GRANDMA'S SPINACH SALAD

- Whisk first 4 ingredients until sugar is dissolved., In a 13x9-in. dish, layer half of each of the following: spinach, onion, mushrooms and eggs. Repeat layers. Drizzle with dressing; top with bacon.

WARM SPINACH SALAD WITH PORK MILANESE

- Prepare the pork: Pound the meat between 2 pieces of plastic wrap with a heavy skillet or mallet until thin. Crack the egg into a shallow bowl and add a touch of cold water; whisk to blend. Put the flour in a separate shallow bowl. Combine the breadcrumbs and parmesan in a third bowl; season with salt and pepper. Dip each slice of pork in the flour, then the egg, then the breadcrumb mixture, turning to coat. Place in a single layer on a baking sheet; set aside.
- Heat 2 tablespoons vegetable oil in a large skillet over medium heat. Remove from the heat and add the pork slices in a single layer. Return to the heat and cook until golden brown, about 3 minutes. Add the remaining 2 tablespoons vegetable oil and flip the pork; cook 2 to 3 more minutes, or until cooked through. Transfer to paper towels to drain; slice into strips.
- Make the salad: Wipe out the skillet. Add the olive oil and tomatoes and increase the heat to high. Season with salt, add the red pepper flakes and cook until the tomatoes blister, 1 to 2 minutes; stir in the basil and lemon juice. Place half of the spinach in a medium bowl. Pour the tomatoes and any pan juices over the spinach and toss to wilt slightly; taste for seasoning. Toss with the remaining spinach. Divide among plates and top with the pork. Serve immediately.

- In a large bowl, toss together the ham, spinach, cantaloupe, peaches and onion. Pour dressing over all and toss to coat. Serve immediately.

- SUGAR FOOTNOTE: I used Kroger brand.
- Also acceptable brands are: Ralphs and Vons.
- Why you ask b/c they are most likely BEET sugar.
- They already come with cornstarch added.
- If you use a name brand cane sugar, or splenda, or xylitol (birch sugar) you will probably have to add 1/4 tsp of cornstarch to get a dressing consistency that clings to the salad.
- Spinach salad Key notes: 1 Wash your hands.
- 2 Wash the produce, drain and gently pat dry.
- 3 Wash your hands.
- Mix the first three ingredients thoroughly in a large wide bowl, add the almond slivers& set aside.
- Using a whisk- mix the next four ingredients thoroughly in a medium a bowl.
- Pour this dressing on the spinach/almond mixture.
- Using your very clean hands, incorporate the dressing with the salad tossing and coating completely using a crunching motion on the spinach, to slightly bruise it so it softens- similar as you would do for a Slovak Cabbage salad.
- Put in a pretty serving bowl-- can be served room temperature or lightly chilled.
