2/3 cup butter, softened
2 cups sugar
1/2 cup water
2 large eggs
2 teaspoons vanilla extract
1-1/2 cups all-purpose flour
3/4 cup baking cocoa
1/2 teaspoon baking soda
1/4 teaspoon salt
2 cups semisweet chocolate chips
1/2 cup chopped pecans
1 jar (7 ounces) marshmallow creme
GLAZE:
3/4 cup confectioners' sugar
2 tablespoons baking cocoa
2 tablespoons butter, melted
2 tablespoons milk

Steps:

  • In a bowl, cream butter and sugar. Add water, eggs and vanilla; mix well. Combine the dry ingredients; gradually add to creamed mixture. Stir in chocolate chips and pecans. Spread into a greased 13x9-in. baking pan. Bake at 350° for 35-40 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack for 5-10 minutes. Place marshmallow creme in a microwave-safe bowl. Microwave on high for 15-20 seconds or until warm; spread over warm brownies. Cool completely on a wire rack. For glaze, combine confectioners' sugar, cocoa and butter in a small bowl; stir in enough milk to achieve drizzling consistency. With the tip of a spoon, use glaze to form irregular shapes resembling Holstein spots. Cut into bars.

2 ½ sticks unsalted butter, plus more, softened, for greasing
8 oz good-quality semisweet chocolate, or bittersweet chocolate, 60-70% cacao, roughly chopped
¾ cup unsweetened dutch process cocoa powder, divided
1 tablespoon espresso powder
2 cups granulated sugar
½ cup dark brown sugar, packed
2 teaspoons vanilla extract
2 teaspoons kosher salt
6 large eggs
1 cup all-purpose flour
flaky sea salt, for sprinkling

Steps:

  • Grease a 9x13-inch (23x33-cm) dark metal pan with softened butter, then line with parchment paper, leaving overhang on all sides. Grease the parchment with softened butter.
  • Combine the chopped chocolate, ¼ cup (30 g) of cocoa powder, and espresso powder in a heatproof liquid measuring cup or medium bowl and set aside.
  • Add the butter to a small saucepan over medium heat and cook until the butter just comes to a vigorous simmer, about 5 minutes, swirling the pan occasionally. Immediately pour the hot butter over the chocolate mixture and let sit for 2 minutes. Whisk until the chocolate is completely smooth and melted, then set aside.
  • Combine the granulated sugar, brown sugar, vanilla extract, salt, and eggs in a large bowl. Beat with an electric hand mixer on high speed until light and fluffy, about 10 minutes. It will be similar to the texture of very thick pancake batter.
  • With the mixer on, pour in the slightly cooled chocolate and butter mixture and blend until smooth.
  • Position a rack in the middle of the oven and preheat to 350°F (180°C).
  • Sift in the flour and remaining cocoa powder and use a rubber spatula to gently fold until just combined.
  • Pour the batter into the prepared baking pan and smooth the top with a spatula. Bake until lightly puffed on top, about 20 minutes.
  • Remove the baking pan from the oven using oven mitts or kitchen towels, then lightly drop the pan on a flat surface 1-2 times until the brownies deflate slightly. Sprinkle with flaky sea salt.
  • Return the pan to the oven and bake until a wooden skewer inserted into the center of the brownies comes out fudgy but the edges look cooked through, about 20 minutes more. The center of the brownies will seem under-baked, but the brownies will continue to set as they cool.
  • Set the brownies on a cooling rack and cool completely in the pan.
  • Use the parchment paper to lift the cooled brownies out of the pan. Cut into 24 bars and serve immediately.

The best recipe I have for brownies comes from a friend who got it from a magazine article about Katharine Hepburn. It is, apparently, her family's.

1 stick (8 tablespoons) butter
2 squares unsweetened chocolate
1 cup sugar
2 eggs
1/2 teaspoon vanilla
1/4 cup all-purpose flour
1/4 teaspoon salt
1 cup chopped walnuts (optional)

Steps:

  • 1. Melt together 1 stick butter and 2 squares unsweetened chocolate and take the saucepan off the heat.
  • 2. Stir in 1 cup sugar, add 2 eggs and 1/2 teaspoon vanilla, and beat the mixture well.
  • 3. Stir in 1/4 cup all-purpose flour and 1/4 teaspoon salt. (In the original recipe, 1 cup chopped walnuts is added here as well.)
  • 4. Bake the brownies in a buttered and floured 8-inch-square pan at 325°F for about 40 minutes.
  • You can cut these brownies into squares, once they have cooled, and eat them out of the pan, but it is so much nicer to pile them on a fancy plate, from which people are going to eat them with their hands anyway. If you want to smarten up your act you can put a square of brownie on a plate with a little blob of créme fraîche and a scattering of shaved chocolate.

1⅓ cups (300g) unsalted butter, plus extra for greasing
10½ oz. (300g) dark chocolate
5 large eggs
1½ cups plus 1 Tbsp. (335g) dark brown sugar
1 tsp. instant coffee mixed with 2 tsp. hot water
1 cup plus 3 Tbsp. (145g) all-purpose flour, sifted
½ cup (35g) cocoa powder, sifted
½ tsp. salt
1 tsp. all-purpose flour
1 cup (180g) dark chocolate chips
1⅓ cups (240g) chopped mixed nuts or hazelnuts
2 9-oz (250g) jars dulce de leche
½ tsp. salt
12¾ oz. (360g) full-fat cream cheese
½ cup plus 2 Tbsp. (120g) granulated sugar
2 large eggs
1¼ tsp. almond extract
Finely grated zest of 1 orange
1 Tbsp. all-purpose flour
Cocoa powder, for dusting

Steps:

  • Put the butter and chocolate in a small pot and melt gently, stirring occasionally until the mixture is liquid. Set aside to cool.
  • Line the bottom and sides of a 9 x 13-inch/23 x 33cm baking pan with some parchment paper so that it comes ½ inch/1cm above the top of the pan, and lightly grease.
  • Preheat the oven to 350°F.
  • Combine the eggs, brown sugar, and cooled coffee in a large mixing bowl (or the bowl of a stand mixer) and whisk until the mixture is light, thick, and fluffy. This should take 5 minutes with electric beaters. (Adding the coffee really enhances the flavor of the cocoa and you won't even be able to taste the coffee itself.)
  • Pour in the cooled melted chocolate and whisk until the mixture no longer has any streaks in it. Then add the sifted flour, cocoa, and salt and mix until you have a glossy batter.
  • Mix the teaspoon of flour with the chocolate chips in a bowl before mixing them into the batter until they're well dispersed-this trick will prevent them from sinking to the bottom when you bake the brownies. Pour the mixture into the prepared pan and level off the top. Bake for 25 minutes.
  • While it is baking, toast the nuts in a large nonstick pan, stirring until they are a deep golden brown. Put the dulce de leche in a bowl along with the toasted nuts and the salt, mix, and set aside.
  • As soon as the brownies are baked, take them out of the oven and let cool completely in the pan. Spread the sticky nut mixture over the top and pop the whole thing in the freezer for 30 minutes.
  • Adjust the oven to 325°F.
  • Make the cheesecake top by mixing the cream cheese, granulated sugar, eggs, almond extract, orange zest, and flour together really well. Spoon and spread into an even layer over the nut mixture and pop into the oven for about 50 minutes. As soon as the cheesecake is set in the center, allow to cool totally and chill in the fridge overnight. The wait will be worth it!
  • Dust with the cocoa, take out of the pan, and cut into squares. Eat, eat, eat!

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8x8 inch pan.
  • In a medium bowl, stir together the flour, cocoa, sugar and baking soda. Make a well in the center and pour in the oil, water, honey, vanilla and vinegar; mix well. Fold in chocolate chips. Spread evenly into the prepared pan.
  • Bake for 25 to 30 minutes in the preheated oven, until brownies spring back when lightly touched. Let cool in the pan for at least 10 minutes before cutting into squares.

1 tablespoon fresh parsley
1 pound top round or chuck steak, cubed
1 tablespoon freshly grated Parmesan cheese

Vegetable oil or bacon fat for frying
2 large eggs
4 anchovy fillets
Arugula or other salad leaves, for garnish

Steps:

  • Combine onion and parsley in a food processor, and pulse until very finely chopped. Add steak and process until minced.
  • Transfer mixture to a bowl and add Parmesan and black pepper to taste. Mix well and shape into 2 burgers, being careful not to over-handle or squash meat too much.
  • Place a heavy skillet over medium-high heat and add oil or bacon fat as desired. Add burgers, and sear for 1 minute on each side, then reduce heat to medium and cook to desired doneness. Transfer to two serving plates, cover and keep warm.
  • Lightly oil a clean skillet, and fry eggs to taste. Place 1 egg on each burger. Crisscross two anchovy fillets over yolk of each egg. Garnish each plate with arugula, and serve.
