HUSH PUPPIES
I get a kick out of seeing these hush puppies turn themselves over, and they taste great! They usually disappear before the meal. If you don't like my sweet Southern version, just omit the sugar.

Steps:
- Mix all ingredients together just until they are wet.
- Refrigerate 30 minutes to 5 hours.
- To cook, heat oil to about 350-375 degrees.
- Dip a small spoon in cold water, then get a spoonful of batter, using the side of the bowl to"break-off" the spoonful of batter from the bowl.
- Immediately submerge spoon in the hot oil for a few seconds until the Hush Puppy releases from the spoon.
- Repeat this process with each Hush Puppy, until you have 6 or 7 in the hot oil.
- Do not crowd the"puppies", as you do not want to lower the temperature of the hot oil.
- Getting the spoon wet between puppies is important, as it helps keep the batter from sticking to the spoon.
- If your oil is the correct temperature, the hush puppies should be golden on the outside and cooked on the inside.
- When golden on one side, if they automatically turn themselves over, you're cooking like a Pro.
- If they don't give them a little nudge to make them turn over.
- Possible Problems: If oil is too hot, or"raw puppies are too large", they will get too browned on the outside and be gummy or runny on the inside.
- If oil is not hot enough, the puppies will be greasy.
- I usually put 1 or 2 spoonsful of batter in the hot oil to test it before making a whole batch of these tasty little Southern treats.
- Adjust oil temperature as needed.
- Although not quite as good as when freshly cooked, I often freeze leftover hush puppies and reheat them in a toaster oven until warm.
- They are still mighty good.

HOMEMADE DEEP FRIED HUSH PUPPIES
Steps:
- Combine ingredientsPlace all ingredients in a medium bowl and stir by hand until well combined. Refrigerate mixture for at least 1 hour.
- Heat deep fryerHeat peanut oil to 375 degrees Fahrenheit. I highly recommend using a temperature controlled deep fryer opposed to a deep pot on the stove.I use the Farberware 4L Double Deep Fryer. Although it is exclusively available at Walmart this one here is very similar to the one I use.Tip: When taking the hot food out of the oil you'll want to be prepared. So, line a baking sheet with paper towels and then place a baking rack on top of that as set aside until ready to use.
- Scoop batterScoop up the batter with a cookie scoop and gently place the batter into the hot oil. I usually cook 5 to 7 at a time. Careful not overcrowd the batter in the fryer or you could have a mess on your hands.
- CookAllow the batter to cook in the hot oil for 3-5 minutes or until golden brown. This recipe will make around 20 - 25 hush puppies.Keep an eye on those pups. If you're lucky you might even catch them doing somersaults in the hot oil. LOLTip: It's okay to flip them a few times with the spider strainer while frying, just be careful.
- Remove From OilCarefully remove hush puppies from oil with the spider strainer.Scoop out hush puppies and place them on the baking rack.Complete above steps until all batter is fried.
- Allow to cool for a few minutes. Serve as a side to fish and chips or whatever your little heart desires but most of all enjoy!
DEEP-FRIED SOUTHERN HUSH PUPPIES
Steps:
- Gather the ingredients.
- In a deep fryer or heavy, deep skillet, heat 2 to 3 inches of oil to 370 F.
- In a mixing bowl, combine the self-rising cornmeal mix, self-rising flour, and onion. Add milk and egg and mix well.
- Let the batter stand at room temperature for 5 minutes.
- Drop the batter by tablespoons into the hot oil, careful not to overcrowd the pan.
- Fry the hush puppies in small batches until deep golden brown, turning several times to brown evenly. It'll take around 3 batches at 2 to 3 minutes each.
- Drain on paper towels. Serve and enjoy!

- Using a large skillet, preheat oil for frying to 350 °F.
- Using a mixing bowl, stir together the cornmeal, flour, baking soda and salt. Stir in the onion. In a small bowl, stir together the buttermilk and egg. Pour the buttermilk mixture into the dry ingredients and mix until blended. Drop the batter one teaspoon at a time into the oil. Dip the spoon in a glass of water after each hush puppy is dropped in the oil. Fry until golden brown, turning the hush puppies during the cooking process. Makes about 3 dozen hush puppies.
