CITRUS WILD BLUEBERRY SAUCE
Made with wild blueberries, this sauce adds a zing with lemon juice, orange juice, and lemon zest. Serve over waffles or pancakes.

Steps:
- Bring the blueberries, orange juice, and lemon juice to a boil in a small saucepan over medium heat. Stir in the lemon zest and cinnamon; adjust heat to low setting.
- Whisk together the water and cornstarch until there are no lumps. Stir the cornstarch mixture and brown sugar into the blueberry mixture until thickened. Remove from heat and allow to rest for 10 minutes before using.

- In a large bowl, combine the cake mix, eggs, orange juice and oil; beat on low speed for 30 seconds. Beat on medium for 2 minutes. Fold in blueberries and peels. Pour into two greased and floured 9-in. round baking pans., Bake at 350° for 20-25 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely. , For frosting, in a small bowl, combine cream cheese and butter until fluffy. Add the confectioners' sugar, orange juice and peels; beat until blended. Fold in whipped topping. , Spread frosting between layers and over the top and sides of cake. Refrigerate until serving.

CITRUS BLUEBERRY SALAD WITH ALMOND RELISH AND MINTED SUGAR
Steps:
- Put the almonds, sugar and mint in a food processor and pulse briefly to make a coarse streusel-like topping. Transfer to a small bowl.
- Combine the grapefruits and oranges in a large decorative bowl. Combine the reserved citrus juices in a small saucepan (you should have at least 2 cups, if you don't, add enough fresh orange or grapefruit juice to make up the difference). Add the honey and fresh ginger and bring to a boil. Cook until the mixture is reduced by half. Remove from the heat and let cool to room temperature, at least 30 minutes. Remove the ginger and pour the mixture over the citrus. Cover and refrigerate the salad for at least 1 hour and up to 24 hours.
- Just before serving, stir in the blueberries. Top with the minted almond sugar and serve.

- Set the oven to 350°F Grease or apply parchment paper to a circular pan.
- In a large bowl, mix in flours, spices, soda, and salt.
- In a separate bowl, mix the mashed bananas with the yuja cha (or honey), eggs, oil, greek yogurt, butter, and vanilla extract. Once they are just blended, pour into the dry mix.
- Mix the dry and wet ingredients until they have just combined. Afterwards, pour the assorted blueberries, dried apricots and peanuts into the mix. Mix these assortments to prevent them from clumping together when baking.
- Pour the batter into the prepared pan and set a timer for 50 minutes to an hour.
