Chinese Beef and Broccoli Noodles image

Everybody's favourite Chinese Beef and Broccoli - with noodles! I make this in a large skillet because it serves 4 so there's too much for a wok. If you scale it down to serve 2 (use scaler by hovering over Servings), you can make this in a wok. See notes for how to make this with CHARLIE, my all purpose stir fry sauce. Recipe VIDEO below.

350 - 400 g / 12 - 14 oz beef rump or fillet (, thinly sliced (or other quick cooking cut of beef))
1 1/2 tbsp peanut or vegetable oil
2 garlic cloves (, finely chopped)
1/2 onion (, finely sliced)
1 large head broccoli (, broken into small florets)
400 - 450g / 14 - 15 oz egg noodles ((hokkien, lo mein, singapore - from the fridge) (Note 1))
1/2 cup / 125 ml water
1 tbsp cornflour / cornstarch
2 tbsp dark soy sauce ((Note 2))
1 1/2 tbsp light soy sauce ((Note 2))
1 1/2 tbsp Chinese cooking wine/Shoasing wine ((Note 3))
1 tsp white sugar ((omit if using Mirin))
1/8 tsp Chinese five spice powder ((not critical))
1/2 tsp sesame oil (not critical)
1/4 tsp pepper (white or black)
Sesame seeds
Chopped shallots / green onions / scallions

Steps:

  • Sauce: Place water and cornflour in a bowl, mix. Then add remaining ingredients and mix.
  • Beef: Place in a bowl and add 1 1/2 tbsp Sauce. Mix.
  • Broccoli & Noodles: Bring a large pot of water to the boil. Add broccoli, cook for 1 minute. Add noodles then after 15 seconds, use a wooden spoon to separate the noodles then immediately drain (don't have the noodles in the water for more than 1 minute).

1 tbsp soy sauce
1 tbsp dry sherry
2 tsp sesame oil
1 fat garlic clove , crushed
1 tsp finely chopped fresh root ginger (or fresh ginger paste in a jar)
200g lean sirloin steak , thinly sliced across the grain
1 tbsp sesame seeds
1 tbsp sunflower oil
1 large carrot , cut into matchsticks
100g mangetout , halved lengthways
140g mushrooms , sliced
3 tbsp hoisin sauce
Chinese noodles , to serve

Steps:

  • Mix together the soy sauce, sherry, sesame oil, garlic and ginger in a shallow dish. Add the steak and leave to marinate for about 20 minutes (or longer, if you have time).
  • Heat a large heavy-based frying pan or wok, add the sesame seeds and toast over a high heat, stirring, for a few minutes until golden. Tip on to a plate.
  • When ready to cook, heat the sunflower oil in a large frying pan or wok until hot. Add the steak with the marinade and stir fry for 3-4 minutes over a high heat until lightly browned. Remove, using a slotted spoon, on to a plate, leaving the juices in the pan.
  • Toss the carrots in the pan and stir fry for a few minutes, then add the mangetout and cook for a further 2 minutes.
  • Return the steak to the pan, add the mushrooms and toss everything together. Add the hoisin sauce and stir fry for a final minute. Sprinkle with the toasted sesame seeds and serve immediately.

2 tbsp vegetable oil
500g (1 lb) beef mince
1 onion, sliced
2 garlic cloves, finely chopped
2 cups shredded Chinese cabbage (also known Napa or wombok cabbage)
1 cup shredded carrot
250g (9 oz) fresh Chinese egg noodles
2 tbsp oyster sauce
2 tbsp hoisin sauce
1 tsp dark sweet soy sauce
2 tsp white vinegar
¼ cup finely sliced spring onion (scallions)
sesame seeds, to serve

Steps:

  • Step 1.Heat the vegetable oil in a wok or large frying pan over high heat. Add the beef mince and spread it out in pan. Leave the beef to sear and cook for at least 5-6 minutes or until the meat juices evaporate and the beef starts to char. Now use a spatula to lift the charred beef from the pan and toss it around.
  • Step 2.Now add the onion and stir-fry for another minute. Add the garlic and stir-fry for another 20 seconds. Then add the cabbage and stir-fry for another 20 seconds. Then toss through the carrot until it's just wilted. Turn the heat off and set aside.
  • Step 3.Cook the noodles in boiling water for a minute or until just al dente. Drain and add to the pan with the beef. Turn the heat back to high and add the oyster sauce, hoisin sauce, dark sweet soy sauce and vinegar. Toss until well combined. Scatter over the spring onion and sesame seeds before serving.

Steps:

  • In a large skillet over medium-high heat, heat 1/4 cup oil. Toss beef with cornstarch. Cook until crispy, 2 minutes per side. Transfer to a plate and drain fat.
  • Add remaining teaspoon oil to skillet. Add garlic and ginger and cook until fragrant, 1 minute, then add hoisin sauce, soy sauce, brown sugar, and water. Bring to a simmer and let thicken, 4 to 5 minutes, then add broccoli. Cover and cook until tender, about 3 minutes, then return beef to skillet and stir until completely coated in sauce.
  • Garnish with sesame seeds and serve over rice.

1 pound ground beef
1 medium onion (sliced)

1 cup bok choy (shredded)

2 tablespoon oyster sauce
2 tablespoon hoisin sauce
1 tablespoon dark soy sauce
2 tablespoon sesame oil
2 teaspoon rice vinegar
3 green onions (chopped)
2 tablespoon sesame seeds
1 large carrot (shredded or sliced thin)

Steps:

  • Cook Noodles: Cook the ramen noodles according to package instructions until al dente. Drain and set aside.
  • Cook Beef: Heat the olive oil in a large wok or skillet over high heat. Add the ground beef and spread it out in the pan. Let it cook without touching it for at least 5 minutes or until all the meat juice has evaporated and there's a char on the bottom. Using a spatula flip the charred beef and toss it around.
  • Add veggies: Add the onion to the wok and cook for another minute, then add the garlic and cook for another 30 seconds or until aromatic. Add the bok choy and carrot and cook for another minute or until the carrot wilts just a bit. Turn off the heat.
  • Stir in noodles and sauces: Add the noodles to the wok then add the oyster sauce, hoisin sauce, dark soy sauce, vinegar and sesame oil to the wok and toss until everything is well combined.
  • Garnish and serve: Garnish with green onions, sesame seeds and serve.

1 1/4 lb beef flank steak cut into slices
2 Tbsp soy sauce
3 clove garlic chopped
1 Tbsp grated ginger root``
1/3 c hoisin sauce
1/3 c water
1 Tbsp cornstarch
1/2 tsp crushed red pepper flakes
2 Tbsp peanut or vegetable oil
2 c small broccoli florets
1/1/2 c baby carrots sliced lengthwise
1 bag(s) frozen asian stir fry vegetables
2 Tbsp water
1/2 c cashew halves, if desired

Steps:

  • 1. How to Make it: In medium bowl, mix beef, soy sauce, garlic and ginger root; set aside. In small bowl, mix sauce ingredients with wire whisk until well blended; set aside.
  • 2. In wok or 12-inch skillet, heat 1 tablespoon of the oil over high heat about 1 minute. Add beef mixture, breaking up clumps of beef with wooden spoon; cook 1 minute without stirring. Stir-fry 1 to 2 minutes or until beef is browned around edges. Transfer beef mixture to clean bowl.
  • 3. To empty wok, add remaining 1 tablespoon oil; heat over high heat about 1 minute. Add broccoli and carrots; cook 2 minutes, and bag of vegetables; stirring frequently. Add 2 tablespoons water; cover and cook 2 to 4 minutes, stirring occasionally, until broccoli and carrots are crisp-tender. Return beef mixture to wok. Mix sauce mixture again with wire whisk to recombine; pour into wok. Stir to coat mixture with sauce. Cook 1 to 2 minutes, stirring occasionally, until sauce is thickened. Sprinkle each serving with cashews. Expert Tips To make cutting the beef easier, put the uncooked flank steak in the freezer for 15 minutes. Cutting with the grain, cut the steak into 3 long strips, then cut each strip across the grain into 1/8-inch-thick slices. Serve the stir-fry mixture over hot cooked rice or Asian noodles.

3 Tbsp hosiin sauce
1 lime, juiced
1 1/2 tsp asian chili-garlic sauce
1 tsp cornstarch
1 red bell pepper, thinly sliced
1 onion, thinly sliced
1 Tbsp fresh ginger, peeled and minced

Steps:

  • 1. Bring a large pot of water to a boil. Add the broccoli and cook until crisp-tender, 2 minutes. Remove with a slotted spoon to a plate. Return the water to a boil and cook the noodles according to package directions.
  • 2. Meanwhile, cut the steak in half lengthwise. Cut crosswise into 1/4 inch slices. Mix the hoisin sauce, lime juice, chili-garlic paste, and cornstarch in a small bowl until smooth.
  • 3. Spray a large non-stick skillet (or wok) with nonstick spray and set over a medium-high heat. Add one-third of the beef and cook, stirring constantly, just until browned, 1-2 minutes. Transfer to a plate and repeat with the remaining beef.
  • 4. Add the bell pepper and onion to the skillet. Reduce the heat and cook, stirring constantly, until crisp-tender, 5 minutes.
