6 hibiscus tea bags
1/2 cup honey
1 cup fresh lime juice (from 8 to 10 limes)
1 cup light rum (optional)

Steps:

  • In a large heatproof pitcher, combine tea bags, honey, and 5 cups boiling water; let steep 10 minutes. Discard tea bags. Add lime juice, rum (if using), and 3 cups cold water. Refrigerate until cold, at least 1 hour (and up to 1 week). Serve over ice.

  • Harvest Flowers. Harvest five to six fresh Hibiscus flowers from the plant. The matured flowers will show signs of curling at the edges and small change in color from red to dark.
  • Clean the Flowers. First remove any leaves, stem and seed pods from the flowers. Separate the petals and keep aside.
  • Other Ingredients. 4 to 5 teaspoons of Honey. A small piece of Cinnamon stick. A small piece of dried Ginger. 2 to 3 Black Pepper corns. 1 piece of clove.
  • Crush Ingredients to Powder. Take all these ingredients like cinnamon, dried ginger, Black pepper corns and clove in a mortar and pestle and lightly crush them.
  • Boil Hibiscus Petals. Rinse the Hibiscus petals in clean water and transfer to a pot for boiling. Add enough water for making 2 to 3 cups of tea. Do not add too much water.
  • Filter the Hibiscus Tea. Once the water starts to boil, keep it on stove for another five to six minutes. You need not boil the petals more than that.
  • Add Honey and Serve. Transfer the hot tea to serving glasses. Add honey to each glass of tea and mix well. Garnish each glass with a fresh mint leaf and serve hot.
