AUNT LIBBY'S SOUTHERN MEATLOAF
This my 86-year-old Aunt Libby's home-made meatloaf recipe. I finally had her write it down for me last year. You can be sure no one will tell you this meatloaf is dry!

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Butter a 9x5-inch loaf pan.
- Mix beef, onion, 1 cup ketchup, bread crumbs, eggs, salt, and pepper together in a bowl. Press beef mixture into a loaf in the prepared loaf pan.
- Mix 1 1/2 cups ketchup, water, vinegar, brown sugar, mustard, and Worcestershire sauce together in a saucepan; cook and stir over medium heat until sauce is smooth and warm, about 10 minutes. Pour 1/3 the sauce over meatloaf.
- Bake in the preheated oven, basting every 25 minutes with more sauce, until meatloaf is cooked through, 1 to 1 1/2 hours. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Cool in the pan for 10 minutes before slicing.

Steps:
- I start with a big bowl and spread out the ground beef around the bottom and sides of the bowl. Then I add the dry seasonings and the worcestershire and mix by hand literally getting my hands on the meat. Next I add the chopped vegetables and olives mixing that by hand as well. I beat the egg and add that in; then add the oatmeal. I mix by hand 'til all the ingredients are blended.
- I add the mixed meat, seasonings, and vegetables to a greased glass loaf pan shaping it in on sides. Last I add enough ketchup to cover the top surface of the meatloaf spreading it over the top with my fingers. Then I arrange the sliced olives on the top of the ketchup for a decorative topping. Bake for an hour at 350 degrees. Cool, pour off excess fat and you're ready to serve your meat before it has time to loaf.

VEGETABLE MEAT LOAF
I'm not big on leftovers, so I've pared down my recipes to serve two. This meat loaf is simple and quick to prepare, plus it helps you eat your veggies. It's great served with cheddar-topped baked potatoes. -Judi Brinegar, Liberty, North Carolina

AUNT MILLIE'S MEATLOAF
This is the simplest meatloaf recipe that made me a meatloaf lover! There is nothing fancy in the mix, but the flavor is wonderful. The mix will seem so wet that you will think you will not be able to form it, but you will. It also makes good meatballs, just add a little oregano and garlic and bake them at 350°F for about 15 minutes. Hope you like it as much as I do! We call it Aunt Millie's but Aunt Honey swears it's hers (so we give them both credit)!

AUNT LOIS'S MEATLOAF
This is hands down my kids favorite dinner. I serve it with fluffy mashed potatoes. This recipe came from my Aunt Lois and she was quite a cook!! If you can't find meatloaf mix just substitute all ground beef. The sauce makes a fabulous gravy for the potatoes but I would recommend using a gravy separator as it tends to be a...
