TRADITIONAL YORKSHIRE PUDDING

As legend has it, Yorkshire puddings were traditionally cooked in a pan of fat, at the bottom of a hearth, underneath a large piece of roasting beef. The smoky heat from the fire, along with all the other goodness dripping into the pan from the meat, must've made for quite a delicious pastry. Though limited by modern ovens, we can still come close to the original by using real rendered beef fat, without which you're just eating a popover.

4 large eggs
1 teaspoon kosher salt
⅞ cup all-purpose flour
1 cup whole milk
¾ cup melted beef fat

Steps:

  • Whisk eggs and salt together in a bowl until light and frothy. Whisk in flour and milk until smooth and lump-free; batter will be thin and barely coat the back of a spoon.
  • Transfer batter to a 4-cup measuring cup and chill in the refrigerator, at least 15 minutes.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Fill each cup of a 12-cup nonstick muffin tin with 1 tablespoon melted beef fat; use your finger to grease the sides and tops of the cups. Place the muffin tin on a baking sheet.
  • Heat in the preheated oven on the middle rack until fat is smoking hot, 10 to 15 minutes.
  • Remove from the oven and fill each muffin cup halfway full with batter.
  • Bake pudding in the preheated oven until browned and fully puffed, about 25 minutes more. Remove from the oven and immediately poke a hole in the center of each to release steam. Serve hot, warm, or room-temperature.

1 ½ cups all-purpose flour
¾ teaspoon salt
¾ cup milk, room temperature
3 eggs, room temperature
¾ cup water
½ cup beef drippings

Steps:

  • Mix flour and salt together until blended. Make a well in the flour, add the milk, and whisk until consistent. Beat the eggs into the batter. Add water and beat again until the mixture is light and frothy. Set aside for an hour (or, if it's the day before, cover in the fridge overnight).
  • If the batter has been refrigerated, allow it to come up to room temperature before using. When the roast beef is ready to come out of the oven, ready the mixture.
  • Preheat oven to 400 degrees F (205 degrees C).
  • Pour off drippings from roast beef and measure out desired amount (about 1/2 cup should do). Pour drippings into a 9x12 inch baking dish and place into the oven until the drippings sizzle. Pour the batter over the drippings and bake for 30 minutes (or until the sides have risen and are golden brown). Cut into eight portions and serve immediately.

2 cups all-purpose flour
4 large eggs
3 cups whole milk
1 1/2 teaspoons coarse salt
1/8 teaspoon freshly ground pepper
4 tablespoons pan drippings, reserved from Standing Rib Roast with Roasted Potatoes

Steps:

  • Whisk flour, eggs, 1 1/2 cups milk, salt, and pepper in a medium bowl. Let stand for 30 minutes.
  • Preheat oven to 400 degrees. Whisk remaining 1 1/2 cups milk into batter. (The batter should resemble heavy cream.) Pour 1 teaspoon drippings into each popover cup (1/2 teaspoon if using muffin tins), then place in oven for 2 minutes. Carefully pour batter into cups, filling each 1/3 full. Bake until puffed and golden brown, about 30 minutes. Serve immediately.

4 large eggs
1 cup ( 250 mL ) whole milk
1 cup ( 250 mL ) all purpose flour
1 tsp ( 5 mL ) salt
¼ cup ( 60 mL ) vegetable oil or beef drippings

Steps:

  • Set a rack in upper third of oven and preheat oven to 425°F (220°C).
  • In a medium bowl, whisk together eggs, milk, flour and salt until smooth. Set aside.
  • Place 1 tsp (5 mL) oil or beef drippings into each cup of a 12-cup muffin pan. Transfer pan to oven and heat until oil is smoking, about 2 minutes.
  • Remove pan from oven and quickly pour batter into cups, filling ⅔ full. Bake until puddings have risen and are golden brown, about 15 minutes. Serve immediately.

Beef drippings or vegetable oil, for the muffin pan

Steps:

  • Preheat the oven to 450 degrees F.
  • To make the batter, combine the half-and-half and eggs in a bowl and whisk until totally combined. Then throw the flour and salt into a sifter and sift them straight into the bowl. Whisk until it's nice and smooth.
  • Pour a small amount of beef drippings (about 1/2 teaspoon or so) into each cup of a standard muffin pan and place the pan in the hot oven until just before the drippings begin to smoke, a couple of minutes. Carefully remove the pan from the oven and immediately fill the muffin cups about one-half to three-quarters full with the batter. Bake until the puddings have popped about as much as they can pop, 13 to 14 minutes.

Well, this year for our holiday dinner, I finally did it! After a couple of previous experimental attempts at making Yorkshire Pudding (usually on a holiday and always with guests present), I finally got it right! Light and crispy and poofy huge. The biggest contribution to my success this year seems to be the Wondra flour, but using pan drippings and not taking shortcuts by using crisco and beef broth also yielded good results for me. I think cast iron muffin pans would work fabulous, but I'll have to wait to try that experiment until I add to my cast iron assortment.

3 eggs, at room temperature
1 1/4 cups whole milk, at room temperature (don't use 2% or skim milk)
1/2 teaspoon salt
1 cup Wondra Flour or 1 cup pastry flour
hot pan dripping (from beef roast)

Steps:

  • In a medium mixing bowl, whisk eggs and milk together.
  • In a separate bowl, combine flour and salt, then whisk into egg/milk mixture, mix until combined and smooth, cover and refrigerate for at least 4 hours, or overnight.
  • After roast is done cooking and out of the oven, increase oven temperature to 425°F Spoon a teaspoonful of beef drippings into 12 large muffin tins and place pan into oven and heat until nearly smoking, about 5 minutes.
  • Remove bowl of batter from refrigerator and quickly whisk again, then fill each muffin tin approximately 2/3 full of cold batter.
  • Bake in the enter of the oven, or on the top shelf, for 25-30 minutes or until well risen and crispy golden brown.
  • Do not open the oven door during the first 20 minutes of the cooking time.
  • Serve immediately.

140g plain flour (this is about 200ml/7fl oz)
4 eggs (200ml/7fl oz)
200ml milk
sunflower oil , for cooking

Steps:

  • Heat oven to 230C/fan 210C/gas 8.
  • Drizzle a little sunflower oil evenly into two 4-hole Yorkshire pudding tins or two 12-hole non-stick muffin tins and place in the oven to heat through.
  • To make the batter, tip 140g plain flour into a bowl and beat in 4 eggs until smooth.
  • Gradually add 200ml milk and carry on beating until the mix is completely lump-free. Season with salt and pepper.
  • Pour the batter into a jug, then remove the hot tins from the oven. Carefully and evenly pour the batter into the holes.
  • Place the tins back in the oven and leave undisturbed for 20-25 mins until the puddings have puffed up and browned.
  • Serve immediately. You can now cool them and freeze for up to 1 month.

1 cup milk
3 tablespoons melted butter
3 eggs
1 cup all-purpose flour
1/2 teaspoon salt
Pam cooking spray

Steps:

  • Pre-heat oven to 375.
  • Heat a clean, ungreased, empty muffin-pan in the oven while you mix together the milk, melted butter, eggs, flour, and salt.
  • This dough should be thin/runny.
  • When ingredients are mixed together, remove your muffin-pan from the oven, and spray each cup with Pam cooking spray (This step removes the messy'beef-fat method' used in traditional Yorkshire Puddings, and your Yorkshire Puddings will not spill the beef fat over into your oven as they puff up).
  • Once the pan is sprayed, fill each muffin-cup only 2/3 full of the Yorkshire pudding mixture, (they REALLY puff up).
  • Bake in your pre-heated oven for 40 minutes or until golden in colour and puffed up. (avoid peeking before the time is up).
  • Serve while still warm, best served with beef gravy.
  • These form a hollow centre as they bake.
  • These shrink as they cool, so enjoy them while still warm.

1 teaspoon salt
6 large eggs
2 1/2 cups milk
Pan drippings from Prime Rib

Steps:

  • Sift together flour and salt; set aside. In a medium bowl, whisk together eggs and milk. Add flour mixture, and whisk until combined. Cover with plastic; chill in the refrigerator for at least 4 hours, or overnight.
  • When prime rib has finished cooking, raise oven temperature to 425 degrees. After roasting pan has been deglazed, pour 1/4 cup reserved pan drippings back into pan. Heat pan and drippings on top of the stove until very hot, about 5 minutes. Remove batter from refrigerator, and shake or whisk well; quickly pour into hot roasting pan.
  • Bake until crisp and golden, 20 to 30 minutes. Serve warm with prime rib.

Beef drippings from roast beef (about 1/4 cup)

Steps:

  • Preheat oven to hot (450ºF).
  • Beat the eggs with the milk. Sift together the flour and salt and stir this into the egg mixture. Beat the batter until well blended.
  • Discard most of the fat from the pan in which the beef was roasted. Heat an 11x7-inch baking pan or ring mold and pour into it one-quarter cup of the beef drippings. Pour in the pudding mixture and bake ten minutes. Reduce the oven temperature to moderate (350ºF) and bake fifteen to twenty minutes longer, or until puffy and delicately browned. Cut into squares and serve immediately with roast beef.
