Homemade marinara is almost as fast and tastes immeasurably better than even the best supermarket sauce - and it's made with basic pantry ingredients. All the tricks to a bright red, lively-tasting sauce, made just as it is in the south of Italy (no butter, no onions) are in this recipe. Use a skillet instead of the usual saucepan: the water evaporates quickly, so the tomatoes are just cooked through as the sauce becomes thick. 1 28-ounce can whole San Marzano tomatoes, certified D.O.P. if possible
1/4 cup extra-virgin olive oil
7 garlic cloves, peeled and slivered
Small dried whole chile, or pinch crushed red pepper flakes
1 teaspoon kosher salt
1 large fresh basil sprig, or 1/4 teaspoon dried oregano, more to taste

Steps:

  • Pour tomatoes into a large bowl and crush with your hands. Pour 1 cup water into can and slosh it around to get tomato juices. Reserve.
  • In a large skillet (do not use a deep pot) over medium heat, heat the oil. When it is hot, add garlic.
  • As soon as garlic is sizzling (do not let it brown), add the tomatoes, then the reserved tomato water. Add whole chile or red pepper flakes, oregano (if using) and salt. Stir.
  • Place basil sprig, including stem, on the surface (like a flower). Let it wilt, then submerge in sauce. Simmer sauce until thickened and oil on surface is a deep orange, about 15 minutes. (If using oregano, taste sauce after 10 minutes of simmering, adding more salt and oregano as needed.) Discard basil and chile (if using).

This marinara sauce recipe is the best! You'll only need 5 basic ingredients, and it's so easy to make. No chopping required! Recipe yields 2 cups sauce (enough for 8 ounces pasta); double if desired.

1 large can (28 ounces) whole peeled tomatoes*
1 medium yellow onion, peeled and halved
2 large cloves garlic, peeled but left whole
2 tablespoons extra-virgin olive oil
1 teaspoon dried oregano
Pinch of red pepper flakes (optional, omit if sensitive to spice)
Salt, to taste (if necessary)
Optional, for serving: Cooked pasta, grated Parmesan cheese or vegan Parmesan, chopped fresh basil, additional olive oil

Steps:

  • In a medium, heavy-bottomed saucepan, combine the tomatoes (with their juices), halved onion, garlic cloves, olive oil, oregano and red pepper flakes (if using).
  • Bring the sauce to a simmer over medium-high heat, then lower the heat to keep the sauce at a slow, steady simmer for about 45 minutes, or until droplets of oil float free of the tomatoes. Stir occasionally, and use a sturdy wooden spoon to crush the tomatoes against the side of the pot after about 15 minutes has passed.
  • Remove the pot from the heat and discard the onion. Smash the garlic cloves against the side of the pot with a fork, then stir the smashed garlic into the sauce. Do the same with any tiny onion pieces you might find. Use the wooden spoon to crush the tomatoes to your liking (you can blend this sauce smooth with an immersion blender or stand blender, if desired).
  • Add salt, to taste (the tomatoes are already pretty salty, so you might just need a pinch). Serve warm. This sauce keeps well, covered and refrigerated, for up to 4 days. Freeze it for up to 6 months.

2 X 28 oz cans San Marzano Tomatoes
1/2 yellow onion (-diced)
8 cloves garlic (-minced)
1 leaf bay
4 sprigs basil
1/3 c fresh basil leaves (- sliced or torn)
4 tbsp extra virgin olive oil
1 pinch sea salt (( or to your taste))

Steps:

  • Heat a heavy bottom large pot on medium low flame. Add a lug of olive oil and the diced onion with a pinch of sea salt. Cook for about 10 minutes until traslucent taking good care not to burn it.
  • Stir in the minced garlic and let it infuse the oil for about 30 seconds.
  • Use your hands and crush the tomatoes as you add them to the pot with the onion and garlic. Rustic chunks are what we are after.
  • Add the bay leaf and the 4 sprigs of basil then bring everything to a gentle simmer. Partially cover with a lid and cook down until reduced and thick to your liking. About an hour or so. Stir a few times making sure the sugars from the tomatoes don't stick to the bottom.
  • After the sauce has reduced season to taste with the sea salt. Discard the bay leaf and basil sprigs.
  • Finish with a drizzle of extra virgin olive oil and the reserved fresh basil. Serve with your favorite pasta to transfer to jars and refrigerate up to one week.

1/2 cup good red wine, such as Chianti

Steps:

  • Heat the olive oil in a large (12-inch) skillet. Add the onion and saute over medium heat until translucent, 5 to 10 minutes. Add the garlic and cook for 1 more minute.   • In a large casserole pot, heat the oil over a medium-high flame. Add the onions and garlic and saute until the onions are translucent, about 10 minutes. Add the celery, carrots, and 1/2 teaspoon of each salt and pepper. Saute until all the vegetables are soft, about 10 minutes. Add the tomatoes and bay leaves, and simmer uncovered over low heat until the sauce thickens, about 1 hour. Remove and discard the bay leaf. Season the sauce with more salt and pepper, to taste. My Sicillian father used to make this sauce at least weekly. Usually we used fresh, ripe plum tomatos but I don't have his green thumb so my sauce uses the canned tomatos. This is a great basic sauce to start with. Can be served as is over pasta or you can add meatballs, sausage etc. My dad used to add 5 Italian sausages, a pork chop, and a neck bone to the sauce and let it simmer for hours. If you add the meat, brown it and add it to the sauce as it simmers.

3 (28 ounce) cans crushed tomatoes in puree (I like San Marzano but any without citric acid are fine)
10 medium garlic cloves
1 large Spanish onion, chopped
1/4 cup extra virgin olive oil
1/2 teaspoon fresh ground black pepper
1 cup fresh basil, coarsely chopped (I use a large handful)
1 cup fresh parsley, coarsely chopped (again a large handful)
2 bay leaves
1 pinch baking soda, if needed (or if you must sugar)

Steps:

  • In large pan over medium heat saute chopped garlic and onion in olive oil until translucent.
  • Add cans of tomato.
  • Sprinkle on black pepper.
  • Add bay leaves.
  • Let sauce simmer for about 30 minutes to reduce and intensify flavors stirring occassionally.
  • Add basil and parsley and stir well.
  • Allow sauce to simmer at least another two hours (can simmer all day if desired)stirring occassionally.
  • After two hours taste sauce, if acidic or if you want more sweetness add 1/2 tsp baking powder (or sugar) to cut acidity. Only do this if necessary.
  • Pull out both bay leaves before serving/storing.
  • Sauce can be served over pasta now or stored in freezer or refridgerator. If adding in meat add at the begining when adding tomatos.

2 Tablespoons extra virgin olive oil
1 small white onion, diced ¼" (~1 cup)
1 medium stalk celery, diced ¼" (~½ cup)
1 medium carrot, diced ¼" (~½ cup)
3 garlic cloves, chopped (~2 Tablespoons)
¼ cup Marsala or red wine
2 28-ounce cans crushed San Marzano tomatoes
2 teaspoons Italian seasoning
2 teaspoons sugar
⅛ teaspoon red pepper flakes
Salt to taste (~2 teaspoons kosher salt recommended)

Steps:

  • Heat a 4 quart saucepan over medium low heat. Add olive oil. Once shimmering, add onion, celery, and carrots and sprinkle with a pinch of salt. Sauté for ~8 minutes or until onions turn translucent. Add garlic and cook for 2 more minutes.
  • Add wine to the pan and scrape up any brown bits that are stuck to the pan. Simmer 2-3 minutes or until wine is mostly evaporated.
  • Add tomatoes, Italian seasoning, sugar, red pepper flakes, and 1 teaspoon of salt. Use ¼ cup of water to rinse out the tomato cans and add to pan. Bring to a boil, then partially cover and simmer for 45-60 minutes.
  • Season with additional salt to taste. Blend for a smooth sauce or leave as is, and use for pizza, pasta, and more. Enjoy!

56 oz. canned crushed tomatoes

2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1/2 teaspoon crushed red pepper (or to taste)

Steps:

  • Saute onions in olive oil on medium-high heat until browned and translucent, approx. 10 minutes.
  • Add minced garlic and saute for another minute.
  • Add wine, stir to life any browned onions/garlic from bottom of the pot, and simmer for a couple of minutes.
  • Add tomatoes, half of the herbs, salt, pepper, and crushed red pepper. Stir, and let simmer on low heat for 3 hours, stirring and tasting occasionally. Add seasoning as needed.
  • If sauce is looking too thin, leave lid ajar for a while.
