THE BEST SLOPPY JOES
This is weeknight comfort food at its finest. We created a homemade sauce that is tangy and flavorful but also quick and easy. We used both ketchup and canned tomato sauce for lots of tomato-y zip and just a touch of brown sugar for a bit of sweetness and slight caramel finish. Green bell pepper is a key addition; it really enhances the other ingredients, elevating the flavor profile into the realm of a true sloppy joe.

Steps:
- Melt the butter in a large skillet over medium-high heat. Add the onions and peppers and cook, stirring occasionally, until softened and starting to caramelize in some spots, 6 to 7 minutes. Add the garlic and cook, stirring, until fragrant, about 1 minute. Stir in the beef and cook, breaking up the meat with a wooden spoon or spatula, until it is browned, no longer pink in the middle and cooked through, 7 to 8 minutes.
- Stir in the tomato sauce, ketchup, brown sugar, Worcestershire sauce, mustard, red wine vinegar, paprika, cayenne pepper, 1 teaspoon salt and a generous amount of black pepper and simmer, stirring occasionally, until thickened and heated through, 5 to 6 minutes. Spoon the meat onto the toasted buns.

Despite the name of this iconic retro dish, the secret to a great sloppy joe is a thick, rich, almost dry consistency, which allows the sandwich to be eaten with your hands. Serve on hamburger buns.

Steps:
- Place ground beef and onion in a large skillet. Turn heat to medium and cook and stir the mixture constantly until the beef is browned and forms small crumbles, about 10 minutes.
- Stir in garlic and green bell pepper; cook and stir until softened, 2 to 3 minutes. Add 1 cup water and stir, scraping the pan to dissolve any brown flavor bits from the bottom of the skillet.
- Mix in ketchup, Worcestershire sauce, brown sugar, Dijon mustard, salt, and black pepper. Add 1 more cup water and return mixture to a simmer. Reduce heat to low and simmer, stirring occasionally, until the liquid has evaporated and the mixture is thick, about 40 minutes.
- Season with salt , black pepper, and cayenne pepper to taste.

Desperate attempt to make something similar to what came out of a can that I can't eat because 99% of all cans are lined with petroleum. Petroleum, your soda to your sloppy joes - so here's my try to go semi-scratch ;) I was surprised that it turned out and that my husband didn't turn his nose up at it - see my profile for the reason ;)

Steps:
- Put hamburger in a 12 inch frying pan or skillet.
- Shake salt like you would over a dinner plate - about 1/2 tsp or so.
- Brown hamburger on medium or a bit lower if it starts splattering.
- Drain the hamburger with a stainless steel strainer.
- Return hamburger to pan.
- Add all ingredients to the pan and mix well.
- Simmer for 5 minutes.
- Serve on warm whole wheat toast, bread, biscuits, or hawaiian buns.

Desperate for sloppy joes but knowing I can't use canned anything, I threw this together for my husband who has, literally, no sense of taste and no sense of smell. His life revolves around mouthfeel and memory rather than smell and taste. Well, I am quite the opposite - I can taste everything because I have lupus and sarcoidosis. It MUST taste similar. CANNED foods are downright bad for your health. BPA (and OTHER BPs that aren't even regulated) are STILL TO THIS DAY lining cans. The TANG you taste in everything canned is the liner. Not one of these ingredients came from a CAN. Petroleum is the main constituent of 99% of all canned goods. I eat it al la naturale it plain, it has most if not all of the taste that the canned does without the petroleum liner (!) - Only Eden Foods and a few local intrepid canners aren't lining cans with petroleum - ask them. Soda to chili, tomato sauce to tuna - get away from CANS! DEMAND GLASS or better!

- Brown and crush hamburger on medium heat - I use a whisk to crush meat as it cooks - no big chunks.
- Mix all other ingredients - set aside until the hamburger is done.
- Remove pan from heat and drain hamburger with stainless steel (no plastic!) strainer.
- Return hamburger to pan.
- Add mixed sauce.
- Heat for 5-7 min on simmer.
- Serve on rolls, over bread, on hamburger buns.
- This recipe is only limited by your taste, you can add onions, mushrooms, peas, legumes, zuchinni, other veggies, only limited by your imagination and doubling your sauce if needed.

- Stir the ground beef and brown until a deep crust appears on about 50 or so percent of the beef, and it is cooked through, then remove the beef, drain the fat and add the butter, onions and bell pepper to the pan.
