Steps:
- Place all of the chiles and the cumin into a medium nonstick saute pan or cast iron skillet over medium-high heat. Cook, moving the pan around constantly, until you begin to smell the cumin toasting, approximately 4 to 5 minutes. Set aside and cool completely.
- Once cool, place the chiles and cumin into the carafe of a blender along with the garlic powder, oregano, and paprika. Process until a fine powder is formed. Allow the powder to settle for at least a minute before removing the lid of the carafe. Store in an airtight container for up to 6 months.
BEST EVER HOMEMADE CHILI POWDER
This homemade chili powder is much fresher than what you get in the store (unless you live in New Mexico or Mexico). At my house, this chili powder would only make enough to put in one batch of chili!

HOMEMADE CHILI POWDER
A recipe I came across by accident in one of my cookbooks. I've never made chili powder before, nor have I looked on Zaar for a recipe. Heaven only knows why I haven't. The only chili powder that I can buy is very expensive (I have an allergy to black pepper and most brands say "spice" on the label which could mean anything) so I decided to try this one. I'll never buy chili powder again. You can adjust the heat by increasing or decreasing the amount of cayenne.

- Remove the stems from the dried chilies and scrape out and discard the seeds and membranes. Heat a cast iron or heavy pan over medium-high heat and place the chilies in the pan single file so they're not overlapping. Roast on both sides just until fragrant (approx. a couple of minutes) being very careful not to scorch them or they will taste bitter. Remove and let cool. Place the whole spices in the pan and roast until very fragrant, being careful not to scorch them (a couple of minutes). Remove and let cool completely.
- Once the chilies and spices are completely cooled, place them in a blender or spice/coffee grinder with the remaining ingredients and pulse until it's a powder. Transfer to an airtight jar for storage. For best flavor use within a few weeks.Makes about 1 cup of chili powder.

- Remove the stems and seeds from the anchos and spread the peppers out flat. Reserve the seeds. Place the chiles flat on a comal or cast-iron skillet over medium heat. Lightly toast the ancho chiles until they’re brittle, being careful not to burn them. Place the chiles on a plate and let them cool.
- Toast the cumin on the hot comal or skillet, still over medium heat, stirring and shaking until fragrant. Transfer to a separate plate. If a hotter chili powder is desired, toss some of the chile seeds onto the hot surface and toast them, too.
- Cut the chiles into small strips with scissors. In a clean coffee grinder, coarsely grind the strips in several batches until powdered. Combine the powdered chile, cumin, ground seeds, Mexican oregano, and garlic powder in a bowl and then grind this coarse powder in the coffee grinder in batches until finely ground, about 2 minutes. - Start by wiping off any dusty crevasses on the dried chilis, then de-stem and de-seed them. I find it easiest to cut off the tops, make a slit lengthwise, and then pull out the veins and seeds. Be sure to use caution when handling hot chilis.
- Roast the chili pieces in a 350F oven for a couple minutes or until warm and fragrant. You can alternatively flash roast them on a hot dry skillet.
- Grind the roasted chili pieces in a blender or food processor. You can optionally use a spice grinder for a finer powder.
- This batch will make 1/2 cup of pure chili powder that will fit into a 4 oz. spice jar. Store in the pantry (away from the heat of the stove) where it will keep for weeks at a time.
