CREAMY VANILLA COFFEE
My husband and his friends would often buy a similar version of this creamy, vanilla-flavored beverage at a nearby coffee house. Because daily stops got to be expensive, I decided to try and make my own. This smooth sensation was the result.-Heather Kunkel, Wellsville, New York

Steps:
- Place ground coffee in the coffee filter of a drip coffeemaker. Add water; brew according to manufacturer's directions., In a small bowl, combine sugar and dry pudding mix. Stir in milk and coffee. Chill until serving.

HOMEMADE VANILLA BEAN COFFEE BLEND
Its that time of the year when everyone could do with a mug of coffee and some soft serenading music. This is a wonderful creation. An easy mix from Martha Stewart that I came across in the Weekend magazine dated December 23rd'2005. Enjoy! Happy New Year, everyone!

Steps:
- Using a paring knife, scrape the seeds from the vanilla beans.
- Mix the scraped seeds with the coffee.
- For best results use a medium-bodied coffee from Kenya or Colombia.
- Transfer the mix into a coffee bag.
- Decorate with a lilac ribbon(use whichever is your favourite colour) and don't forget to add your personal message before you seal it up with a pretty sticker.
- Enjoy the season of Christmas, Hannukah and New Year!
- Note: You may substitute the vanilla beans with 1 or 2 tsps. of cinnamon or nutmeg powder for a different flavour. I haven't tried other flavours, but if you do, be sure to let me know in your comments how it turned out.

Steps:
- mix vanilla syrup, sugar, milk, pudding mix, coffee, and creamer in a blender until all the powders are mixed.
- add all the ice to the mixture and ice cream (optional), blend for 10-15 seconds or until ice is fine and mixed throughout.
- pour the mix into a glass until 3/4 of the glass is full.
- fill the rest of the glass with whipped cream and sprinkle a pinch of cocoa powder on the whipped cream.
- let sit in freezer for 10 minutes before drinking to make colder.

VANILLA BEAN ICED COFFEE
Forget the morning rush at your local coffee shop - make your favorite iced coffee drink right at home! My Vanilla Bean Iced Coffee is made with a super-simple vanilla bean syrup, as well as cold brew coffee, and half and half. An amazing drink to start your day!

- For the Vanilla Bean Syrup: In a small saucepan, add the water, sugar, extract and split vanilla bean. When adding the bean, split the bean lengthwise with a sharp knife, and scrape out the caviar adding it to the pan.
- Bring the ingredients to a low boil over medium low heat. Simmer for about 5 minutes to reduce the liquid slightly. Let cool completely. Transfer the ingredients to a jar or resealable container. Can be used for up to two weeks if refrigerated.
- For the Iced Coffee: In a tall glass, add 6-8 coffee ice cubes. Pour in the vanilla syrup, cold brew coffee, and top with half and half (or other milk preference.) Enjoy right away.
