1 ounce gin, such as Plymouth
3/4 ounce hibiscus tea
3/4 ounce Simple Syrup, recipe follows
1/2 ounce lemon juice
Lime wedge, for garnish
1 cup sugar

Steps:

  • Put the gin, tea, Simple Syrup and lemon juice in a mixing glass, add large ice and shake vigorously with a cocktail shaker. Taste for balance, strain into a martini or Nick and Nora glass with ice and garnish with a lime wedge.
  • Combine the sugar and 1 cup water in a small saucepan and bring to a boil. Cook, stirring, until the sugar dissolves. Remove from the heat and let cool completely. Keep covered in the refrigerator up to 1 month.

1/3 cup sugar, or to taste
2 cups ice

Steps:

  • In a saucepan bring water to a boil and add flowers. Simmer mixture 5 minutes and remove pan from heat. Let mixture stand 30 minutes to infuse.
  • Pour infusion through a sieve into a glass pitcher, pressing on solids, and discard flowers. Add sugar and ice, stirring until sugar is dissolved. Chill cooler and stir before serving.

10 cups water
1 cup dried hibiscus petals
1 cinnamon stick
1 whole clove
1 whole allspice berry
⅛ teaspoon freshly grated nutmeg
1 ½ cups raw sugar
ice cubes
2 ½ (32 ounce) bottles sparkling water
2 limes, cut into wedges

Steps:

  • Combine water, hibiscus petals, cinnamon, clove, allspice, and nutmeg in a medium pot. Bring to a boil over high heat. Reduce heat and simmer for 1 1/2 hours.
  • Remove from heat and stir in sugar until dissolved, about 1 minute. Cool syrup to room temperature, about 1 hour. Refrigerate until ready to use.
  • Make hibiscus coolers by filling 10 glasses with ice. Pour 3 fluid ounces hibiscus syrup into each glass; top with 8 fluid ounces sparkling water. Squeeze 1 lime wedge into each glass.
