NUT FUDGE
Some 17 years ago, when I was dating the man who is now my husband, his mother gave me this recipe for his favorite fudge. It's a tasty treat that's so simple to make.

Steps:
- Line a 13x9-in. pan with foil; butter the foil with 1 tablespoon butter and set aside. Break German chocolate into 1-in. pieces; place in a bowl. Add the chocolate chips and marshmallow creme; set aside., In a large saucepan, bring the sugar, milk and remaining butter to a boil over medium heat, stirring often. Reduce heat; simmer, uncovered, 6 minutes, stirring occasionally. Slowly pour over chocolate mixture; stir until mixture is smooth and blended. Stir in nuts., Pour into prepared pan. Let stand at room temperature until cool. Cut into 1-in. squares. Store in an airtight container in the refrigerator.

DAIRY STATE FUDGE
I grew up on a dairy farm in Wisconsin, so it's only natural I have a lot of recipes that use dairy ingredients. Our farm also had a lot of hickory trees, so we always made this fudge with hickory nuts. I make this candy nearly every Christmas. You'll find it's hard to eat just one piece.

- In a bowl, beat cream cheese until fluffy; set aside. In the top of a double boiler, melt butter. Add almond bark; heat and stir until melted and smooth. , Pour over the cream cheese; beat until smooth and glossy, about 7-10 minutes. Stir in nuts. Pour into a greased 9-in. square pan. Store in the refrigerator.

MAPLE NUT FUDGE
Classic maple Fudge recipe. Very rich, very sweet and not hard at all so long as you use a candy thermometer.

Steps:
- Line an 8 inch square pan with nonstick foil and spray with cooking spray.
- Combine syrup, sugar, heavy cream and salt in a medium saucepan, preferably a non stick one; bring to boiling over medium high heat, stirring constantly; once boiling, cook 7 to 8 minutes or until mixture registers 238 degrees f. on a candy thermometer.
- Remove pan from heat; with an electric mixer, beat in butter and vanilla.
- Continue to beat on high power for 8 to 9 minutes, or until thickened, light ion color and fudge loses its glossy finish; stir in nuts and spread in prepared pan; let stand until firm about 25 minutes then cut into squares.

- Preheat oven to 300 degrees F. Coat 3 baking sheets with nonstick cooking spray. (Or use 1 baking sheet and wash and respray between batches.)
- Melt butter in a small saucepan over medium heat. Add nuts and stir until the butter is lightly browned, about 1 minute. Transfer to a mixing bowl. Stir in granulated and brown sugars. Add egg whites, flour and vanilla; whisk until combined.
- Working with one baking sheet at a time, spoon a heaping teaspoon of batter to make a line about 8 inches long and 3/4 inch wide. Repeat to make 8 lines on the sheet, spacing them about 1 inch apart. Bake until the cookies are well-browned on the edges, 8 to 10 minutes.
- Working quickly using a metal spatula, remove a cookie and wrap it around a 3/4-inch-thick wooden dowel or fat wooden spoon handle. Once the cookie stiffens, slide it off and repeat with the next cookie. If the unshaped cookies begin to harden and stick to the pan, return the baking sheet to the oven for about 30 seconds to soften them. Bake and shape the remaining batter in the same manner.
