HONEY GRILLED SHRIMP



Honey Grilled Shrimp image

Easy and delicious! Onions, peppers, and mushrooms are perfect when alternated with shrimp on the skewers. Just cut into bite-sized pieces and add them to the marinade with the shrimp. Serve with rice and a salad.

½ teaspoon garlic powder
¼ tablespoon ground black pepper
⅓ cup Worcestershire sauce
2 tablespoons dry white wine
2 tablespoons Italian-style salad dressing
1 pound large shrimp, peeled and deveined with tails attached
¼ cup honey
¼ cup butter, melted
2 tablespoons Worcestershire sauce

Steps:

  • In a large bowl, mix together garlic powder, black pepper, 1/3 cup Worcestershire sauce, wine, and salad dressing; add shrimp, and toss to coat. Cover, and marinate in the refrigerator for 1 hour.
  • Preheat grill for high heat. Thread shrimp onto skewers, piercing once near the tail and once near the head. Discard marinade.
  • In a small bowl, stir together honey, melted butter, and remaining 2 tablespoons Worcestershire sauce. Set aside for basting.
  • Lightly oil grill grate. Grill shrimp for 2 to 3 minutes per side, or until opaque. Baste occasionally with the honey-butter sauce while grilling.

1/2 inch piece fresh ginger, peeled and minced
2 cloves garlic cloves, minced
1/2 teaspoon freshly ground black pepper
3 tablespoons soy sauce
3 tablespoons hoisin sauce
1 teaspoon dark Asian sesame oil
1/2 teaspoon sugar
2 tablespoons Chinese rice wine, dry sherry, or dry white wine
2 pounds extra-large shrimp (11 to 15 per pound), not shelled, but with legs removed, rinsed and patted dry
2 whole scallions, thinly sliced (optional garnish)

Steps:

  • Combine all the marinade ingredients in a large bowl. Add the shrimp and gently toss to coat with the seasonings. Refrigerate 30 to 40 minutes.
  • Prepare a charcoal grill for two-zone cooking. If using a gas grill, set one burner on high and one burner on low.
  • Brush the grate with oil and place the shrimp on their sides, about an inch apart, over the hottest part of the fire. Quickly brush them with any remaining marinade then count to 30. Turn them right away with tongs and move them away from the highest heat.
  • Finish cooking the shrimp until they turn pink and are barely firm, about 3 minutes. Do not overcook. Immediately remove to a platter and scatter with the scallions.

  • In a heavy saute pan or wok, heat oil on medium-high until barely smoking. Add shrimp and ginger and saute for about 2 minutes.
  • Add the soy sauce and lemon juice, and cook for 1 minute.
  • Add the hoisin, and saute for 1 more minute or until the shrimp are well coated and fully cooked. Serve hot over rice.

Steps:

  • Remove shells from shrimp. De-vein and rinse. Pat dry on paper towels. Mix water, cornstarch, soy sauce and hoisin sauce in a small bowl. Set aside. Heat oil in wok; add ginger and garlic. Add shrimp and stir fry until they change to a pink color (about 5 minutes). Add scallions and stir fry for 1 minute; add sauce mixture and cook for 2 minutes.

1-1/4 cups honey Dijon salad dressing
4 teaspoons prepared horseradish
1 garlic clove, minced
1 pound uncooked large shrimp, peeled and deveined

Steps:

  • Cut bacon strips in half widthwise. In a large skillet, cook bacon over medium heat until partially cooked but not crisp. Remove to paper towels to drain., In a small bowl, combine the salad dressing, horseradish and garlic; set aside 3/4 cup. Brush remaining mixture over both sides of shrimp. Wrap a piece of bacon around each shrimp; thread onto four metal or soaked wooden skewers., Moisten a paper towel with cooking oil. Using long-handled tongs, lightly coat the grill rack. Grill shrimp, covered, over medium heat or broil 4 in. from the heat for 5-8 minutes or until shrimp turn pink, turning once. Serve with reserved sauce.
