1 1/2 cups dark brown sugar
1 1/2 cups granulated sugar
1/2 cup instant coffee
1 3/4 liters high quality vodka
2 teaspoons pure vanilla extract
1 whole vanilla bean

Steps:

  • Combine the brown sugar, granulated sugar and water in a small sauce pan. Simmer for 10 to 15 minutes until sugar is dissolved.
  • Remove from the heat. Stir in the coffee. Allow to cool completely.
  • Pour into a large plastic container with a lid. Add the vodka, vanilla flavoring and vanilla bean.
  • Cover and let stand for two to three weeks or until fully aged. Kahlua, when properly stored, can last safely for up to a few years.

1 l water ((1/4 gal))
0.8 l sugar ((1/5 gal))
1 cup hot water
3 tbsp instant freeze-dried coffee ((Nescafe Instant Gold or similar))
1 tbsp vanilla powder
0,7 l vodka ((24 fl. oz))

Steps:

  • In a large saucepan, add water and distribute the sugar in an even layer at the bottom.
  • Let the water and sugar simmer gently. Do not make the mixture boil and do not stir in it.
  • While the sugar is heating/mixing up in the water; make a strong cup of coffee. This is done by dissolving 3 tablespoon of freeze-dried coffee in one cup of hot water. Alternatively, you can brew some strong coffee using a French Press with 6 tablespoons of regular grinded coffee beans. A French press will give you the best result taste-wise.
  • When the sugar is dissolved in the water, add the strong coffee and the vanilla powder (or similar vanilla essence).
  • Now let the sugar, water and coffee mixture simmer at low heat for 3 hours. This step is done without a lid. We are looking to evaporation the water making a thicker and sweet coffee syrup.
  • Remove the saucepan from the stove and let the coffee syrup cool down.
  • When the temperature is 78 C (172 F) or below, add the vodka. If the temperature is greater, the alcohol will evaporate which is unwanted.
  • When the Kahlua is cooled down, it is ready to be used or poured onto clean bottles. Keep your homemade Kahlua in your fridge.

750ml Everclear 190/189 Proof grain alcohol (preferable) or Everclear 151, Everclear 120, see post for more information

Steps:

  • Pour the coffee into a large soup pot, add in the brown sugar, and heat over medium-high heat, stirring frequently, until the sugar is dissolved, about 5 minutes.
  • Remove from the heat and let cool to room temperature.
  • Add in the vanilla and the grain alcohol. Pour into glass bottles, label, and store in a cool, dark place.

1-1/2 cups Sugar
2 Tbl Instant Coffee
2 cups Vodka
1 Tbl Vanilla Extract

Steps:

  • Combine the water, sugar, and instant coffee in a medium saucepan. Bring the mixture to a high simmer, but do not bring it all the way to a boil. Reduce the heat a bit and let the mixture keep simmering, stirring occasionally, for about an hour. This helps deepen the flavor of the sugar and the coffee.
  • Remove the mixture from the heat and let it cool completely. Once the mixture has cooled, mix in the vodka and the vanilla extract. (If you add the vodka while the mixture is hot, the heat can cause too much of the alcohol to evaporate away). Your final product will be a very rich and dark liquid.
  • Transfer the mixture to a glass bottle or other container with a tight fitting lid for storage. If possible, let the mixture set for a few weeks to let the flavors meld together.

25 ounces rum
1 cup coffee beans ((whole) I chose organic)
4 vanilla beans
2 cups panela (or other sugar of choice)
2 cups water

Steps:

  • Find a glass bottle or jar large enough to store the rum with the coffee beans and vanilla beans for several days. Pour the rum into the container.
  • Split the vanilla beans down the center with a sharp knife. This will expose the inner seeds, allowing the vanilla flavor to better infuse into the rum.
  • Add the split vanilla beans to the bottle with the rum.
  • Add the coffee beans to the bottle with the vanilla beans and rum, cover it, and give it a good shake. I use whole coffee beans because it's less messy and works great, but you can also use ground coffee if you don't have any whole beans.
  • Store the bottle out of direct sunlight, shaking the bottle occasionally, when you walk by it, to help incorporate all of the ingredients so they infuse well into the alcohol.
  • Depending on the strength of the alcohol used, the type of coffee, and whether it was ground or not, in just a few short days the rum will have taken on a dark color and a strong coffee flavor. You should also note the flavor of the vanilla beans, but the flavor is more subtle. At this point, it's really up to you how long you want to leave it infusing. When you are ready to stop the process, move onto the next step.
  • Make a sugar syrup. The first time I made this liqueur, I made a simple sugar syrup by mixing together the water and sugar in a pan over low to medium heat until the sugar dissolved. I used equal weights of water and sugar to make a very basic sugar syrup, but you can make it sweeter by adding more sugar, or lighter by adding less. Once cooled, add the syrup to the coffee infused rum.
  • I have since been experimenting with ways to alter the final flavor of the liqueur. If you want a more caramel flavor, you can caramelize the sugar first, before dissolving it in water to make the syrup. To do so, heat the sugar, without water added, to a pan over low to medium heat until it begins to melt and lightly brown. At that point, you can add water to dissolve the caramelized sugar into a caramel flavored sugar syrup.
  • Strain out the coffee and vanilla beans, and add the sugar syrup to the coffee and vanilla infused rum. It's a good idea to add the sugar syrup little by little, tasting the mixture along the way, so that you don't make the liqueur too sweet for your taste. Stop when you've reached the desired level of sweetness. (If it's sweet enough, but too strong, you can add a little water. I'd wait a few days before adding the water, though, because the alcohol flavor seems to slightly mellow with time.)
  • I wanted a stronger vanilla flavor, so I added a couple of vanilla beans back into the liqueur. Some people are very particular about not having little seeds in the final liqueur. If you want it perfectly smooth and clear of any seeds, you can do a final strain through a coffee filter or tight cheesecloth.
  • Store at room temperature or refrigerated, and serve alone or in any Kahlúa or Tía María recipe. (My husband adds a dash to his espresso.) Enjoy!

Stir the instant coffee into the sugar mixture and mix well. Remove from the heat. Add the vodka and vanilla bean to the coffee mixture. Mix well then let cool to room temperature. Transfer the kahlua to bottles and seal well. Let the mixture sit for 3 weeks before using. Turn the bottles daily to make sure the coffee has dissolved and no sediment forms. Strain the kahlua into other bottles and use like commercial kahlua.

2 cups light brown sugar

1 vanilla bean, split lengthwise and halved

Steps:
