Creamy Goat Cheese and Honey image

Creamy goat cheese is lightly dusted with pecans, honey, and rosemary. These are so delicious, light, and refreshing, they could be served as appetizers or an interesting dessert. They are always a hit! Spread them on your favorite crostini, bagel chips, or melba toasts.

2 ounces finely chopped pecans
2 tablespoons honey
1 teaspoon ground cinnamon
2 sprigs fresh rosemary, minced

Steps:

  • Divide the goat cheese into 12 equal portions. Roll each portion into a ball. Combine the crushed pecans and cinnamon in a bowl. Roll each goat cheese ball in the pecan mixture until covered. Gently pat the balls into patties; transfer to a serving plate. Drizzle honey over the patties and sprinkle rosemary on top. Serve immediately.

2 cups flour
1/2 teaspoon salt
1 cup butter, chilled
1 lb ricotta cheese or 1 lb curd cheese
4 eggs
2 teaspoons cinnamon
1/2-2/3 cup clear honey

Steps:

  • -----------Crust--------------.
  • Sift the flour and salt together.
  • Cut the chilled butter into tiny pieced and drop them into the flour.
  • Work the butter into the flour very lightly with fingertips or a pastry blender.
  • Gradually add just enough water to make the dough hold together in a soft ball (about 3 tbsp).
  • Wrap the dough in plastic cling wrap and chill for 30 minutes.
  • Heat oven to 350°F.
  • Press the chilled dough into the bottom and sides of a 10-inch pie dish with your hands and bake for 10 minutes, COOL completely.
  • ---------Filling--------------.
  • Mix together the cheese, eggs,1-tsp of the cinnamon and the honey and blend well.
  • Turn the oven up to 375°F.
  • Pour the cheese mixture gently int the pastry shell and place in oven for 35 minutes or until the pie is firm and the top is golden.
  • Dust the pie with the rest of the cinnamon and let it cool at least 1 hour.

We came up with this recipe after trying Trader Joe's® honey walnut cream cheese; this was much better since we used the orange blossom honey my mom buys from local farmers' market. She suggest toasting the walnuts. To make a sweeter version, add a tablespoon of granulated sugar while pulsing in the processor. Spread a layer on a slice of your favorite bread and enjoy! Yum!

1 (8 ounce) package cream cheese (such as Philadelphia®), softened
¼ cup orange blossom honey

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place walnuts on a baking sheet. Bake until toasted and fragrant, about 10 minutes. Transfer walnuts to a plate to cool. When walnuts are cool, transfer to a resealable plastic bag and crush with a rolling pin.
  • Combine cream cheese, honey, and walnuts in a food processor and pulse until creamy.

1/3 cup packed brown sugar
1/4 cup cold butter, cubed
1/2 cup finely chopped walnuts
FILLING:
1 package (8 ounces) reduced-fat cream cheese
1/4 cup honey
2 tablespoons milk
1 tablespoon lemon juice
1/2 teaspoon vanilla extract
1 large egg, lightly beaten
Additional honey, optional

Steps:

  • In a small bowl, combine flour and brown sugar. Cut in butter until crumbly. Stir in walnuts. Press onto the bottom of an 8-in. square baking dish coated with cooking spray. Bake at 350° for 10-12 minutes or until lightly browned., For filling, in a large bowl, beat the cream cheese, honey, milk, lemon juice and vanilla until blended. Add egg; beat on low speed just until combined. Pour over crust. Bake 20-25 minutes longer or until set. Cool completely on a wire rack. Drizzle with additional honey if desired. Cut into bars. Refrigerate leftovers.
