Homemade Cup Cheese image

This heirloom recipe is from the days before pasteurization and homogenization, so I don't know how well it will work in these modern times unless you have access to raw milk. From the Pennsylvania Dutch chapter of the United States Regional Cookbook, Culinary Arts Institute of Chicago, 1947. Preparation time is approximate.

4 quarts milk (thickly soured)
1 teaspoon salt
3 tablespoons butter (no substitutions)

Steps:

  • Cut milk through several times with a long sharp knife, then heat slowly to 90F or scald until curd is very dry.
  • Remove from heat and place in a damp cheesecloth bag.
  • Press under a heavy weight for 12 to 24 hours or until cheese is dry.
  • Force through a cheese sieve or grate finely.
  • Place in a wooden bowl, cover with a heavy teatowel and keep in a warm place for 3 to 7 days until soft and ripe, stirring occasionally.
  • Then place in a skillet, cook and stir constantly until lumps are all dissolved.
  • Add salt and butter; mix well and pour into cups or bowls.

nonstick cooking spray
3 thin slices ham
¼ cup shredded Gruyere cheese
3 large eggs
1 tablespoon milk, or as needed
3 leaves fresh basil, torn
½ teaspoon chopped fresh chives, or to taste
salt and freshly ground black pepper to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a 6-cup muffin pan with nonstick spray, making sure the spray coats all sides of the cup.
  • Cut ham in half and place 1 piece in each cup, pressing it down so it forms a basket in the cup. Sprinkle a small amount of Gruyere cheese on the bottom of the ham.
  • Crack eggs into a a measuring cup. Add milk, basil, chives, salt, and pepper. Whisk until combined.
  • Pour egg mixture evenly into each muffin cup.
  • Bake in the preheated oven until set, 20 to 25 minutes. Let cool for a few minutes before using a spoon to slide the cups out onto a plate.

2 tablespoons cumin
2 tablespoons chili powder
¼ cup water
1 teaspoon salt
tomato, to serve
guacamole, to serve
greek yogurt, to serve

Steps:

  • Preheat oven to 350˚F (180˚C).
  • Spoon 1 tablespoon piles of cheddar cheese 2 inches (5 cm) apart onto a parchment paper-lined baking sheet.
  • Bake for 5-7 minutes, or until edges of cheese piles are golden brown.
  • Cool for 1 minute.
  • Press cheese piles into mini muffin tin slots to form cups. Allow cheese to cool completely before removing.
  • Add ground beef and salt to a skillet over medium-high heat and cook until browned.
  • Drain grease from the meat.
  • Add garlic, cumin, chili powder, and water to skillet and stir until well-incorporated.
  • Stir in salt.
  • Distribute meat to cheese cups.
  • Garnish with tomatoes, guacamole, and Greek yogurt.

1/2 cup Velveeta cheese, shredded
1/2 cup cheddar cheese, shredded

Steps:

  • In a large bowl, combine flour, baking powder and salt.
  • In a medium bowl, beat butter, sugar, eggs and extract.
  • Pour in flour mixture in thirds adding 1/2 can of sweetened condensed milk in between (beginning and ending with flour mixture.).
  • Add in grated Velveeta and blend well.

1 gallon 2% milk
1/2 cup vinegar
1 teaspoon salt

Steps:

  • Heat the milk to 190F.
  • You will need a thermometer for other cheeses but you can get by here turning off the heat just before the milk begins to boil.
  • Add the vinegar and allow the mixture to cool.
  • When cool, pour the mixture, which now consists of curds and whey into a colander and drain off the whey.
  • Pour the curds into a bowl and sprinkle on the salt and mix well.
  • You may wish to use less salt or more, depending on your taste.
  • A little cream could also be added, for a more silky variation.
  • Now the best part, enjoy fresh or use in a cooked dish such as a lasagna!
