Homemade Apple Pie Filled Poptarts image

Making homemade Pop Tart style breakfast pastries is easier than you think! Easy, delicious, and positively scrumptious! Never buy store-bought again!

9 1/2 ounces all-purpose flour, approximately 2 cups
2 teaspoon baking powder
3/4 teaspoon kosher salt
6 tablespoon shortening
3/4 cup milk
Egg wash: 1 egg mixed with 1 to 2 teaspoon water
1/4 cup hot water
1 1/2 teaspoon gelatin (unflavored)
3 1/2 cups confectioners' sugar
Candy sprinkles
2 cups diced apples
1 tablespoon lemon juice
1/4 cup sugar, depending on sweetness of apples, to taste
1 1/2 tablespoon cornstarch
1/2 teaspoon cinnamon
1/2 cup apple juice, very hot (can be boiling)

Steps:

  • In a large mixing bowl combine the flour, baking powder, and salt. Add the shortening and cut it into the flour mixture with a pastry cutter. Add the milk all at once and mix in with a spatula until it begins to come together. Lightly flour your hands and the countertop and turn the dough out onto the countertop. Knead the dough to form a ball. Divide in half and wrap each ball in plastic and chill for 1 hour.
  • In a medium saucepan over medium heat, add the apples and lemon juice. Cook for 2 minutes. Add the sugar, cinnamon, and cornstarch mixing very well. Add the very hot apple juice to the pan and stir constantly until thickened. Remove from heat and cool for at least 1 hour or until room temperature.
  • Preheat the oven to 350F, rack in the middle. Line 2 baking sheets with parchment paper.
  • Remove one ball from the fridge leaving the other to chill. On a very lightly floured surface, roll the dough into a 12×10" rectangle. Cut into 8 5×3" rectangles.
  • Place 4 rectangles about 1" apart on a baking sheet. Spoon 1-2 tablespoon of apple pie filling over 4 of the rectangles spreading until it's about 3/4" from the edges.
  • Lightly brush the edges of the dough that does not the filling on it with the egg wash. Top each with a dough rectangle. Gently press the edges to seal then using the tines of a fork to double seal. Repeat with the other dough ball to make 2 full trays.
  • Lightly brush with the egg wash mixture over the edges again. Using a toothpick, poke 4-6 holes in the top of the dough to allow for air to escape. Bake for 25 to 30 minutes or until golden brown.
  • Once the pop tarts are cooled, make the glaze. Dissolve gelatin in hot water and mix until granules are dissolved. Mix gelatin mixture with confectioners' sugar until smooth. Spread the icing on top.
  • Store in a covered container

  • Preheat oven to 375ºF. Roughly chop apples into small cubes. Place chopped apples, sugar, cinnamon, and lemon juice/zest into a medium saucepan and cook over medium-high for several minutes, until apples begin to release juices and become tender. In a small bowl, stir together cornstarch and water. Stir slurry into apple mixture and cook until sauce has thickened. Remove from heat let cool thoroughly.
  • Place one of the pie crusts on a lightly floured surface and roll into a rectangle/oblong shape. Trim the rounded borders, sparingly, to make a rectangle with four straight edges. Cut rectangle into 6 even squares/rectangles. Each pie crust will yield 3 large pop tarts, but you can make slightly smaller pop tarts and get 8 even sections in each pie crust, giving you 8 instead of 6 pop tarts altogether.
  • Place a generous spoonful of apple filling into the center of three of the cut pieces of pie dough, brush the edges with water or egg wash, then place the other halves over the side with the pie filling and press the edges together. Use the back of a fork to crimp the edges of each pop tart. Repeat with the second pie crust.
  • Place all of the prepared pop tarts onto a baking sheet lined with parchment paper. Brush with egg wash (Optional. Gives crust a golden shine), then bake in the preheated oven for 20–25 minutes, or until crust is golden brown.

  • Using a stand mixer fitted with the paddle attachment, mix together the flour, sugar, and salt for 10 to 15 seconds. Scatter the butter over the top. Mix on low speed for 1 to 1 1/2 minutes, or just until the flour is no longer bright white and holds together when you clump it. Lumps of butter the size of pecans should be visible throughout the dough.
  • Melt the butter over high heat in a medium sauce pan. Add the apples and stir until they just start to soften, about 2 or 3 minutes. Add the sugar and continue stirring for another 3 to 4 minutes or until the sugar has melted and mixed with the apples. Remove from the heat and transfer the apple mixture to a bowl. Cool for 30 minutes. Add the egg, cinnamon, salt, and flour to the apples and mix with a spatula until they are thoroughly and evenly incorporated. Cool completely before using.
