2 kiwi fruits
6 strawberries
1 cup cherries
1/2 cup blueberries
2 cups apple juice

Steps:

  • Prepare the fruit by peeling and slicing the kiwi. De-stone the cherries and slice in half. Slice the strawberries into slices and the blueberries in half.
  • Place the fruit into the popsicle molds (you may not need all of it). Use plenty of fruit to that it's well distributed when you add the apple juice.
  • Pour in the apple juice so that it nearly reaches the top.
  • Add the sticks and place in the freezer for at least 5 hours to freeze completely.

  • Combine the ingredients in a blender and blend until there are no chunks in the mixture. The consistency should resemble thin pancake batter, so use the tips above to adjust the thickness as desired.
  • Using a funnel, pour the mixture into the reusable plastic tubes or silicone molds. Seal and freeze for at least 6 hours, or overnight.

12 oz frozen fruit (i used mixed berries)
3/4 cup cashew milk ((or coconut yogurt))
1 large orange (squeezed)
1.5 tsp vanilla extract
1 tbsp maple syrup (OPTIONAL to taste)
2 tsp lime or lemon juice (freshly squeezed)

Steps:

  • Prepare 6 popsicle molds and 6 popsicle wooden sticks.
  • Reserve 1/4 cup of the cashew milk and a few berries.
  • In the bowl of a food processor or Vitamin blender process the frozen berries with the orange and lime juice, 1/2 cup of cashew milk, vanilla extract and the maple syrup until a nice rustic texture is achieved. (Pour the mixture into a pitcher with a spout for easy pouring).
  • Add a couple of the reserved berries to each popsicle mold, top with a little splash of the reserved cashew milk and fill with the fruit popsicle mix. Finish with a little splash of cashew milk but leave approximately 1/4 inch of space at the top. Repeat the process with the remaining Popsicles.
  • Freeze your popsicles for 4 to 6 hours until set. Remove from the molds and serve on ice garnished with basil, mint or edible flowers.

2 lbs of ripe fresh strawberries (washed and hulled)
Popsicle sticks

Steps:

  • Cut about 5-6 of the strawberries into thin slices and reserve to decorate the molds.
  • Cut the rest of the strawberries into halves or quarters and blend them until you have a puree.
  • Place the sliced strawberries in the popsicle molds, try to stick them to the edges, this will give the strawberries popsicles a fun fruity look.
  • Pour the strawberry puree into the popsicles molds, cover and insert the popsicles sticks. If you are using small cups as popsicle molds you can cover them with foil and insert the popsicle stick thru the foil to keep them in place. Or let them freeze for about an hour and then add the sticks.
  • Place the popsicles in the freezer for about 3-4 hours or until fully frozen. To make it easier to remove them you can dip the bottom of the mold in lukewarm water for about 10-20 seconds.

  • Kiwi Layer: Peel off the kiwi skin. Add kiwis to the blender along with juice (or water). Blend until smooth (add more liquid if necessary). Pour a small amount into each popsicle mold. Add popsicle sticks back and freeze another 20 minutes.
  • Pineapple Layer: Add the pineapple and juice (or water) to a blender. Blend until smooth. Pour into the popsicle mold (you may need to remove the popsicle sticks depending on the style of mold you have). Leave enough space at the top for one more layer. Freeze another 20 minutes.
  • Blueberry Layer: Add blueberries and juice (or water) to a blender. Blend until smooth. Pour into popsicle mold leaving a small amount of space at top for room to expand. Freeze 12 hours.
  • Serving Instructions: Run the outer part of the popsicle mold underneath cold water for a few seconds. Gently pull the popsicle stick and it should begin to release. Serve immediately.

  • Peel and slice the kiwis and peaches into 1/4" slices. Slice the strawberries into thirds.
  • Carefully press the strawberry, kiwi and peach slices against the sides and bottom of each mold. Add blueberries and raspberries to fill any gaps as you go.
  • Use a popsicle stick to press the fruit against the sides of the mold. (So you'll be able to see it better when the juice freezes.)
  • Add as much fruit as you can fit into the mold, continuing to press it against the sides.
  • Fill the molds with apple juice, leaving about 1/4" of space at the top for the juice to expand when it freezes.
  • Insert a popsicle stick in the middle of each popsicle, between the 2 layers of fruit.
  • Freeze the popsicles overnight (or a minimum of 4 to 6 hours).
  • Run the molds under hot water to help the popsicles release.
