40 maraschino cherries with stems (packed in very heavy syrup), drained well
1 cup (6 ounces) semisweet chocolate morsels
1 cup (6 ounces) white chocolate morsels

Steps:

  • Line a cookie sheet with parchment paper or waxed paper. Pat cherries dry with paper towels.
  • Melt chocolates separately in stainless steel bowl set over pan of simmering water, stirring until smooth.
  • Holding stem of cherry, dip cherry into melted chocolate to coat. You can coat half of cherry in white chocolate and half in semisweet chocolate, if desired. Transfer chocolate-dipped cherry to prepared cookie sheet. Repeat with remaining cherries and melted chocolate.
  • Refrigerate for about 40 minutes, or until set.

Vegetable oil spray for misting
1 package (18.25 ounces) plain devil's food cake mix or devil's food mix with pudding
1 can (21 ounces) cherry pie filling
2 large eggs
1 teaspoon pure almond extract
1 cup sugar
1/3 cup butter
1/3 cup whole milk
1 package (6 ounces; 1 cup) semisweet chocolate chips

Steps:

  • Place a rack in the center of the oven and preheat the oven to 350 degrees F. Lightly mist a 13- by 9-inch baking pan with vegetable oil spray. Set the pan aside.
  • Place the cake mix, cherry pie filling, eggs, and almond extract in a large mixing bowl. Blend with an electric mixer on low speed for 1 minute. Stop the machine and scrape down the sides of the bowl with a rubber spatula. Increase the mixer speed to medium and beat 2 minutes more, scraping the sides down again if needed. The batter should look thick and well blended. Pour the batter into the prepared pan, smoothing the top with the rubber spatula. Place the pan in the oven.
  • Bake the cake until it springs back when lightly pressed with your finger and just starts to pull away from the sides of the pan, 30 to 35 minutes. Remove the pan from the oven and place it on a wire rack while you prepare the glaze.
  • For the glaze, place the sugar, butter, and milk in a small saucepan over medium-low heat and cook, stirring constantly, until the mixture comes to a boil. Boil, stirring constantly, for 1 minute. Remove the pan from the heat and stir in the chocolate chips. When the chips have melted and the glaze is smooth, pour it over the warm cake so it covers the entire surface. The glaze will be thin but will firm up. Cool the cake for 20 minutes before cutting into squares and serving.
  • Store this cake, covered in aluminum foil, at room temperature for up to 5 days or in the refrigerator for up to 1 week. Or freeze the cake, wrapped in foil, for up to 6months. Thaw the cake overnight on the counter before serving.

3 tablespoons corn syrup
2 cups sifted confectioners' sugar
1 pound chocolate confectioners' coating

Steps:

  • Drain cherries and set on paper towels to dry.
  • In a medium bowl, combine butter and corn syrup until smooth. Stir in confectioners' sugar and knead to form a dough. Chill to stiffen if necessary. Wrap each cherry in about 1 teaspoon of dough. Chill until firm.
  • Melt confectioners' coating in a heavy saucepan over low heat. Dip each cherry in by its stem, and place on waxed paper lined sheets. Chill until completely set. Store in an airtight container in a cool place. Best after 1 or 2 weeks.

1/3 cup evaporated milk
1 1/2 cups sifted powdered sugar
1/3 cup chopped nuts
1/3 cup chopped maraschino cherry, , well drained
1 1/4 cups coconut or 1 1/4 cups chopped nuts

Steps:

  • Melt chocolate and milk over low heat.
  • Remove from heat.
  • Stir in powdered sugar, nuts and cherries, mix well.
  • Chill until cool enough to handle.
  • Shape into 1-inch balls and roll in nuts or coconut.
  • Chill at least 4 hours.
  • Keep chilled.

2 jars (8 ounces each) maraschino cherries with stems, well drained

2 tablespoons shortening

  • In a small bowl, combine the sugar, butter, milk and extract. Knead until smooth and pliable. Shape into 1-in. balls and flatten each into a 2-in. circle. , Wrap one circle around each cherry and lightly roll in hands. Place with stems up on waxed paper-lined baking sheet. Cover loosely and refrigerate 4 hours or overnight. , In a microwave, melt chocolate and shortening; stir until smooth. Holding on to the stems, dip cherries into chocolate; allow excess to drip off. Place on waxed paper until set. Store in a covered container. Refrigerate 1-2 weeks before serving.

1 maraschino cherry
1 chocolate kiss candy

Steps:

  • Fill a cocktail shaker with ice cubes. Pour in chocolate and cherry vodkas, grenadine, creme de cacao, half-and-half, and chocolate syrup. Cover and shake until the outside of the shaker has frosted. Strain into a chilled martini glass, garnish with maraschino cherry and chocolate kiss, and serve.

  • Drain the cherries, reserving the juice. Let dab the cherries gently with a paper towel so that they are as dry as possible. Set them aside on paper towels to continue to dry while you prepare the sugar filling.

  • In a large mixing bowl using an electric hand mixer beat the butter until creamy. Add in milk, vanilla, and cherry juice. Mix again. Mix in powdered sugar 1/2 cup at a time. The mixture should resemble a crumb and will come together if mashed. If it's too dry add a little more cherry juice and mix again. Form a solid dough ball with your hands. Cover with plastic wrap and refrigerate for 30 minutes.
  • Remove cherries from jars and place on paper towels. Blot with extra paper towels to remove excess juice. (If you can find cherries with the stems on them use them. It's ok if you don't find them.)
  • Using a 1/2 tsp (I like to use the smallest end of a melon baller) scoop out dough. Roll dough into a small ball. In palm of your hand push dough ball into a flat rounded disc shape. Place a cherry in center of disc and start forming the dough around the cherry. The dough should be very pliable. Cover the cherry upto the stem. If no stem, then cover the whole cherry. Place onto a sheet pan lined with parchment paper. Finish covering the rest of cherries.
