Goat Cheese, Honey, & Fruit Crostini image

Crunchy toasted bread paired with a blend of honey and goat cheese is the perfect match for seasonal fresh fruit. Easiest appetizer ever.

1 French baguette (18 inches), cut into 3/4-inch slices
8 ounces creamy goat cheese
2 Tablespoons honey, plus more for drizzling
1 cup sliced fruit (strawberries, blackberries, peaches)

Steps:

  • Preheat oven to 350°F (177°C). Place bread slices on a baking sheet. Bake 10 -12 minutes or until lightly toasted. (This is the ONLY cooking you'll do! Woohoo!)
  • Meanwhile, mix the goat cheese and honey together until relatively smooth. If it's a little crumbly, that's ok. Spread the goat cheese mixture on the toasted bread. Top with fruit.
  • Before serving, drizzle each crostini with honey. Keep leftovers covered tightly in the refrigerator for a couple days.

This quick, 15-minute Honey Goat Cheese Crostini is made with honey, goat cheese, prosciutto, arugula, and red onion, and is the easiest party appetizer. Recipe by: Bev Weidner, Bev Cooks

Yield 15 crostini

Number Of Ingredients 8

2 tablespoons butter
2 cloves garlic, minced
1 small baguette, cut into 1/4-inch slices
1 (4-oz) log of Roth Plain Chèvre goat cheese
1 (5-oz) package of prosciutto
1/2 cup baby arugula
1/4 cup thinly sliced red onion
Honey, to drizzle

Steps:

  • Heat the butter in a medium skillet over medium heat. Add the minced garlic, and sauté for about 30 seconds. Then, add the bread slices, and lightly toast each side for a few minutes or until light golden brown. Be careful not to burn the garlic! Spread goat cheese on the toasted baguette pieces, followed by a slice of prosciutto, arugula leaves, and a few red onion slices. Drizzle crostinis liberally with honey, to taste. Serve immediately, and enjoy!

  • In a small bowl, combine cheese and rosemary; spoon over toast slices. Drizzle with honey; sprinkle with almonds.
