I'm really excited to show you this recipe, not only because it's one of the best beef stews ever, but also because after we enjoy this in stew form, we're doing a follow-up video using this to make some of the most incredible tacos you've ever had. If you like beef stew, and you're a fan of chili, you're going to go nuts over this. Serve with lime wedges as-is, or with warm flour tortillas, chili oil, salsa, or diced avocado next to some Spanish rice and a nice green salad.

3 (8 ounce) beef short ribs
1 (2 1/2 pound) beef chuck
4 teaspoons kosher salt
1 teaspoon freshly ground black pepper
2 teaspoons dried Mexican oregano
1 teaspoon ground cumin
¼ teaspoon ground cinnamon
¼ teaspoon ground cloves
7 peppers dried guajillo chilies
2 tablespoons olive oil
1 large onion, roughly chopped
6 cloves garlic, peeled
1 (1 inch) piece fresh ginger, thinly sliced
3 large tomatoes, cored and chopped
2 cups water
3 bay leaves
1 tablespoon honey
¼ cup white vinegar
4 cups chicken broth
2 tablespoons finely diced white onion
1 tablespoon chopped fresh cilantro
1 medium lime, sliced

Steps:

  • Cut each beef short rib through the middle, all the way down to the bone. Cut beef chuck in half; cut each half into 3- to 4-inch pieces.
  • Place beef chuck and short ribs into a soup pot and season with salt, black pepper, oregano, cumin, cinnamon, and cloves. Toss very thoroughly until the meat is evenly coated with the spices, 2 to 3 minutes.
  • Cover and transfer into the refrigerator for at least 6 hours, or overnight.
  • Prep guajillo chiles by snipping off stems with scissors; slice open and scrape or shake out the seeds onto a plate to discard.
  • Heat olive oil in a saucepan over medium heat. Add dried guajillo chiles and toss in the hot oil, about 30 seconds. Add chopped onion, garlic, and ginger; toss to combine. Add tomatoes and water, raise heat to high, and bring the mixture to a simmer. Reduce heat to medium-low and let simmer for 30 minutes.
  • Turn off heat and use an immersion blender to blend the mixture as smooth as possible, or transfer to a regular blender, working in batches as needed.
  • Remove the soup pot with meat from the refrigerator. Strain the reserved chili mixture into the pot using a large mesh strainer. Add bay leaves, honey, vinegar, and chicken broth.
  • Bring to a boil over high heat, and then lower to medium-low. Simmer gently, stirring occasionally, until the meat is falling-apart tender, 3 to 4 hours. Skim fat off of the top and reserve for future birria queso tacos.
  • Place some chunks of beef into a soup bowl and ladle some of the cooking liquid over top. Top with white onion and chopped cilantro and squeeze lime juice over top.

Beef Birria Queso Tacos with Consomé image

This is my take on what is currently the world's most trendy taco recipe. Seriously, it's blowing up everywhere and when you make these you're going to understand what all the fuss is about. Start with a batch of my Beef Birria and then combine this super savory, aromatic consomé with amazing beef and cheese tacos to take it up to another level.

2 cups reserved sauce from Beef Birria recipe
1 cup chicken broth
¼ cup diced carrots
¼ cup diced celery
½ cup diced cabbage
For the Tacos:
2 cups shredded Beef Birria
3 tablespoons reserved beef fat from Beef Birria recipe, or more as needed
8 (5 inch) corn tortillas
2 cups freshly grated Monterey Jack cheese
4 tablespoons chopped white onion, or to taste
4 tablespoons chopped fresh cilantro, or to taste
1 medium lime, cut into 4 wedges

Steps:

  • Stir reserved beef birria sauce, chicken broth, carrots, celery, and cabbage together in a saucepan over high heat; bring to a simmer. Reduce heat to medium-low and simmer, occasionally brushing the caramelized bits (side fond) off the side with the hot liquid, until vegetables are nice and tender and consomé has reached desired consistency, about 20 minutes. Reduce heat to low and keep hot while you prepare the tacos.
  • Heat some reserved beef fat in a large skillet over medium heat until melted. Add 2 tortillas and toss with a spatula until generously coated in fat. Toast briefly until golden brown, then cover with Monterey Jack cheese and some shredded beef. Drizzle each taco with about 1 tablespoon consomé liquid, then top with white onion and cilantro.
  • Fold tacos in half and press gently. Continue to cook, flipping back and forth, until browned and crispy, 2 to 3 minutes. Transfer to a plate and repeat to make remaining tacos, adding more fat if necessary.
  • Ladle consomé into a bowl and garnish with remaining white onions and cilantro. Squeeze lime wedges into consomé and serve with tacos.

  • In a large pot, add the beef, 1/2 the onion, 1/2 of the head of garlic, 18 cups of water and salt to taste. Bring up to a boil at medium heat. Skim off the top as needed. Reduce heat, cover and continue cooking until the meat is tender(about 2 hours).
  • In a separate pot, add the dried chiles, remaining onion, 4-6 cloves of remaining garlic and 4 roma tomatoes, Cover with water and bring to a boil at medium heat. Reduce heat and continue cooking for 10-12 minutes.
  • To the pot with tomatoes, add the canela, cloves, thyme, oregano, marjoram, cumin seeds and peppercorns. Let sit for 10 minutes.
  • After 10 minutes, using a wire mesh strainer, strain out the liquid from pot with tomatoes, reserving 1/2 of the cooking water. Transfer all the ingredients including any spices that are in the strainer to the blender, including the cooking water that you reserved. Also to the blender, add two cups of the beef broth from the cooked beef. Cover tightly and blend on high until smooth. let sauce settle and then blend on high again for 40 to 50 seconds.

  • Place the chile de árbols, guajillo chiles, garlic, and onions in a pot and cover with water. Bring to a boil and cook for 15 minutes.
  • Remove from stove. Transfer one cup of the cooking liquid, the chiles, garlic, and onion to a blender. Add the paprika, cumin, oregano, clove, two teaspoons salt, and one teaspoon pepper. Pulse until smooth. *If you wish to remove any chunks from the sauce you can run it through a fine sieve.
  • Cut the beef chuck roast into large pieces. Place in a dutch oven or stockpot, slow cooker, or Instant Pot. Add the sauce from step three and enough water to cover the beef by no more than one inch. Add the bay leaves and cinnamon stick.
