A tried-and-true recipe for Blueberry Muffins that works perfectly at high altitude every time!

Number Of Ingredients 10

2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon kosher salt
1/2 cup vegetable oil
1/4 cup granulated sugar
1/4 cup brown sugar
1 egg + 1 egg yolk
1 tablespoon pure vanilla extract
1 cup buttermill
2 cups blueberries, fresh or frozen

Steps:

  • Preheat oven to 425F degrees.
  • Line a standard 12-cup muffin pan with paper liners.
  • Combine flour, baking powder, and salt in a small bowl; set aside.
  • Combine oil, granulated sugar, and brown sugar in a medium bowl. Whisk until thoroughly incorporated. Whisk in egg, egg yolk, and vanilla. Whisk just until egg is incorporated.
  • Alternate adding the dry ingredients and the buttermilk to the sugar/egg mixture. Stir just until combined- taking care not to over mix. Fold in the blueberries.
  • Evenly divide the batter between the 12 muffin pans. Go ahead and fill the muffin tins to the top! Bake muffins in a 425F degree oven for 5 minutes and then lower the oven temperature to 375F degrees and cook for 18-20 minutes more. Remove from oven and let cool completely on a cooling rack.

½ cup all-purpose flour
¼ cup brown sugar
½ teaspoon ground cinnamon
¼ teaspoon salt
¼ cup butter, softened
2 cups all-purpose flour
3 teaspoons baking powder
1 teaspoon cinnamon
¼ teaspoon salt
2 large eggs
½ cup granulated sugar
½ cup brown sugar
1 cup sour cream
½ cup vegetable oil
1 teaspoon vanilla extract
2 cups blueberries
1 tablespoon all-purpose flour

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Spray 16 muffin cups with cooking spray or line cups with paper liners.
  • Combine 1/2 cup flour, 1/4 cup brown sugar, 1/2 teaspoon cinnamon, and 1/4 teaspoon salt in a small bowl. Cut butter into the flour mixture until it is crumbly. Set crumb topping aside.
  • Whisk 2 cups flour, baking powder, 1 teaspoon cinnamon, and 1/4 teaspoon salt together in a large bowl, making a well in the center. Whisk eggs, granulated sugar, and 1/2 cup brown sugar together in a separate bowl. Stir in sour cream, vegetable oil, and vanilla extract until well combined. Pour into the well in the flour mixture and stir until batter is just combined without overmixing. Toss blueberries with 1 tablespoon flour in a small bowl and gently fold into the batter.
  • Spoon batter into the prepared muffin cups, filling each 3/4 full. Top each muffin with about 1 tablespoon of crumb mixture.
  • Bake in the preheated oven until tops spring back when lightly pressed and muffins are lightly browned, 18 to 22 minutes. A toothpick inserted into the center of the muffins should come out clean. Cool in the tins for 10 minutes. Transfer to a wire rack to cool completely.

3/4 cup milk
1/4 cup vegetable oil or melted butter
1 egg
2 cups all-purpose flour
1/2 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 cup fresh, canned (drained) or frozen blueberries
2 tablespoons coarse sugar or additional granulated sugar, if desired

Steps:

  • Heat oven to 400°F. Grease bottoms only of 12 regular-size muffin cups with shortening or cooking spray, or line with paper baking cups.
  • In large bowl, beat milk, oil and egg with fork or wire whisk until well mixed. Stir in flour, granulated sugar, baking powder and salt all at once just until flour is moistened (batter will be lumpy). Fold in blueberries. Divide batter evenly among muffin cups; sprinkle each with 1/2 teaspoon coarse sugar.
  • Bake 20 to 25 minutes or until golden brown and toothpick inserted in center comes out clean. If baked in greased pan, let stand about 5 minutes in pan, then remove from pan to cooling rack; if baked in paper baking cups, immediately remove from pan to cooling rack. Serve warm if desired.

  • In a sifter or separate bowl, mix flour, baking powder, and salt. Sift directly into liquid mixture (or whisk in bowl and add to liquid all at once). Stir carefully until just combined (don’t overmix, which can lead to tough muffins). Fold in blueberries.
  • In a separate bowl, make the streusel: combine brown sugar, flour, and cinnamon, then drizzle in melted butter. I find the easiest way to blend the mixture is to use my fingers, pinching and squishing until everything is fully combined. Or, use a fork or pastry cutter.
