2 Tbsp paprika
2 Tbsp packed brown sugar
1 Tbsp chili powder
1 Tbsp ground cumin
1 Tbsp dried thyme
1 tsp salt
1 tsp pepper
1 3 lb(s) boneless pork, shoulder, butt, roast
1 Tbsp olive oil
8 crusty roll, halved
1 455 mL bottle hickory barbecue sauce
¼ cup packed brown sugar
¼ cup cider vinegar
½ tsp hot pepper sauce

Steps:

  • Preheat oven to 325ºF (160ºC).
  • Combine paprika, brown sugar, chili powder, cumin, thyme, salt and pepper. Untie roast if necessary. Rub spice mixture over pork; transfer to bowl or resealable plastic bag. Cover and refrigerate for at least 4 hours or for up to 24 hours.
  • In large ovenproof skillet, heat oil over medium-high heat; brown roast on all sides. Place in oven for 2 1/2 hours or until meat thermometer inserted in centre registers160ºF (70ºC). Transfer pork to cutting board; tent with foil and let stand for 20 minutesto let cool. Using 2 forks or hands, pull pork into shreds and place in bowl.
  • Pour 1 1/2cups (375 mL) of the sauce over pork, tossing to coat. Pile onto rolls. Drizzle with remaining sauce.
  • Meanwhile, in saucepan, bring barbecue sauce, brown sugar, vinegar and hot pepper sauce to boil. Reduce heat and simmer, stirring occasionally, for 5 minutes.

Steps:

  • Place meat in slow cooker; top with soup mix, onions and barbecue sauce. Cover with lid. Cook on LOW 8 to 10 hours (or on HIGH 4 to 5 hours).
  • Remove meat from slow cooker; cut off and discard excess fat. Chop meat into small pieces or shred with fork. Return to slow cooker; stir until evenly coated with sauce.

1 (8 pound) pork shoulder roast
1 quart apple cider, or as needed
5 tablespoons white sugar
5 tablespoons light brown sugar
2 tablespoons kosher salt
2 tablespoons paprika
1 tablespoon onion powder
1 tablespoon freshly ground black pepper
1 tablespoon garlic powder
1 onion, chopped
3 cups hickory chips, or more as needed, soaked in water

Steps:

  • Place pork shoulder in a large pot and add enough apple cider to cover. Combine white sugar, brown sugar, salt, paprika, onion powder, black pepper, and garlic powder in a bowl. Mix about 1/4 cup sugar rub into cider; reserve remaining rub.
  • Cover pot and refrigerate for 12 hours.
  • Prepare smoker to about 210 degrees F (99 degrees C). Add enough wood chips to smoker.
  • Pour cider brine into the water pan of the smoker; add onion and about 1/4 cup more sugar rub. Spread remaining rub over pork shoulder. Transfer pork to the center of smoker.
  • Smoke pork until very tender, about 8 hours. Monitor hickory chips and liquid, adding more wood and water, respectively, as needed. Transfer pork to a large platter and cool for 30 minutes before shredding with forks.

Place another disposable aluminum foil pan (do not pierce pan) on unheated side of grill. Pour 2 cups water into unpierced pan. Let chips stand for 5 minutes or until smoking; reduce heat to medium-low.
  • Coat grill rack with cooking spray. Set grill rack in place. Place pork on grill rack over indirect heat. Close lid, and grill 3 hours, maintaining a constant temperature of 275°; add 1/2 cup soaked wood chips every 45 minutes. Grill pork an additional 3 1/2 hours or until a thermometer inserted in pork registers 170°. Wrap pork in heavy-duty aluminum foil, and cook an additional 1 1/2 hours or until pork reaches 190°.
