My grandmother passed down this recipe to my mother, who in turn passed it down to me. Now my daughter is making it for her family. With a graham cracker crust, custard filling and meringue topping, this pie was one of my favorites when I was growing up and it still is today.

1-1/4 cups graham cracker crumbs
3 tablespoons brown sugar
1/3 cup butter, melted
FILLING:
1/2 cup sugar
1/4 cup all-purpose flour
1/2 teaspoon salt
2 cups milk
2 egg yolks, lightly beaten
2 teaspoons vanilla extract
MERINGUE:
2 egg whites
1/4 teaspoon vanilla extract
1/8 teaspoon cream of tartar
1/4 cup sugar
1/4 cup graham cracker crumbs

Steps:

  • Preheat oven to 350°. Combine the graham cracker crumbs, brown sugar and butter; press onto the bottom and up the sides of an ungreased 9-in. pie plate. Bake until lightly browned, 8-10 minutes. Cool on a wire rack., In a small saucepan, combine the sugar, flour and salt. Stir in milk until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes longer. Remove from the heat. Stir a small amount of hot filling into egg yolks; return all to the pan. Bring to a gentle boil, stirring constantly; cook and stir 2 minutes longer. Remove from the heat. Gently stir in vanilla. Pour into crust., In a small bowl, beat the egg whites, vanilla and cream of tartar on medium speed until soft peaks form. Gradually beat in sugar, 1 tablespoon at a time, on high until stiff peaks form. Spread over hot filling, sealing edges to crust. Sprinkle with graham cracker crumbs. , Bake until golden brown, 15 minutes. Cool on a wire rack for 1 hour. Refrigerate for at least 3 hours before serving.

1 cup graham cracker crumbs
¼ cup white sugar
⅓ cup butter, melted
2 cups milk
½ cup white sugar
2 tablespoons cornstarch
1 tablespoon all-purpose flour
1 pinch salt
3 eggs, separated
1 tablespoon butter
1 teaspoon vanilla extract
¼ cup white sugar

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Mix graham cracker crumbs, 1/4 cup sugar, and 1/3 cup melted butter in a bowl; press mixture into a 9-inch pie dish to form a crust.
  • Bake in preheated oven until firm, 5 to 10 minutes.
  • Whisk milk, 1/2 cup sugar, cornstarch, flour, and salt in a saucepan over medium heat; bring to a boil, stirring constantly. Boil for 2 minutes, then add egg yolks while continuously stirring. Continue to cook and stir until thickened, about 1 minute more, and remove from heat. Stir in 1 tablespoon butter and vanilla extract. Allow vanilla mixture to cool for 10 minutes before pouring into prepared crust. Let pie come to room temperature.
  • Preheat oven to 425 degrees F (220 degrees C).
  • Beat egg whites in a glass or metal bowl until foamy. Gradually add 1/4 cup sugar, continuing to beat until stiff peaks form. Lift your beater or whisk straight up: the meringue will form sharp peaks. Spread meringue over vanilla pudding.
  • Bake in preheated oven until lightly browned, about 5 minutes. Let cool to room temperature.
  • Refrigerate for about 3 hours before serving.

2 cups (500 ml) flour
1/2 tsp (2 ml) salt
3/4 cup (1 1/2 sticks) (170 g) cold unsalted butter cut into pieces
1 tbsp (15 ml) pure vanilla extract (club house)
2 to 4 tablespoons (30 to 60 mll) ice water

Steps:

  • Mix flour and salt in large bowl. Cut in butter with pastry blender or 2 knives until mixture resembles pea-size crumbs. Add vanilla extract and ice water, 1 tablespoon (15 ml) at a time, tossing dough with fork after each addition. Add just enough water so that dough comes together. Gather dough into a ball. Flatten into a disk. Wrap in plastic wrap. Refrigerate 30 minutes.
  • Roll dough on lightly floured surface from center to edges into a 14-inch (35-cm) circle, about 1/8-inch (3-mm) thick. For easier rolling without additional flour, place dough between 2 sheets of wax paper before rolling.
  • Carefully place pie crust on rolling pin and transfer to 9-inch (23-cm) deep dish pie pan. If using wax paper, carefully peel back 1 sheet of wax paper. Flip crust onto pie pan. Carefully peel off remaining wax paper. Gently press the pie crust onto bottom and up sides of pan. Trim pie crust so that it extends 1/2-inch (1-cm) beyond edge of pie pan. (Reserve any remaining dough to make pie crust decorations, if desired.) Fold under excess pie crust. Flute the edges of the pie crust or press with tines of a fork. Try with our Signature Pumpkin Pie.
  • Test Kitchen Tip: To blind bake (pre-bake an empty crust) to use for a custard pie or an unbaked filling, cover crust with parchment paper and fill with pie weights or dry beans (about 1 1/2 pounds/750g). The weights will hold parchment in place and keep the crust from puffing up or the sides from falling in while baking. Bake crust in preheated 375°F (190°C) oven 25 minutes. Remove weights and parchment; bake 5 minutes longer or until lightly browned.

This pie crust is my personal favorite and is made using a food processor, which makes cutting the butter into the flour very simple. By the way, you can make a double batch of this, and freeze the individually wrapped dough for future pie-related adventures.

1 cup unsalted butter - chilled, cut into tablespoon-size pieces
½ teaspoon salt
7 tablespoons ice water
1 tablespoon cider vinegar

Steps:

  • Combine flour, salt, and butter in a food processor. Pulse until mixture resembles coarse crumbs, about 10 1-second pulses.
  • Stir water and vinegar in a small bowl.
  • Pour half the ice water and vinegar mixture into the flour and butter mixture. Pulse to combine, about 3 (1-second) pulses. Pour in remaining ice water and vinegar mixture. Pulse until mixture just starts to come together, about 8 (1-second) pulses.
  • Turn dough out onto a wooden surface, pat into round shape and divide in half. Form each half into a disc about 5 inches wide.
  • Wrap each disc in plastic wrap and refrigerate for at least 30 minutes until ready to use.

3 egg whites (for meringue)
1/4 teaspoon cream of tartar
1/2 tablespoon vanilla
6 tablespoons sugar

Steps:

  • in saucepan, combine sugar, flour, and salt; gradually stir in milk.
  • Cook and stir over medium heat till mixture boils and thickens.
  • Cook 2 minutes longer.
  • Remove from heat.
  • Stir small amount hot mixture into yolks.
  • Return to hot mixture; cook 2 minutes stirring constantly.
  • Remove from heat.
  • Add butter and vanilla; cool to room temperature.
  • Pour into baked pie shell----> Meringue: Beat 3 egg whites with cream of tartar and vanilla.
  • Gradually add 6 Tbsp sugar till soft peaks form, spread atop pie.
  • Bake in moderate oven 350°F 12 to 15 minutes.
  • Variations of Vanilla Cream Pie-------------.
  • Banana or Coconut or Butterscotch or Chocolate or Pineapple.
  • Follow directions for vanilla cream pie substituting the following: for butterscotch pie substitute 1 cup brown sugar and use 3 Tbsp butter.
  • For chocolate increase sugar to 1 cup and use approximately 4 tbsp cocoa.
  • For banana layer three sliced bananas on crust and pour pie filling over.
  • For pineapple, drain 1 8 oz can of crushed pineapple and stir into cream filling.
  • You may also make this into a pudding by using 3 cups of milk instead of 2.

1 quart fresh strawberries
1 cup white sugar
3 tablespoons cornstarch
¾ cup water
½ cup heavy whipping cream

Steps:

  • Arrange half of strawberries in baked pastry shell. Mash remaining berries and combine with sugar in a medium saucepan. Place saucepan over medium heat and bring to a boil, stirring frequently.
  • In a small bowl, whisk together cornstarch and water. Gradually stir cornstarch mixture into boiling strawberry mixture. Reduce heat and simmer mixture until thickened, about 10 minutes, stirring constantly. Pour mixture over berries in pastry shell. Chill for several hours before serving.   • Preheat oven to 350*F
  • Crush up vanilla wafers in a food processor, blender or in a sealed ziploc bag with a rolling pin.
  • Place crushed vanilla wafers in a bowl.
  • Add sugar and butter and stir well.
  • Place crumbs in a 9" pie plate.
  • Using the back of a measuring cup, firmly press cookie crumbs into the entire bottom and up the sides of the pie plate.
