STIR-FRIED BEEF WITH HOISIN SAUCE



Stir-fried beef with hoisin sauce image

1 tbsp soy sauce
1 tbsp dry sherry
2 tsp sesame oil
1 fat garlic clove , crushed
1 tsp finely chopped fresh root ginger (or fresh ginger paste in a jar)
200g lean sirloin steak , thinly sliced across the grain
1 tbsp sesame seeds
1 tbsp sunflower oil
1 large carrot , cut into matchsticks
100g mangetout , halved lengthways
140g mushrooms , sliced
3 tbsp hoisin sauce
Chinese noodles , to serve

Steps:

  • Mix together the soy sauce, sherry, sesame oil, garlic and ginger in a shallow dish. Add the steak and leave to marinate for about 20 minutes (or longer, if you have time).
  • Heat a large heavy-based frying pan or wok, add the sesame seeds and toast over a high heat, stirring, for a few minutes until golden. Tip on to a plate.
  • When ready to cook, heat the sunflower oil in a large frying pan or wok until hot. Add the steak with the marinade and stir fry for 3-4 minutes over a high heat until lightly browned. Remove, using a slotted spoon, on to a plate, leaving the juices in the pan.
  • Toss the carrots in the pan and stir fry for a few minutes, then add the mangetout and cook for a further 2 minutes.
  • Return the steak to the pan, add the mushrooms and toss everything together. Add the hoisin sauce and stir fry for a final minute. Sprinkle with the toasted sesame seeds and serve immediately.

4 tbsp hoisin sauce
1 tbsp sesame oil+ 1 tbsp
2 tbsp soy sauce + 2 tbsp
1 tbsp rice vinegar
2 tbsp sugar or liquid sweetener
1 cup vegetable broth
3-4 cloves garlic, minced
1-2 tsp fresh ginger, minced
1 tbsp corn starch (make sure to mix with a small amount of water before adding to sauce)
approx. 1 cup seitan, chopped into 1 inch pieces or tofu
3-4 green onions, chopped
1 red or yellow bell pepper
1 cup of broccoli, chopped
1-2 carrots slice lengthwise
1/2 cup of snap peas
1 small yellow squash, chopped
1 cup of mushrooms, chopped

Steps:

  • In a small saucepan, whisk together hoisin sauce, 1 tbsp sesame oil, 2 tbsp soy sauce, rice vinegar, sugar, vegetable broth, garlic, ginger and corn starch over medium heat. Allow to simmer until mixture thickens, about 5-7 minutes, then remove from heat and set aside. In a large wok or skillet, stir-fry seitan or tofu in 1 tbsp sesame oil and 2 tbsp soy sauce until lightly browned, about 3-5 minutes. Add all other vegetables, except mushrooms and stir-fry another 5 minutes. Add sauce mixture to the stir-fry and combine well, allowing to cook another 10-15 minutes, until broccoli is done cooking (takes longest to cook). 5 mins before completing add in mushrooms

1 pound boneless pork chops, cut into stir-fry strips
1 tablespoon hoisin sauce
1 tablespoon cornstarch

Steps:

  • Mix the sliced pork, 1 tablespoon hoisin sauce, and 1 tablespoon cornstarch together in a bowl. Set aside. Combine the remaining 2 tablespoons hoisin sauce, chicken broth, and 1 tablespoon cornstarch with rice vinegar, sugar, and cayenne pepper in small bowl. Set aside.
  • Heat the sesame oil in a skillet over medium-high heat. Stir in the pork; cook and stir until the pork begins to brown, about 5 minutes. Add the garlic and ginger; cook and stir until fragrant. Mix in the carrot, bell pepper, and water chestnuts, cooking until the carrots are tender. Stir in the reserved hoisin sauce mixture and continue cooking and stirring until the flavors are combined, about 3 minutes.

1 tbsp groundnut oil
2 skinless duck breasts (250g), sliced
4 pak choi , quartered
1 onion , sliced
1 carrot , peeled, halved lengthways and finely sliced
1 celery stick, finely sliced
2 tsp sherry vinegar or rice vinegar
pinch of Chinese five spice
3 tbsp hoisin sauce
1 tbsp cornflour
3 spring onions , shredded
400g cooked rice or egg noodles
1 lime , cut into wedges

Steps:

  • Heat a wok or a large frying pan over a high heat. Drizzle in 1/2 tbsp of the oil and stir-fry the duck for 5 mins until cooked through and golden. Set aside on a plate. Heat the remaining 1/2 tbsp oil and add the pak choi, onion, carrot and celery. Fry for another 5 mins until golden but still crunchy.
  • Mix the vinegar, five spice, hoisin, 6 tbsp water, and cornflour together in a small bowl. Add to the wok with the veg along with the cooked duck. Stir well and simmer for 2-3 mins until the sauce thickens and coats the veg. Scatter with the spring onions and serve with noodles or rice and the lemon wedges for squeezing over.

4 -6 ounces snow peas
0.5 (4 ounce) can sliced water chestnuts, cut into quarters
1 lb chicken breast, cut into bite-sized pieces
1/2 teaspoon salt
1 tablespoon cornstarch
2 tablespoons vegetable oil
4 tablespoons hoisin sauce
2 teaspoons sugar

Steps:

  • Soak snow peas in very cold water for a few minutes only if they are not crisp; trim and string them; blot peas and water chestnuts dry with a clean paper towel; set aside.
  • Sprinkle chicken pieces with salt and cornstarch; stir or toss to coat evenly.
  • Add vegetable oil to a large nonstick skillet or wok over medium-high heat; heat until oil is almost smoking; add chicken to skillet and sauté 2 minutes or until the chicken is just barely done; add snow peas, water chestnuts, hoisin sauce, and sugar to skillet; sauté 1-2 minutes more until chicken and veggies are evenly coated with sauce; serve with rice or noodles.

This is another of the recipes I made on my Asian night, I also made garlic, ginger, green onion chicken, which I will be posting at a later date. As I stated on my last post, because I made a few dishes my ingredients were less than listed below, I think I have guessed right on the amounts to feed 4 as a main meal.

1 teaspoon sesame oil
black pepper
6 green onions, sliced thinly
2 red chilies, finely chopped
2 garlic cloves, crushed
2 teaspoons fresh ginger, grated
80 ml chinese rice wine
60 ml soy sauce
800 g beef, strips
1 tablespoon peanut oil
1 brown onion, sliced thinly
1 red capsicum, sliced thinly
100 g fresh shiitake mushrooms, sliced thinly
500 g choy sum, halved
60 ml water
80 ml hoisin sauce (I use blue dragon brand.)

Steps:

  • Combine sesame oil, pepper, 3 sliced green onions, chillies, garlic, ginger, half the wine and half the soy sauce in a large bowl or storage container, add beef strips and toss to coat. Marinade several hours or overnight.
  • Heat peanut oil in a pan or wok, add beef mixture in batches and cook until browned, add onion and capsicum and stir-fry a couple of minutes.
  • Add mushrooms, choy sum stalks, water, hoisin and the remaining wine and soy sauce, stir-fry about 5 minutes or until vegetables are just tender.
  • Add choy sum leaves, stir-fry until leaves just wilt.
  • Divide among serving bowls and top with remaining green onion.
  • I served as is, to make a low carb meal, but if you want to add the carbs it is great paired with steamed Jasmine rice.

  • Heat a 9.5" fry pan over medium-high heat and add sesame oil.
  • Add the chicken and cook for 5-6 minutes, or until the chicken begins to brown.
  • Remove chicken and set aside in a separate bowl.
  • Add the broccoli and bell peppers, and cook for 2-3 minutes.
  • Add the chicken, cashews and sauce. Stir together and allow sauce to thicken.
  • Remove from heat and serve over brown rice.

1 cup carrot
2 garlic cloves, finely chopped
1 1/2 cups sugar snap peas
1/2 cup mixed mushrooms
1/2 lb shrimp
1 teaspoon flour
3 tablespoons hoisin sauce
2 tablespoons soy sauce

Steps:

  • In a wok or large skillet, heat your oil. Add the carrots and garlic. Cook over medium heat for about 3 minutes.
  • Add the mushrooms and snap peas. Cook until everything is tender.
  • Remove the veggies from the pan. Add the shrimp. Allow to cook on one side, then flip.
  • Sprinkle the flour over the shrimp and stir well until the flour lightly coats the shrimp.
  • Return the veggies to the pan.

1 3/4 lbs chicken breasts, defatted
1/2 cup soy sauce
3 tablespoons dry sherry
3 tablespoons cornstarch
1/4 cup vegetable oil
1/4 cup scallion, green and white parts, sliced diagonally
2 (16 ounce) bags stir fry vegetables
1 lb whole mushroom
1/4 cup fresh ginger, peeled and minced
1/2 cup garlic, minced
4 whole green bell peppers, seeded and julienned
1/2 cup hoisin sauce
1/2 cup dry sherry
2 teaspoons fresh ground black pepper
2 1/2 tablespoons sesame oil

Steps:

  • In a mixing bowl, combine soy sauce, sherry and cornstarch. Add the chicken and toss until coated. Let chicken stand in marinade for at least 10 minutes (while getting ingredients in bowls).
  • In a sprayed+oiled wok or saute pan, heat the vegetable oil over high heat until just smoking.
  • Add the scallions and ginger, and stir-fry for about 30 seconds.
  • Add the chicken, reserving any remaining marinade, and stir-fry for about 5 minutes, until the chicken is just done.
  • Add the vegetables+mushrooms, green peppers and stir-fry for another minute.
  • Add the hoisin sauce, sherry, salt and black pepper, and combine.
  • Add sesame oil to the marinade remaining in the bowl, stir it, and add to the wok.
  • Toss to blend well and BOIL, then simmer until slightly thickened. TASTE? Remove from the heat, drizzle with the sesame oil .
