AMAZING Homemade Alfredo Sauce prepared with cream, parmesan cheese, and Basil Pesto!

Steps:
- Melt butter in a skillet or saucepan over medium heat.
- Stir in garlic and cook for 20 seconds, or until fragrant.
- Whisk in the heavy cream and bring to a simmer; continue to cook for 4 to 5 minutes, or until sauce is reduced and begins to thicken.
- Set heat to LOW and whisk in the parmesan cheese.
- Whisk in the basil pesto and continue to cook over low heat until smooth and creamy.
- Season with salt and pepper; taste for seasonings and pesto, and adjust accordingly.
- If sauce is too thin, add a little more parmesan cheese.
- If sauce is too thick, whisk in more cream or water.
- Remove from heat and let stand 5 minutes.
- Serve right away or let completely cool and refrigerate.

Steps:
- Bring a large pot of water to boil and cook pasta according to box directions for al dente.
- Meanwhile, place a large pot over medium heat. Melt butter, then stir in minced garlic cloves. Cook about 1 minute or until garlic is soft and fragrant, stirring constantly.
- Slowly add the heavy cream to the saucepan, whisk until cream comes to a boil. Reduce heat and simmer about 3-5 minutes or until it starts to thicken.
- Stir in Parmesan cheese and pesto until smooth and thick. Stir in drained cooked pasta.

Steps:
- Combine basil, 3/4 cup Parmesan cheese, oil, garlic cloves and pine nuts into a food processor or blender. Pulse until blended. Refrigerate at least 1 hour.
- In large saucepan, over medium heat, combine cream cheese, remaining Parmesan, butter, garlic powder and milk, stirring constantly until smooth.
- Stir pesto into alfredo sauce and toss with cooked pasta.
- Enjoy!

PESTO ALFREDO SAUCE
Pesto or Alfredo? The summery perfection of basil in olive oil or creamy, cheesy, richness? How about both? This simple recipe came about when I didn't have enough of either sauce to coat a big pan of pasta for a potluck dinner. Its a great change from the usual pasta in marinara and, while simple enough for a family meal, is special enough for guests. Its particularly good for potlucks because you KNOW that there are going to be 3-4 pans of pasta in assorted tomato sauces already. ;)

Steps:
- Heat cream cheese, milk (or milk and cream), and garlic together in a small saucepan. Bring just barely to boiling.
- Reduce heat and simmer, stirring frequently, until cream cheese is fully melted into the milk.
- Stir in the pesto and reheat to just barely boiling again.
- Stir in Parmesan and simmer a few moments until the sauce begins to thicken.
- Remove from heat and serve over any pasta.
- Note on Pesto: Best made with a pure basil pesto rather than a basil-and-spinach pesto. Homemade or commercial is fine.
- Note on Parmesan: I freeze my homemade pesto without the cheese so I use the full 3/4 cup. If your pesto has a generous amount of cheese you will not need as much. Not that plenty of Parmesan is a bad thing. :D.
- If you toss this together with pasta, chunks of cooked chicken, and broccoli florets then spread it in a baking pan with plenty of shredded Mozzarella on top you get a terrific casserole.

- In your Always Pan, or large skillet, add olive oil over medium heat. Add shrimp in a single layer. Cook the shrimp, without moving them, until the underside is pink, 1 to 2 minutes. Flip the shrimp, and cook until fully pink and cooked through, about 2 minutes more. Transfer the shrimp to a bowl and set aside for now.
- Next, bring water to a boil (salt generously) in a large pot over medium heat. Add the pasta, cook according to package directions until al dente, tender but still slightly firm. Strain, and toss with a splash of oil. Set aside. If you are using your Always Pan, add the pasta to the steel steamer basket and careful place into the water. Cook according to package directions until aldente. When pasta has reached your desired texture, carefully remove steel steamer basket from pot and set aside.
- Meanwhile, in a large saucepan, bring 1 in. of water and broccoli to a boil. Reduce heat; cover and simmer for 4-6 minutes or until crisp-tender. Drain and set aside. If you're using the Always Pan, you can begin to steam the broccoli in the spruce steamer while the pasta is cooking. To do so, place a paper liner at the bottom of your spruce steamer. Place broccoli on top of the paper liner and rest spruce steamer on top of the pasta in the pan. Place Always Pan lip on top. Steam for 6-10 minutes or until you have reached your desired tenderness. NOTE: If you do steam the veggies on top of the pasta, be sure to check on your pasta every few minutes to ensure it's not over cooking.

- In a large pot, bring water for pasta to a boil. Once boiling, add pasta and cook according to package directions.
- Place chicken in a plastic storage bag. Add 3/4 tsp creole seasoning and 3 tbsp pesto to the bag. Seal while letting out air. Toss chicken in bag to evenly coat with seasoning and pesto.
- Preheat an indoor grill pan or outdoor grill. If using indoor, coat grill pan with a little olive oil. Grill chicken breasts about 7 to 9 minutes per side or until cooked through.
- While chicken cooks, melt butter and olive oil in a large sauce pan over medium high. Add garlic and cook about a minute. Add 1 tbsp of pesto, stir, and cook for about 30 seconds. Add flour, stir, and cook about 1 more minute. Add half and half and remaining 3/4 tsp creole seasoning. Simmer over medium heat for about 5 minutes. Add parmesan and simmer another 3 minutes or until slightly thickened. Once pasta is cooked, drain and add it to the sauce tossing to coat.
