HONEY AND ROSEMARY HAM



Honey and Rosemary Ham image

Number Of Ingredients 18

1 Hatfield 3 lb. Classic Hams
¼ cup grated cheese
2 tablespoons fresh basil, chopped
1 sprig Rosemary, finely chopped
1 tablespoon capers, chopped
2 teaspoons caper juice
2 tablespoons olive oil
¼ cup honey
Salt and Pepper to taste
8 carrots
10 new potatoes
4 shallots
6 cloves garlic
Salt and Pepper to taste
1 spring Rosemary, chopped
Zest of ½ lemon
Juice of ½ lemon
Olive oil, for drizzling

Steps:

  • Preheat oven to 325 degrees F.
  • In a medium bowl, combine all ingredients for Honey Herb Glaze. Rub over the ham and then place the ham in a skillet. Fill the skillet with ½-inch of water and cover the ham with foil. Bake the ham for about 30-35 minutes. Remove the ham from the oven, and let rest (leave covered with the foil) while preparing the roasted vegetables.
  • Raise the oven temp to 425 degrees F.
  • Peel the carrots and arrange them on a baking sheet with lemon slices, a few whole cloves of garlic and a couple of whole shallots. NOTE: In total, between the carrots and potatoes, I used 4 shallots and 6 cloves of garlic.
  • Rinse the potatoes and if desired slice all in half or leave some whole. Transfer the potatoes to a separate baking sheet or pan since they will need to cook a little longer than the carrots. To the potatoes add 3 whole cloves of garlic and a couple of whole shallots as well.
  • In a large bowl, toss together rosemary, lemon zest, lemon juice, olive oil, salt and pepper. Spread mixture evenly over all the vegetables until well coated. Bake the carrots for about 20 minutes or until the vegetables are roasted and slightly charred. The potatoes will need to cook a little longer, until they are golden and tender.
  • Serve the ham alongside the roasted vegetables.

One 10-lb bone-in, fully cooked, spiral-sliced ham
1 cup brown sugar
¼ cup bourbon or other whiskey
2 Tbsp. apple cider vinegar
2 Tbsp. Dijon mustard
1 orange, zested and juiced
1 Tbsp. chopped fresh rosemary
½ tsp. garlic powder
½ tsp. onion powder
½ tsp. ground cinnamon
Freshly ground black pepper

Steps:

  • Remove ham from packaging and bring to room temperature for up to 2 hours before baking.
  • Preheat oven to 325ºF. Arrange a rack in the lower third of the oven and remove upper racks.
  • In a small pot over medium heat, whisk together brown sugar, bourbon, apple cider vinegar, Dijon mustard, orange zest and juice, rosemary, garlic powder, onion powder, cinnamon, and a few turns of the pepper mill. Bring to a low simmer and cook for 5-6 minutes, stirring frequently, until the sugar has dissolved. Remove from heat and set aside.
  • Place ham in a large roasting pan, face down. Brush half the glaze over the surface of the ham. Loosely cover ham with foil and bake for 1 hour and 30 minutes. During cooking, brush with remaining glaze mixture every 30 minutes. For the last 15 minutes of cooking, remove foil. Let stand up to 30 minutes before transferring to a serving platter.

Cooked ham with bones: 10-12 pounds
Garlic cloves: 8, peeled and cut into thin strips
Rosemary sprigs: 8
Dark brown sugar: 1/2 cup
Dijon mustard 1/2 cup
Apple juice or other liquid: 2 cups

Steps:

  • Get Cookin'
  • 1. Preheat oven to 350°F.
  • 2. Peel the skin from the ham and trim the fat, leaving a 1/4-inch layer.
  • 3. Using the tip of a sharp knife, score the fat in a diamond pattern.
  • 4. Insert the sliced garlic and rosemary sprigs into the scores on the ham.
  • 5. Mix the sugar and mustard together and brush on the ham.
  • 6. Place in a shallow roasting pan, add the liquid to the pan, and bake for 1 1/2 hours or until the internal temperature reaches 140 to 150°F.
  • 7. Remove from pan, place ham on a platter, and serve.

THYME HONEY GLAZED HAM



Thyme Honey Glazed Ham image

Hams with a thick honey glaze can sometimes be too cloying. This recipe takes a more balanced approach that results in a light sweetness and a beautiful shine.

3 tablespoons unsalted butter
2 tablespoons chopped thyme
1 (12-to 14-pounds) boneless or semiboneless fully cooked ham at room temperature 1 hour
1/4 cup cider vinegar
1/2 cup mild honey
1 teaspoon Worcestershire sauce

Steps:

  • Melt butter with thyme and let stand until ready to use.
  • Preheat oven to 350°F with rack in lower third.
  • Peel off and discard any rind or skin from ham, leaving 1/4 inch of fat on ham. Score fat on top of ham in a crosshatch pattern without cutting into meat. Put ham on a rack in a large roasting pan. Cover ham with parchment paper, then cover roasting pan with foil. Bake 1 3/4 hours.
  • Meanwhile, boil vinegar in a small saucepan until reduced to about 1 tablespoon. Remove from heat and whisk in honey, Worcestershire sauce, and thyme butter. Let honey glaze stand until ham has baked 1 3/4 hours.
  • Discard foil and parchment from ham. If there is no liquid in roasting pan, add 1 cup water (liquid will prevent glaze from burning in pan). Brush ham with half of honey glaze, then bake, uncovered, 30 minutes.
  • Brush with remaining glaze and bake until glaze is deep golden-brown and ham is heated through, about 30 minutes more.

HONEY-ORANGE BAKED HAM

1 whole smoked ham (14 to 18 pounds), bone in and rind on
1/2 cup honey
1/3 cup freshly squeezed orange juice
3 tablespoons balsamic vinegar
1 tablespoon Dijon mustard
1 large onion, cut into 6 wedges
1 large orange, cut into 6 wedges
4 sprigs rosemary
1/2 cup cider vinegar
3 1/2 cups homemade or low-sodium canned chicken stock
3 tablespoons all-purpose flour
Coarse salt and freshly ground pepper

Steps:

  • Rinse ham with cool water; dry with paper towels. Let stand, uncovered, at room temperature 1 hour. Meanwhile, whisk together honey, orange juice, balsamic vinegar, and mustard; set aside.
  • Preheat oven to 300 degrees, with rack in lower third. Fit a roasting pan with a rack, and place ham, with the thicker rind on top, on rack. Scatter onion and orange wedges and rosemary around ham on rack. Transfer to oven, and cook 1 hour.
  • Remove pan from oven, and let ham cool slightly. Increase oven temperature to 350 degrees. Trim fat all over the ham to a layer of about 1/4 inch (it does not need to be perfectly even; the bottom will have less fat and more skin). Turn ham, bottom side down. Score fat on top of ham in a diamond pattern, each 1 to 2 inches, cutting about 1/4 to 1/2 inch through the fat and into meat. Baste with honey mixture. Add enough water to roasting pan to fill the bottom by about 1/4 inch.
  • Return ham to oven, and cook 1 hour more, basting often with remaining marinade (do not baste with pan juices). If necessary, add water to pan to keep juices from burning. Remove from oven; transfer ham to a serving platter; discard orange, onion, and rosemary. Let stand 30 minutes before carving ham.
  • Meanwhile, make gravy: Strain liquid from roasting pan into a liquid measuring cup or bowl, and skim off fat from surface with a large spoon. Place roasting pan over medium-high heat. Add cider vinegar, and simmer until most of the liquid has evaporated. Return defatted juices to pan along with 2 cups stock. Bring to a boil, and let simmer.
  • In a small bowl, whisk together remaining 1 1/2 cups stock and the flour; whisk into sauce. Continue simmering until liquid is reduced by half and slightly thickened. Season with salt and pepper. Serve hot with ham.
