Time 30m

Yield About 1 litre

600g blackberries , fresh or frozen
750ml bottle good-quality red wine

Time 10m

Number Of Ingredients 3

24 oz of fresh or frozen raspberries (4 of the small boxes at the grocery that weigh 6oz ea)
3 1/2 cups vodka
1 cup of sugar

Steps:

  • Pour raspberries into a large jar and cover with sugar. Pour vodka over all and close with lid.
  • Shake several times the first day until all of the sugar has dissolved.
  • Store in a cool, dark place for a minimum of one month (I recommend 6 weeks, longer is fine too). Shake every day or two.
  • When the liqueur is ready to be bottled, line a strainer with a couple of layers of cheesecloth, preferably butter muslin and place it over a large pot or bowl. Pour the liquor over the cheesecloth slowly letting the liquid drain while the strainer catches the solids. Repeat if necessary.
  • When ready, store in bottles. I like to keep one in the fridge for an icy after dinner drink!

BLACKBERRY LIQUEUR

Blackberry liqueur image

For this blackberry liqueur, homemade blackberry syrup is given a grown-up kick with vodka or white brandy. Perfect to flavour a kir or a long summer drink.

Categories     blackberry liqueur

Time 55m

Yield 1

Number Of Ingredients 4

1 kg blackberries
juice of 1 lemon
1 kg Caster sugar
1 liter vodka or white brandy (eau-de-vie de fruits)

Steps:

  • Pick over the blackberries and put them in a pan with the lemon juice and just enough water to cover. Bring to the boil and simmer for 5 minutes, till the berries are soft and squishy. Mash thoroughly and strain everything through a non-metal sieve or drip through a cloth into a bowl.
  • Discard the solids, measure the juice back into the pan and stir in the same volume of sugar. Bring gently to the boil, stirring to dissolve the sugar crystals, reduce the heat and cook for another 5 minutes. Leave to cool. Stir in the vodka or eau-de-vie and pour into sterilised bottles - a run-through in the dishwasher does the business. Store the blackberry liqueur in the fridge.

HOMEMADE BLACKBERRY LIQUEUR

Homemade Blackberry Liqueur image

This sweet and fruity liqueur is amazingly easy to make. It is also known as Creme d Mure. It would make the perfect gift for all your friends who drink alcohol this Christmas and is the perfect thing to make from some of that Blackberry Glut.

Provided by Marie Rayner

Time P2DT8m

Number Of Ingredients 4

5 cups blackberries, picked through, de-stemmed and washed (700g)
26 1/2 ounces of a medium bodied red wine (750cl bottle, I used Shiraz)
1 1/2 cups granulated sugar (300g)
1/2 cup of vodka or gin (120ml)

Steps:

  • Measure your berries into a large glass or other non-reactive bowl. Mash them with a potato masher and then pour the bottle of wine over top. Cover with a clean towel and leave to macerate for 48 hours in a cool dark place. Give them a bit of a mash every now and then.
  • When 48 hours is finished, strain everything through a mesh sieve to remove all of the berries and debris. Strain again through some cheese cloth to make sure you have a clean juice without anything extra in it.
  • Pour the juice into a large saucepan. Add the sugar. Heat gently to a simmer and leave to warm over low heat for about 8 minutes, until all the sugar has dissolved. Remove from the heat and stir in the alcohol.
  • Leave to cool completely and then decant into clean sterile bottles. Store in a cool dark place. If your bottles are sterile it should keep for a very long time, if not then keep an eye on it and use it within a year.

  • Replace the Kahlua. Coffee liqueurs like Kahlua and Tia Maria are among our favorite spirits in the bar. They're so useful, too. One bottle can give you a variety of cocktails, from the black Russian to the midnight martini.
  • The Ever-Useful Amaretto. Amaretto is another liqueur that we use all the time in the bar. Without it, we wouldn't be able to make great cocktails like the toasted almond.
  • Irish Cream Makes a Great Gift. Put down that bottle of Baileys and grab a bottle of Irish whiskey instead. It's time to make your own Irish cream. This is a quick homemade liqueur and it's a favorite gift for the holidays.
  • Sweet, Delicious Limoncello. Limoncello is a very sweet lemon-flavored liqueur and it is used to create some delicious cocktails. If you enjoy a zesty dessert drink the likes of the lemon cake or in & out lemontini, try it with your own limoncello.
  • Let's Get Peachy. When peach season hits, grab a couple extra pounds and make your own peach liqueur. It's sweet, fruity, and a delicious alternative to commercial schnapps for any of your favorite peach cocktails.
  • The Liqueur for Cranberry Season. Though it's best with fresh cranberries, you can use the frozen variety for this tasty liqueur. That means there's no reason to wait for cranberry season to mix up an amazing crantini.
  • The Sweet Taste of Lychee. Lychee is a fun tropical fruit that made its way into the cocktail scene in the early 2000s. While most of the commercial liqueurs have come and gone, you can still get a taste of it with a homemade lychee liqueur.
  • Slow Down With Sloe Gin. Sloe gin is an old-fashioned liqueur made from sloe berries. A few decades ago, you could find it in many bars because it was used in fun drinks like the sloe gin fizz.
  • Try a Walnut Liqueur. If you're a fan of nutty liqueurs like Frangelico, a homemade nocino may be the right liqueur for you. This is an Italian favorite that is made from walnuts that have yet to ripen, so it's a very seasonal recipe.
