HIGH PROTEIN BREAKFAST COOKIES RECIPE

Fuel your day with this high protein breakfast cookies recipe. High protein cookies help you conquer your hunger.

2 mashed bananas
1/2 cup Premier Protein Banana
2 cups Whole Oats
1 tablespoon chia seeds
1/4 cup Premier Protein Banana
1/2 cup pecans or nuts
1/2 cup Chocolate Chips
1 teaspoon vanilla
Cinnamon for dusting

Steps:

  • First measure the chia seeds and 1/4 cup Premier Protein Banana into a small dish. Let this hang out for about 5-10 minutes. This will allow the chia seeds to swell.
  • Next mash the bananas in a small bowl.
  • Then measure out the whole oats, pecans and chocolate chips in a bowl.
  • Then add the chia seeds mixture and the bananas together and mix well.
  • Pour in the 1/2 cup Premier Protein with the chia seeds and banana mixture.
  • Add the wet ingredients to the dry and mix. Let this sit there for about five minutes to let the oats soak up the liquid.
  • Now form in to small circles on a cookie sheet lined with parchment paper and sprinkle a little cinnamon on top.
  • Bake at 350° for about 15 minutes. Flip over and bake for another 2 minutes if you want them firm on both sides.
  • Store in an air tight container in the fridge for up to four days.

2 medium bananas (about 10 oz)
1 1/2 cups coconut milk (from the carton, not the can, I use So Delicious unsweetened, 50 calories per cup)
1 1/2 scoops pea protein powder, Vanilla (I use OL)
1 scoop casein protein powder, Vanilla (I use Muscle Feast)
1/4 cup stevia, equivalent (I use 4 packets Truvia)
3/4 cup oats
1/4 cup coconut flour
3 tablespoons peanut flour (or PB2, or Just Great Stuff powdered pb)
1 teaspoon cinnamon
1/4 teaspoon nutmeg, ground
3/4 teaspoon salt
1/2 teaspoon baking soda
1 pinch xanthan gum
1 1/2 tablespoons pasteurized liquid egg-whites

Steps:

  • Blend bananas, protein powder, stevia, and coconut milk in a blender.
  • Mix all dry ingredients together in a bowl and then add the blender contents.
  • Stir in the liquid egg whites last.
  • Scoop onto a cookie sheet lined with parchment paper, flattening each until 1/4" thick.
  • Bake for 20-25 minutes at 375°F Makes 12 large cookies.

3 very ripe bananas
2 cups rolled oats
1 cup raisins
⅓ cup plain yogurt
1 teaspoon ground cinnamon

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line cookie sheets with parchment paper.
  • Mash bananas in a large bowl. Add oats, raisins, yogurt, and cinnamon. Mix well and allow to sit for 15 minutes.
  • Drop spoonfuls of dough 2 inches apart onto the prepared cookie sheets.
  • Bake in the preheated oven until lightly browned, about 20 minutes.
