This classic recipe will come together in the time it takes to make a frittata or a stack of pancakes for brunch. You could also try frying the patties in a cast-iron pan alongside eggs in a hole. As the maple-and-sage-tinged fat renders out of the sausage, the bread will thirstily absorb it. You might even want to drizzle a tiny bit more syrup over the whole thing as you sit down to eat, so that each bite of sausage, bread and runny yolk has the perfect blend of savory and sweet. Be sure to use ground pork with enough fat or you'll end up with dry, flavorless hockey pucks. Twenty percent by weight is a good ratio, though 25 doesn't hurt. If the ground pork available to you is too lean, ask the butcher to replace two ounces or so of the lean meat with ground pork belly or bacon. 1 teaspoon dried sage
2 teaspoons Diamond Crystal kosher salt or 1 teaspoon fine sea salt
1/2 teaspoon freshly ground black pepper
1 large pinch ground nutmeg
1 large pinch ground coriander
1/4 teaspoon cayenne pepper
1 pound ground pork (20 to 25 percent fat by weight)
1 tablespoon plus 1/2 teaspoon maple syrup
Extra-virgin olive oil

Steps:

  • Line a baking sheet with parchment paper; set aside.
  • Finely crumble the sage into a large bowl. Add salt, black pepper, nutmeg, coriander and cayenne to the sage, and stir to combine. Add pork and syrup to the spice mixture.
  • Using your hands, mix thoroughly for 1 full minute, until the pork begins to appear tacky and sticks to the palm of your hand.
  • Heat a cast-iron pan over medium heat. Use a heaping tablespoon of pork mixture to make a small, thin sausage patty. Add a teaspoon or so of olive oil to the pan. and cook the patty for 2 to 3 minutes on each side, or until cooked through. Taste, and if needed, add salt or any other seasonings to the uncooked sausage mixture, and mix to combine.
  • Divide and form the remaining sausage into 8 2 1/2-inch patties, placing them on the prepared baking sheet as you go. Cover, and refrigerate for 30 minutes to allow the flavors to come together. (Patties can be made ahead and covered and refrigerated or frozen at this point until ready to use.)
  • To cook, wipe out cast-iron pan, and return it to medium heat. Add 1 tablespoon olive oil. When it shimmers, add patties in a single layer, leaving space between them. Cook 3 to 4 minutes per side, or until browned on the surface and just cooked through.
  • Drain sausages on paper towels. Serve hot.

Number Of Ingredients 9

1 pound ground pork
1/4 medium onion
1 clove fresh garlic
1 medium apple, peeled, cored, and quartered
1 and 1/2 TBS REAL maple syrup (like this)
2 TBS fresh herbs, finely chopped (Basil, cilantro, oregano, parsley...whatever you have)
1 tsp celtic sea salt (I use this one)
1/2 tsp ground sage, dried (like this)
1 TBS coconut oil (like this), butter, or ghee (like this)

Steps:

  • In a small food processor, puree onion and garlic. Add apple pieces and pulse until apple is broken up into tiny pieces but not pureed. (You can skip this step and just chop everything fine if you don't mind chunks of onion, garlic, and apple. I prefer is a bit more incorporated.)
  • Saute onion/garlic/apple mixture in 1 TBS of fat of choice over medium heat for 5-7 minutes, until it softens and begins to brown a bit. Allow to cool slightly.
  • In a large bowl, add maple syrup to ground pork and mix thoroughly. Add the rest of the ingredients, including onion/garlic/mixture and mix well. I use my hands.
  • Shape into desired sized patties and either fry up now or freeze for later. If freezing, separate layers with unbleached parchment paper.

Steps:

  • Combine the ground pork, sage, salt, pepper, nutmeg, allspice, and maple syrup in a medium bowl. Mix gently to combine.

1/2 cup apple cider
3/4 cup apples (diced)
1 pound ground pork
1/2 teaspoon salt
1/4 teaspoon garlic powder
1/2 teaspoon white pepper
1/4 teaspoon ground sage
1/4 teaspoon red pepper flakes
1 teaspoon maple syrup
2 Tablespoons apple cider

Steps:

  • Put 1/2 cup apple cider and diced apples in a saute pan. Cook over medium heat until cider has been reduced and apples are soft.
  • Mash the apples with the back of a spoon. Leave a few chunks of apples.
  • Remove from pan and allow apple mixture to cool.
  • In a bowl, add ground pork, salt, garlic powder, pepper, sage, red pepper flakes and maple syrup along with apple mixture.
  • Mix all ingredients together with your hands. Add remaining apple cider and mix again.
  • Cover and refrigerate for at least 30 minutes.
  • Form into patties and cook over medium-low heat until cooked through. Keep an eye on the patties so they don't burn. The apple cider and syrup can burn quickly if not watched.

1/2 yellow onion, finely chopped
1 garlic clove, minced
1 Honeycrisp or Braeburn apple, finely chopped

pinch of nutmeg
1 pound extra lean ground turkey
1 1/2 tablespoons pure maple syrup
2 egg whites
1/4 cup gluten free oat flour (I use Bob's Red Mill)
1/2 teaspoon salt
freshly ground black black pepper

Steps:

  • Preheat oven to 450 degrees F. Line large baking sheet with parchment paper and spray with nonstick cooking spray.
  • Heat olive oil in a large frying pan over medium heat. Add onions and and garlic and cook until garlic becomes fragrant, about 3 minutes.
  • Add in diced apples and cook a few minutes more or until apples soften. Remove from heat, transfer to a large bowl, and stir in cinnamon and nutmeg.
  • Add in ground turkey, maple syrup, egg whites, oat flour, and salt and pepper; mix well. Divide into 16 patties and place on prepared baking sheet.
  • Bake for 10 minutes or until turkey is no longer pink. Serve with extra maple syrup.
