Steps:
- In a large bowl, beat cream cheese, sugar, orange juice and ginger until smooth. Fold in cherries. Refrigerate, covered, at least 1 hour., Place pecans in a shallow bowl. Shape cheese mixture into two 7-in.-long logs; roll in pecans to coat evenly. Wrap logs; refrigerate at least 1 hour. Serve with crackers.

CHERRY CHEESE LOG
Cherry Cheese Log is a delicious holiday party appetizer made with cream cheese, maraschino cherries, and rolled in pecans.

Steps:
- Drain the cherries, then rinse them very well.
- Chop the cherries, rinse them again and dry them with a paper towel until the paper towel is not becoming red every time it touches them (the cherries must be very dry and well rinsed).
- In your stand mixer (or a large bowl with a hand mixer), beat the cream cheese, sugar, orange zest, and ground ginger until well combined then barely fold in the cherries.
- Scoop the cream cheese mixture onto a large 15x30 piece of plastic wrap.
- Shape the cream cheese into a log like mixture then close the plastic wrap over it and twist the edges in opposite directions until you have a tight log shape.
- Refrigerate for at least 1 hour.
- Remove the cheese from the refrigerate and unroll from the plastic wrap then roll it in the pecan pieces until well coated.

- Preheat an oven to 425 degrees F (220 degrees C).
- Whisk together the flour, white sugar, brown sugar, nutmeg, and salt in a bowl. Cut the softened butter into the flour mixture using a pastry blender until crumbly; set aside.
- Bake the pie crust in the preheated oven for 10 minutes. Remove from oven; reduce oven temperature to 350 degrees F (175 degrees C).

- In a small bowl, dissolve yeast in milk. In a large bowl, combine the flour, sugar, salt, lemon zest and cardamom. Cut in butter until crumbly. Add yeast mixture and whole egg; mix well. Stir in cherries, raisins and pecans. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place for 1 hour (dough will not double in size)., Punch dough down; divide into four pieces. Roll three pieces into 15-in. ropes. Braid ropes; place on a greased baking sheet. Divide last portion of dough in half; roll each into a 15-in. rope. Twist ropes. Here's a simple to make square recipe that I sometimes make for the holidays. I have "excellent" written on the paper, so I know it's a keeper. This recipe differs slightly from the one already on 'zaar.

- Preheat oven to 350*. Lightly spray a 9" x 13" pan with cooking spray.
- Combine the cornflakes, margarine and sugar in the pan. Press down tightly with the back of a spoon.
- Sprinkle marshmallows, coconut and cherries evenly over the crust.
- Pour the sweetened condensed milk evenly over the top.
- Sprinkle the nuts over the milk, pressing into the mixture.
- Bake @ 350* for 20-25 minutes. Refrigerate before cutting.
