HONEY-GARLIC CHICKEN STIR-FRY
Honey-garlic chicken stir-fry--yeah, it's that good!

Steps:
- Heat oil in a wok over medium heat. Add chicken and garlic, and season with salt and pepper. Cook and stir until chicken is browned, about 5 minutes. Add honey and 1 tablespoon soy sauce; stir to coat chicken. Transfer chicken to a plate, leaving juices in the wok.
- Add frozen vegetables, mushrooms, and remaining soy sauce to the wok. Cook and stir over medium heat until vegetables are crisp on the outside and tender on the inside, about 7 minutes.
- Stir chicken back into the wok and cook until no longer pink in the centers and sauce has reduced, 5 to 10 minutes.
- Meanwhile, stir water and rice together in a microwave-safe bowl. Cover and cook in the microwave on high until water is fully absorbed, about 5 minutes.
- Serve chicken and vegetables over hot rice.

HONEY-GARLIC SALMON WITH STIR-FRY VEGETABLES
My mother-in-law made this honey-garlic salmon for my husband and me and we loved it. One of the best salmon dishes I have had.

Steps:
- Preheat the oven to 450 degrees F (230 degrees C).
- Place honey in a small microwave-safe bowl. Microwave for 20 to 30 seconds. Add 2 tablespoons soy sauce, lime juice, and 2 teaspoons garlic; whisk to combine.
- Place salmon skin-side down on large piece of aluminum foil and fold sides up to hold sauce, keeping top of salmon uncovered.
- Place the foiled salmon in a baking dish. Spoon 1/2 the honey sauce on top.
- Bake in the preheated oven for about 10 minutes.
- While salmon bakes, heat stir-fry sauce in a medium skillet over medium-high heat. Add remaining garlic; saute until fragrant, about 1 minute. Add frozen vegetables; toss to coat. Reduce heat to medium; cook and stir vegetables for 1 more. Add remaining soy sauce; season with salt and pepper. Toss to coat. Saute until vegetables are thoroughly heated through and moderately crunchy, 5 to 10 minutes.
- Spoon some of the remaining honey sauce over salmon and bake for 5 minutes. Adjust oven to broil and broil salmon until fish flakes easily with a fork, about 1 minute more.
- Cut salmon into 4 pieces; plate and drizzle remaining sauce on top. Serve with the stir-fry vegetables.

Steps:
- 1. Sauce: Combine first 6 ingredients in a bowl. Reserve. In a separate bowl combine beef with ¼ cup (50 mL) reserved sauce.2. Combine cornstarch and water. Reserve.3. Heat large non-stick skillet over medium-high heat. Add oil. When pan is hot, add beef. Cook until outside of beef is cooked, about 2 minutes. Add frozen vegetables and sauce. Bring sauce to a boil, cook, stirring constantly for 2-3 minutes until vegetables and beef are cooked through. Add cornstarch mixture. Cook, stirring constantly until thickened, about 1 minute.
- Serve immediately.
- Tips.
- • Replace beef with shrimp or thinly sliced chicken.

- First, prepare the salmon. Start with a fresh, boneless, skinless filet. Cut it into bite-sized cubes. (Around an inch.) Sprinkle with a pinch of salt and pepper.
- Next, prepare the vegetables. The peppers should be seeded and sliced, then halved. Peel the onion and cut into bite-sided wedges. Peel and mince the garlic cloves.
- In a wok or large skillet, heat the oil over medium high to high heat. When the oil starts to shimmer, add the salmon to the wok. Cook for 3 – 5 minutes, shaking the wok and flipping the salmon GENTLY to cook on all sides. Transfer the salmon to a bowl, cover with foil, and keep warm.
- Then in the same wok, add the bell peppers and onions. Cook and stir quickly for about 7 minutes or until crisp-tender.
