straight down through the dough, then slightly twist. Repeat and place biscuits on a baking sheet in 2 rows, making sure they just touch; this will help them rise uniformly. Gently reform the dough and cut out 1 or 2 more biscuits.
  • Bake in the preheated oven until fluffy and slightly golden brown, 10 to 15 minutes.
  • While biscuits are baking, cook sausage in a skillet over medium heat until browned, using a wooden spoon to break it up as it cooks, about 5 minutes.
  • Stir butter in a saucepan until melted. Mix in flour, salt, and seasoning. Cook and stir for 1 minute. Whisk in milk and continue cooking and stirring until gravy has thickened. Cook and stir for 1 minute more. If mixture is too thick, add in enough chicken broth until gravy has desired consistency. Serve gravy immediately over split biscuits.
